Best Chocolate Chip Cookies - Wendy M Makes 24 large scoop cookies
Ingredients 1 cup butter, softened ½ cup white sugar 1 ½ cups packed brown sugar 2 large eggs eggs 2 teaspoons vanilla extract 1 teaspoon baking soda ½ teaspoon salt 3 cups all-purpose flour 2 tablespoons ground instant coffee 2 cups semisweet chocolate chips
Directions Preheat oven to 350 degrees F (175 degrees C). Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Add baking soda to batter along with salt. Stir in flour, ground coffee, chocolate chips. Drop by large cookie scoopfuls onto ungreased pans. Bake for about 12-15 minutes in the preheated oven, or until edges are nicely browned.

Dulce Leche and Bananas 8 Tablespoons butter 1/2 cup dark brown sugar 1 can, (14 oz) sweetened condensed milk 1 tsp vanilla extract pinch of salt
2-3 bananas, sliced ¼” thick
Whipped Cream 2 cups (1 pint) cold heavy cream 1/4 cup confectioners’ sugar 1 teaspoon pure vanilla extract optional toppings: chocolate shavings, chopped nuts, or toffee bits
Instructions Stir the graham cracker crumbs and granulated sugar together in a medium bowl, and then stir in the melted butter and chocolate. Pour the mixture into an ungreased 9-inch springform or tart pan. With medium pressure using your hand, pat the crumbs down into the bottom and up the sides to make a compact crust. Put in refrigerator for 15 minutes Dulce Leche In a saucepan over medium heat, melt the butter and sugar until sugar is dissolved. Add condensed milk. When it starts to bubble, cook for 3 minutes stirring constantly. Add vanilla and salt and mix well. Pour mixture into tart shell. Refrigerate for at least an hour For the whipped cream: Whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes. Arrange banana slices in 1–2 layers on top of the dulce de leche, then spread whipped cream on top. Refrigerate pie uncovered for at least 2 hours and up to 1 day. Garnish with toppings before serving, if desired. Cover and store leftover pie in the refrigerator for up to 5 days.

Lemon Crinkle Cookies 2 and 1/2 cups (313g) all-purpose flour 1 teaspoon cornstarch 1 teaspoon baking soda 1/2 teaspoon salt 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature 1 cup + 2 Tablespoons (225g) granulated sugar 1 large egg, at room temperature 1/4 cup (60ml) fresh or bottled lemon juice, at room temperature 1 Tablespoon lemon zest (packed Tablespoon, it’s a lot of zest!) 1 teaspoon vanilla extract
For Rolling 3 Tablespoons (35g) granulated sugar 1 cup (120g) confectioners’ sugar
Combine sugar and lemon zest pinching the zest and sugar between your fingers. Beat the butter and granulated sugar mixture together on medium-high speed until creamed, about 1 minute. Add the egg, lemon juice, and vanilla extract and beat on high speed until combined, about 1 minute. Mixture will appear curdled and that’s ok. Add the flour mixture and beat on low speed until combined. Cover dough tightly and chill in the refrigerator for at least 3 hours and up to 3 days. Chilling is mandatory for this sticky cookie dough. Remove cookie dough from the refrigerator. If the cookie dough chilled longer than 3 hours, let it sit at room temperature for about 10 minutes. This makes the chilled cookie dough easier to scoop and roll. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper or silicone baking mats. Scoop out dough using a medium cookie scoop. Roll in granulated sugar and then in the confectioner's sugar. If you want lots of confectioners’ sugar to show on the baked cookies, roll 2-3x in sugar! Place 3 inches apart on the baking sheets. Bake the cookies for 12–13 minutes or until the edges appear set and the centers still look soft. Cool cookies for 5 minutes on the baking sheet, and then transfer to a cooling rack to cool completely. Cookies stay fresh covered at room temperature for up to 1 week.

