Apple pie:
for the filling:
2kg cooking apples
1 tbsp cinnamon
4 tbsp sugar
for the pastry:
1tbsp sugar (plus more for sprinkling)
250g plain flour
125g butter
1 egg
2 tbsp water
splash of milk to glaze
1. Put butter and flour in a bowl and use your fingertips to turn into bread crumbs
2. Add salt and sugar, and stir.
3. Add beaten egg plus the water and bring mixture together in a ball
4. Put in fridge while you make the filling (important)
5. Peel all the apples and slice very thinly.
6. You might want to heat the apples gently with the sugar and cinnamon for five minutes before putting into the pie but if sliced very thinly, you can just mix the apples, sugar and cinnamon and add directly to the pie
7. Take pastry out of the fridge.
8. Grease a pastry dish and use two thirds of the pastry to line the bottom of the dish — roll out thinly. Add the filling, and then use the top third of the pastry for the lid.
9. Put two slashes in the middle of the pie to let steam escape in the oven and brush the pastry with milk to glaze.
10. Bake for 40mins on 160degrees celsius. When cool, dust with sugar and serve with whipped cream.
