|RECIPE| Montreal-style bagel For the dough: 1 ½ cups warm water 4 tbsp maple syrup 3 tbsp vegetable oil 2 ½ teaspoons active dry yeast 1 large egg 4 ½ cups bread flour 1 teaspoon kosher salt
For the rest: ¾ cup sesame seeds 10 cups of water ¼ cup maple syrup
Bacon Egg and Cheese Per sandwich 3 bacon slices 1 egg 1-2 slices sharp cheddar cheese or American cheese Ground black pepper to taste
Steps: 1. In a bowl, whisk warm water, maple syrup, vegetable oil, yeast, and an egg. Then stir in salt and flour in 3 parts, until a soft dough forms. Knead dough on a lightly floured surface for about 10 minutes, until smooth. Set aside on a floured surface, cover with a clean towel, and let rest for 10 minutes. 2. Preheat your oven to 425°F. Divide the dough into 3 equal pieces. Roll each piece into a long rope, then curve ends and roll to make a bagel shape. 3. In a large pot, boil water and honey. Add the bagels and boil for about 3-5 minutes. Remove and immediately coat with sesame seeds. 4. Place on a parchment-lined baking sheet and bake for 20-25 minutes or until golden brown. 5. Cook bacon in a pan to your liking. Remove and set aside. Add egg and slightly break up the yolk into the white. Add cheese slices, bacon, and black pepper. Fold slightly and assemble the bagel sandwich. Press in the pan for a minute on each side. Serve with ketchup!

INGREDIENTS: 2 ½ lbs (1kg 134g) pork belly or shoulder (minced or ground) 300 grams cooked sticky rice or jasmine rice 80 grams garlic, peeled 22 grams kosher salt
Hog casing, cleaned according to package instructions 150 grams Vermicelli noodles, cooked and drained (optional)
Garnishes: Ginger Chili Cabbage Cilantro Beer
STEPS: 1. In a mortar and pestle or food processor, pound garlic and salt together to create a paste. 2. Mix the garlic salt paste with the cooked rice. Then combine everything with the pork. Optional: if adding vermicelli noodles, now is the time to add it. 3. Using a funnel or sausage stuffer, slip the casing onto the end of the funnel or stuffing tube, leaving a 5-inch tail off the end to tie up later. 4. Push all the sausage mixture through the casing. Starting at one end, remove any air from the casing and tie two knots to secure the filling. At every 1-inch below the knotted end, squeeze and twist the sausage to form round links. Tie two knots at the end of the casing. 5. Hang them in a warm, dry spot (about 68°F-70°F) for about 2-4 days, depending on how sour you want them to taste. You can cut off and cook an individual link to taste test for your preferred amount of fermentation. 6.When the sausages are ready, cook them in a pan or grill until browned. Serve with garnishes and an ice cold beer!

|RECIPE| Ingredients for 2 BIG servings For the garlic oil: 10 garlic cloves, minced Veg or canola oil
Noodle seasoning: 4 tbsp prawn fat garlic oil (method in recipe below) 4 tsps soy sauce 4 tsps fish sauce 4 tsps sweet dark soy
For the noodles: 1 pkg fresh egg noodles ¼ lb Red prawns or shrimp (cleaned with the head and tail intact) Shrimp and/or fish balls Veggies of your choice (bok choy, yu choy, spinach, etc)
Toppings: Quick pickled chili vinegar (sliced chili in white vinegar) Dried ground Thai chili Fried garlic (method in recipe below) Peanuts Scallion cilantro Sugar (optional)
STEPS: 1. Make garlic oil: add oil and garlic to a cold pan and turn on the heat to low. Continuously stir the garlic in the oil until it becomes golden brown but NOT burnt. Carefully pour the oil through a fine mesh strainer into a heat-proof bowl. Set fried garlic aside. 2. Boil water in a small pot. 3. Heat 6 tbsp of garlic oil in a pan on medium heat. Add the cleaned prawns or shrimp and cook on both sides. Remove from the pan and set aside. Do not discard prawn fat-infused oil. 4. In each serving bowl, combine the noodle seasoning ingredients (including the prawn fat oil) and set aside. 5. In the pot of boiling water, cook shrimp or fish balls and blanche the veggie of your choice until mostly tender and bright green. Set aside. 6. Cook the egg noodles (one portion at a time) in the same boiling water for about 2 minutes. Drain and immediately add to each both and toss to coat in the seasoning. 7. Top noodles with prawn, the balls, veggies, and additional toppings to your liking.

