Directions:
1. In a small bowl, whisk together soy sauce, rice vinegar, sugar substitute, sesame oil, peanut butter, sriracha, ginger and xanthan gum. Set aside
2. Add oil to a large skillet over medium-high heat. Add pork and cook until halfway done. Add onions and green onion whites and cook until soft and pork is fully cooked. Stir in garlic cook for a minute more.
3. Pour in sauce and cook 1 to 2 minutes more, until sauce thickens. Place in a serving dish and top with green onion tops.
4. Spoon large scoop of pork into center of each lettuce leaf.

1 Chimichanga:

Directions:
1. Mix spice blend ingredients in a small bowl.
2. Add oil and butter to a skillet on medium heat. Add onions and sauté until translucent. Mix in chipotle peppers and garlic. Cook another minute. Add chicken, cauliflower, and spice blend. Mix and continue to cook until well blended and heated through. Stir in cilantro and remove from heat
3. Coat 1 side of 6 tortillas and lay oil side down. Evenly divide the chicken mixture onto the center of each tortilla. Roll, tucking the ends in.
4. Place (2 at a time) into preheated air fryer at 380°F for 5 minutes or until beginning to brown. Remove to a plate add cheese sauce, sour cream, and Pico de Gallo.

5. Lightly oil 9.5 or 10-inch pie dish.
6. Mix ricotta and parmesan cheese together and line the bottom of the dish.
7. Place meat mixture over ricotta and parmesan cheese.
8. Add 4oz. of mozzarella over the meat mixture.
9. Gently pour the batter into the pan.
10. Add remaining mozzarella over batter.
11. Bake for 30 minutes or until top is browned.
12. Remove and let stand 5 minutes before serving.

1. Marinade – Use a Ziploc bag or bowl and add soy sauce, chicken broth, water, garlic, ginger, vinegar, sugar substitute, sesame oil, red pepper flakes, and green onion whites.
2. Slice the pork into 1/2-inch slices.
3. Places slices under plastic wrap, one at a time and pound to 1/4-inch thickness.
4. Place pork into marinade and refrigerate overnight.
5. Place pork rinds in a bowl add parmesan cheese, garlic powder, and black pepper. Mix to blend. Add butter and mix well.
6. Remove pork from marinade (reserve marinade) and pat dry.
7. Spoon pork rinds over pork. Cover with plastic wrap and lightly pound the pork rinds into the pork. Turn pork and repeat. Repeat until all pork is done.
8. Add 2 tablespoons of oil to a sauté pan over medium high heat. When oil is hot, add the pork and cook each side for 2 minutes. Work in batches to avoid crowding the pan. After each batch remove and discard any pork rinds in the pan. Add oil and cook the next batch the same way. Repeat until all the pork is fried.
9. Add remaining marinade to the pan and add the xanthan gum. Cook until desired thickness.
10. Plate the pork and pour sauce over the top. Garnish with green onion tops.

8. Transfer rolls to a plate.
9. Add onion to pot and cook, stirring occasionally, until softened and lightly browned.
10. Stir in tomato paste and cook until slightly darkened.
11. Add wine and cook for about a minute or so to allow the alcohol to cook out, scraping up any browned bits from the bottom of the pan.
12. Stir in crushed tomatoes, beef stock, red pepper flakes, half of the basil, Italian seasoning, oregano, garlic powder, basil and sugar substitute.
