Today I am sharing how I prep a week of meals in 2 hours, in order to make life easier for my future self! These are all super quick, easy and delicious so definitely worth trying.

RECIPES & INGREDIENTS:
BBQ pulled pork: 0.5kg pork shoulder, 2 cups cider, 1 cup BBQ sauce, 2tbsp chilli jam, 1tbsp paprika, 1tsp cumin, salt & pepper - Pressure cook for 45 mins.
Extra large Chicken: olive oil, thyme, salt & pepper - Rotisserie for 45 mins.
Veggie Chilli: 1 onion, 3 garlic cloves, 1 pack chilli mix, 2 tins lentils, 1 tin kidney beans, 1 tin chopped tomatoes, 1 tin full of water to wash out the residue tomato, salt & pepper - Slow cook for 6 hours
Rice: 2 cups rice (1/2 cup per person) 3/4 cups water - Set to white rice cook.
Curry Paste: 1 onion, 3 garlic cloves, big nub ginger, juice of 1 lime, 200ml veg stock (1 stock cube), 1/2tsp turmeric, 1tbsp garam masala, 1tsp paprika, 2tbsp curry powder, salt & pepper - add chicken and rice when serving.
Noodle Soup: large nub ginger, 3 garlic cloves, 2 large pack choi, 2 spring onions - add chicken, noodles and chicken broth to serve.
Chicken Pie: 1 leek, 6 mushrooms, 250g soft cheese, 200ml chicken stock (1 stock cube), 1 heaped tsp wholegrain mustard, cooked chicken, puff pastry - brush with milk or egg mix - Air fry on 180C for 17 minutes.
Stir Fry: Baby corn, peppers, carrots, broccoli, spring onions - Fry for 5 minutes to soften veggies and cook noodles in pot boiling water, then serve with a portion of pulled pork & some of the juice from it.
Bean Soup: 1 onion, 3 garlic cloves, 2 carrots, 2 celery sticks, 1tsp thyme, 1tsp paprika, 1tsp cumin, 1 tin chopped tomatoes, 2 tins cannelloni beans, 1 tin butter beans, 2 tins full of water, 1 veg stock, 1 heaped tsp rose harissa, salt & pepper - serve with chunky bread.
