Ben Tyler, founder of @kakadu_kitchen, launched his 100% Indigenous-owned bush food business in 2017, sharing Bininj-Mungguy food and culture so it can be experienced, celebrated and carried forward.
For Ben, it goes beyond the plate. It’s about legacy, creating a future where family can live, work and stay connected to Country.
Today, he shares something close to home. His mum’s Curry Goose Stew. This is comfort food, Top End style 👇
Curry Goose Stew
• Start with onion, garlic, ginger, curry leaves, basil, salt and pepper
• Sauté until fragrant and golden
• Add chopped magpie goose and Keen’s curry powder, coating well
• Stir through carrot and celery, add water and bring to the boil
• Add potatoes and capsicum, simmer until thick and rich
• Cook low and slow until the goose is tender
• Serve up and enjoy!