Ingredients: 1 lb mushrooms (oyster, shiitake, wood ear), chopped 14 oz extra firm tofu, finely chopped 1-2 limes, freshly squeezed Fish sauce to taste Chopped cilantro to taste Chopped scallions to taste Torn mint leaves to taste Chopped bird’s eye chili to taste Dried ground chili to taste 1 tbsp roasted ground glutinous rice powder Oil for the pan Lettuce or cabbage leaves to serve
Steps: 1) Heat a pan to medium-high and drizzle oil. Add mushrooms and cook for about 8-10 minutes, or until most of the moisture has evaporated. Stir in the tofu and cook for about 5 minutes. 2) Set aside to slightly cool. Add the rest of the ingredients and combine well. 3) Serve with lettuce or cabbage leaves and enjoy!

Steps: 1. Mix tomato juice, vodka, fish sauce, lime juice, coconut syrup, hot sauce, cilantro, salt, and pepper. 2. Mix chili flakes and garlic salt on a small plate. Rub lime around the rim of a glass and press into the chili salt. 3. Fill glass with ice and pour the cocktail on top. Garnish with shrimp, shallot, chili, cilantro sprig, and lime slice.

For the filling: ½ cup cream cheese ½ cup peanut butter
Steps: Preheat oven to 325°F. In a bowl, combine all dough ingredients and form a disc. On a lightly floured surface, roll out the dough into a thin sheet. Use a cookie cutter to for small rounds, like Oreo cookies. Place on a lined baking tray and bake for about 10-12 minutes. Remove from oven and set aside to cool. Fill the cookie sandwiches with cream cheese or peanut butter.

|Grapefruit and Rosemary Sparkler|
For the rosemary simple syrup: 1 cup water 1 cup sugar 8 sprigs rosemary
For each cocktail: 3 oz grapefruit juice 2 oz Korbel Brut 1 ½ oz rosemary simple syrup 2 dashes Angostura Orange bitters Ice cubes Sliced grapefruit to garnish Fresh rosemary sprig to garnish
Steps: Make the simple syrup: in a saucepan, combine water and sugar. Heat the mixture, until it simmers and the sugar has fully dissolved. Add fresh rosemary sprigs and allow to simmer for another 2 minutes. Set aside to cool completely, remove rosemary sprigs, and store in a clean jar. To make the cocktail: add some ice, grapefruit juice, rosemary simple syrup, and bitters. Shake vigorously, then pour into a glass with new ice, top with Korbel Brut, and garnish with a sprig of rosemary and grapefruit slice.
|Cucumber Cups|
Pimento Cheese & Bacon Cups: 4 tbsp roasted red pepper, diced 1/2 cup monterey jack cheese, shredded 1 pkg (8 oz) cream cheese, softened 1/3 cup mayo 1/2 tsp garlic powder 5 slices cooked bacon 2 cucumbers
Steps: Cut and scoop cucumbers to form small cups. Place on paper towel to absorb moisture. Mix pimento cheese ingredients, expect the bacon, in one bowl. In another bowl, combine the other ingredients, except smoked salmon. Scoop a small spoonful of each mixture into the cucumber cups. Top the pimento cups with bacon pieces and the other with smoked salmon pieces.
|English Scones|
3 ½ cups all-purpose flour ¼ cup + 1 tbsp granulated sugar 2 tbsp baking powder ½ tsp kosher salt ½ cup milk, at room temperature ½ cup buttermilk, at room temperature 2 eggs, at room temperature ⅓ cup unsalted butter, cubed and softened assorted jams and cream
Steps:
Preheat oven to 450°F. In a mixing bowl, mix flour, sugar, baking powder, and salt together. Then incorporate softened butter, until the mixture appears like crumbly light sand. In another bowl, mix eggs, milk, and buttermilk. Pour into the dry ingredients, and mix just until combined. Be sure not to over mix. Turn dough onto a clean, floured surface. Coat your hands with flour and knead the dough to spread and flatten into a rectangular disc. Use a cookie cutter or knife, to cut out your desired scones shape. You may gather the leftover dough to form more scones. Place the scones on a silicone mat or parchment paper. Brush the tops with some buttermilk. Bake for about 10 minutes, or until the tops are golden brown. Remove from oven and allow to cool on a rack.

DIY Bath Bombs:
1 cup baking soda ½ cup citric acid ½ cup cornstarch ¾ cup epsom salt 3 tsp vitamin E oil 1 tsp essential oil of your choice Food coloring of your choice 1-2 tsp water, depending on your environment Clear ornament molds
Steps: In a large bowl, combine baking soda, epsom salt, cornstarch, and citric acid. In another bowl, combine vitamin E oil, essential oil, food coloring and water. Adding about one teaspoon of the wet mixture at a time, use a whisk to fully incorporate into the dry ingredients. Once fully combined, transfer to the molds. Fill each half of the molds and pack the mixture well. Allow to dry overnight, before using.