Quiche Recipe Ingredients 1/2 teaspoon olive oil 1 teaspoon minced garlic 3 packed cups fresh spinach or kale 4 large eggs 1 cup whole milk 1/2 cup sun-dried tomatoes, drained and chopped 4 ounces goat cheese, crumbled or chopped 1/4 teaspoon each salt and pepper
Heat olive oil and garlic in a skillet over medium heat. Add the spinach. Cook and stir until wilted. Set aside. Whisk the eggs and milk together until combined. Stir in the sun-dried tomatoes, goat cheese, spinach, salt, and pepper. Pour into a greased 9" pie dish. Bake quiche at 350 until the center is just about set, about 30-40 minutes. Don’t over-bake. Allow to cool for 15 minutes before slicing and serving. Cover tightly and store in the refrigerator for up to 4 days.

Ingredients 1 (12–14-ounce) loaf French bread, sourdough bread, or challah 6 large eggs 1 cup (240ml) apple cider 1 cup (240ml) whole milk 1/2 cup (100g) packed light or dark brown sugar 1/2 teaspoon fresh orange zest 1 teaspoon pure vanilla extract pinch cinnamon pinch salt
Cinnamon Apples 1/4 cup (4 Tbsp; 56g) unsalted butter 4 medium apples, peeled and sliced into 1/4-inch slices (about 4 cups/500g)* 1/4 cup (60ml) apple cider 1/3 cup (67g) packed light or dark brown sugar 1 teaspoon ground cinnamon 1/4 teaspoon ground allspice 1/4 teaspoon ground nutmeg 1/8 teaspoon salt 3/4 cup (90g) pecan halves for serving: confectioners’ sugar, maple syrup, and/or salted caramel sauce
Slice the bread into 1-inch-wide slices. Let the sliced bread sit out uncovered for a few hours or up to 1 day. Grease a 9×13-inch (or any 3.5–4-quart) baking dish, or spray with nonstick spray. In a medium bowl preferably with a pour spout, whisk the eggs, apple cider, milk, brown sugar, orange zest, vanilla extract, cinnamon, and salt together until combined. Set aside. Dip each slice of bread in the egg custard mixture, soaking both sides. Place in the prepared baking dish, lining the slices up next to each other. Pour any remaining custard over the top. Set aside. Cook the apples: Melt the butter in a large skillet over medium heat. Add the apples, apple cider, brown sugar, cinnamon, allspice, nutmeg, and salt. Cook for 8 minutes, stirring occasionally, until apples have slightly softened. Remove from heat and stir in the pecans. Spoon the apple mixture over the top of the bread slices, and pour any remaining sauce from the skillet over the top of everything. Cover the casserole tightly and place in the refrigerator for at least 3 hours and up to 1 day. This gives the bread a chance to soak up the custard and is a key step in this recipe. Remove casserole from the refrigerator and preheat oven to 350°F (177°C). Bake casserole uncovered for 20 minutes, and then cover with aluminum foil and bake for an additional 25–35 minutes or until center appears set and is no longer runny. The total time this casserole takes is 45–55 minutes. Remove from the oven and cool for 5 minutes before serving. Casserole deflates slightly as it cools. Feel free to sift a dusting of confectioners’ sugar on top, and/or drizzle maple syrup or salted caramel sauce on entire casserole or on individual servings. Cover leftovers tightly and store in the refrigerator for up to 2–3 days.

Ingredients ▢1 (16oz.) can crescent rolls ▢1 cup mashed potatoes ▢1 cup stuffing ▢2 cups shredded turkey ▢½ cup cranberry sauce ▢2 tablespoons salted butter
Instructions Preheat the oven to 375°F and line a baking sheet with parchment paper. Unroll and separate the rolls and arrange them in a starburst, slightly overlapping the corners of the lower corners of the triangles. Use a medium cookie scoop to portion out the mashed potatoes on the thicker end of the rolls and use a spoon or rubber spatula to flatten the mashed potatoes. Top the mashed potatoes with the stuffing followed by the turkey. Top the turkey with 1 tablespoon of cranberry sauce per roll. Gently pull the points of the rolls up and over the mounds of filling and tuck the point in to secure them. Brush the rolls with 1 tablespoon of melted butter and then bake for 17 to 20 minutes until the tops of the rolls begin to turn a golden brown.

INGREDIENTS 1 Angel Food Cake mix plus ingredients to prepare 1/4 cup + 1/2 cup powdered sugar divided 8 oz mascarpone cheese room temperature 1 1/2 cups heavy cream 1 teaspoon vanilla 2 cups fresh strawberries diced 1 1/2 cups fresh blueberries
INSTRUCTIONS Preheat oven to 350 degrees F and line the bottom of a 10x15x1" rimmed baking sheet with parchment paper (make sure that it lays flat on the bottom). Do not grease the pan. Prepare cake mix according to package directions. Pour into prepared pan and bake for about 20 minutes, until the top is golden and the edges start to crack. *NOTE: It will rise up in the pan significantly, even over the top. But even though it gets high it should not flow over -- if you're concerned, slip an extra baking sheet or a piece of foil underneath just in case. Loosen cake from the edges of the pan while it's still warm -- it's going to be a little sticky, like angel food cake is, but it will come away easily. Spread out a clean kitchen towel and sprinkle evenly with ¼ cup powdered sugar. Flip warm cake out onto the towel, peel off the parchment paper and immediately roll up starting at the short end, WITH the towel inside. Let cool completely (at room temperature for 1-2 hours or pop it in the fridge or freeze momentarily if you're impatient like me! You don't want it hot inside when you add your filling.) In a large bowl, beat the cream cheese with an electric mixer until smooth. Add ¾ cup powdered sugar, vanilla and cream and beat on low until combined, then on high for 3-4 minutes until fluffy and stiff peaks form. Unroll cooled cake (you can just leave it laying on the towel) and spread with half of the filling and top with half of the berries. Carefully roll back up (this time without the towel!) and place on a serving plate. Spread top and sides with remaining filling and top with remaining berries. Serve immediately (leftovers are best eaten within 24 hours).

Ingredients 6 flour tortillas 8-inch size is ideal 5 tbsp butter divided 1 cup cinnamon sugar see note below 2 large Granny Smith apples peeled, cored and chopped 1 teaspoon lemon juice
Toppings (Optional) 1/4 cup caramel sauce whipped cream
Instructions Preheat oven to 400°F. Line two large baking sheets with parchment paper or silicone baking mats. Set aside. Cut the tortillas into even triangles and place in a large mixing bowl. Add 3 tbsp melted butter and 3/4 cup cinnamon sugar, tossing until coated. Place pieces onto prepared baking sheets and bake 3 minutes per side, flipping halfway through. Repeat if pieces don't fit onto baking sheet in one layer. Prepare chopped apples and sprinkle with lemon juice. Then mix with remaining 1/4 cup cinnamon sugar. In a medium saucepan, melt butter under medium heat. Add in apple mixture and saute several minutes until soft and tender. On a large serving plate, place a layer of tortilla pieces and add apple mixture on top. Repeat with another layer is desired. Top with caramel sauce and whipped cream before serving. Notes Cinnamon Sugar: To make your own, combine 1 cup granulated sugar with 2 teaspoons ground cinnamon

Instructions Preheat the oven to 350 degrees F. Coat a 9 inch square pan or 2 quart baking dish with cooking spray. Place the butter, eggs, cornbread mix, corn kernels, creamed corn and sour cream in a large bowl. Stir to combine. Add the bacon, green onions, cheese and red pepper to the bowl. Mix thoroughly. Pour the batter into the prepared pan. Bake for 45 minutes or until lightly browned. Garnish with additional bacon, green onions and bell pepper if desired, then serve.

Crockpot Rum Raisin Bread Pudding Ingredients 1 loaf challah bread (stale) 2/3 cup golden raisins 5 teaspoons dark rum/or 3 teaspoons rum extract 2 1/2 cups heavy cream 2 1/2 cups whole milk 5 eggs 3/4 cup + 1 tablespoon granulated sugar 4 teaspoons vanilla extract 3/4 teaspoon salt 2 tablespoons light brown sugar 1/2 teaspoon cinnamon
Directions Spray crock pot with non-stick spray. Cut bread into 1 inch cubes. Microwave raisins and rum in a small bowl, about 20 seconds. Toss with the bread and add to the crockpot. Whisk cream, milk, eggs, 3/4 cup sugar, vanilla, and salt in a bowl and pour over bread. Press gently to submerge. Mix remaining sugar, brown, sugar, and cinnamon together and sprinkle over the bread pudding mixture. Cover and cook on low for 4 hours or until the center is set. Cook 30 minutes before serving.

What You’ll Need: 2 1/4 cups (270 grams) all-purpose flour 1 teaspoon baking soda 2 teaspoons pumpkin pie spice (if using commercial pumpkin pie spice, add 1/2 teaspoon ground ginger; if using a homemade blend there’s no need to add additional 2 teaspoons cream of tartar 1 cup (226 grams) unsalted butter, room temperature, cut into pieces 3/4 cup (148.5 grams) granulated sugar 2/3 cup (142 grams) light brown sugar 1 1/2 teaspoons vanilla 1 large egg 1/2 cup (113.5 grams) canned pureed pumpkin
For the topping: 1/4 cup (49.5 grams) granulated sugar 1 tablespoon + 1 teaspoon pumpkin pie spice blend
What You’ll Do: In a medium bowl, whisk together the flour, baking soda, spices and cream of tartar. With a hand or stand mixer, beat together the butter, granulated sugar and brown sugar until light and fluffy, about 2 minutes. Be sure to scrape down the sides of the bowl at least twice. Add the egg and the vanilla and mix on medium speed until just blended. Scrape down the sides of the bowl. Add the pumpkin puree and mix on low speed until just combined. Add the flour mixture and stir on low speed until the mixture is fully blended. Scrape down the sides of the bowl and the beaters, then beat the mixture on medium-high for about 5 seconds. Refrigerate the dough for one hour or until firm enough to roll into balls. If it’s too soft, it will end up all over your hands, it will be a big mess and you’ll get crabby. When ready to bake, preheat the oven to 350 degrees F. Whisk together the 1/4 cup (49.5 grams) of white sugar and 3 tablespoons of spice mix. Roll the dough into 1-inch balls, then roll those balls in the sugar-spice mixture and place two inches apart on a parchment-lined baking sheet. Bake for 8 to 10 minutes or until lightly colored and just firm to the touch.

Ingredients CRUMB TOPPING 1/3 cup (67g) packed light or dark brown sugar 1 Tablespoon (15g) granulated sugar 1 teaspoon ground cinnamon 1/4 cup (56g) unsalted butter, melted 2/3 cup (84g) all-purpose flour (spooned & leveled)
MUFFINS 1 and 3/4 cups (219g) all-purpose flour (spooned & leveled) 1 teaspoon baking soda 1 teaspoon baking powder 1 teaspoon ground cinnamon 1/2 teaspoon salt 1/2 cup (113g) unsalted butter, softened to room temperature 1/2 cup (100g) packed light or dark brown sugar 1/4 cup (50g) granulated sugar 2 large eggs, at room temperature 1/2 cup (120g) yogurt or sour cream, at room temperature 2 teaspoons pure vanilla extract 1/4 cup (60ml) milk (any kind), at room temperature 1 and 1/2 cups (180g) peeled & chopped apples (1/2-inch chunks; you need about 2 medium apples)
INSTRUCTIONS Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or line with cupcake liners. Make the crumb topping: Mix the brown sugar, granulated sugar, and cinnamon together in a medium bowl. Stir in the melted butter, and then gently mix in the flour using a fork. Keep the mixture as large crumbles and do not over-mix. If over-mixed, this will turn into a thick paste. Set topping aside. Make the muffins: Whisk the flour, baking soda, baking powder, cinnamon, and salt together in a large bowl. Set aside. Beat the butter and both sugars together on high speed until smooth and creamy, about 2 minutes. Scrape down the sides and bottom of the bowl as needed. Add the eggs, yogurt, and vanilla extract. Beat on medium speed for 1 minute. (It’s ok if it appears somewhat curdled.) Scrape down the sides and bottom of the bowl as needed. With the mixer running on low speed, add the dry ingredients and milk into the wet ingredients and beat until no flour pockets remain. Fold in the apples. Spoon the batter evenly into each cup or liner, filling each all the way to the top. Spoon crumb topping on each, gently pressing it down so it sticks. Bake for 5 minutes at 425°F, then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 15–18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 20–23 minutes. Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
