Worcestershire sauce 1 c. canned or frozen corn 1 c. frozen lima beans
Preheat 1 Tbsp. olive oil in a large Dutch oven over medium high heat. Season all the meats lightly with salt and pepper. Brown the meats in batches (so as not to crowd the pot and have them steam). Cook each meat on all sides for a few minutes until brown then remove to a plate. Add the chopped carrots and onion and sauté for a few minutes until softened. Add the chopped garlic and cook for about 30 seconds. Add the meat back into the pot. Pour in the chicken broth, beef broth, and crushed tomatoes, and add the bay leaf. Stir to combine. Bring to a simmer. Reduce heat to LOW, cover, and simmer for 2 hours. Remove the chicken thighs. Discard the skin and bones and shred the chicken meat. Add the chicken back to the pot. Add the diced potato. Stir to combine, cover, and simmer for about 30 minutes or until the potatoes are tender. Add the Worcestershire sauce, corn, and lima beans. Stir and simmer for 10 more minutes. Check for seasoning. Shred the pork pieces with two forks before serving. Serve with crusty bread or cornbread. ENJOY!

1/2 lb. corned beef, sliced 8 oz. Swiss cheese, sliced 1/2 c. sauerkraut, drained 1 package Hawaiian rolls, sliced in half lengthwise
Preheat oven to 350*. Make the thousand island dressing by combining the mayo, ketchup, 1/2 tsp. dried minced onion, 1/2 tsp. sugar, splash of apple cider vinegar, and a pinch of salt and pepper. (You can also use store bought!)
Mix the 1/4 tsp. garlic powder, 1/4 tsp. dried minced onion, and 1/2 tsp. poppy seeds into the melted butter.
Place the bottoms of the Hawaiian rolls into a greased, 13x9" baking dish. Spread a generous amount of thousand island dressing on top. Layer the corned beef evenly on top, followed by the sliced Swiss cheese. Sprinkle the sauerkraut over top. Place the lids of the buns onto the sandwiches. Pour/spread the melted butter mixture over the tops of the buns. Cover with foil and bake at 350* for 10 minutes. Uncover then continue baking for an additional 10 minutes or until golden and the cheese has melted. Slice and serve. ENJOY!

TRIPLE CHOCOLATE CHERRY COOKIES 1 c. all purpose flour ¼ c. unsweetened cocoa powder (I like to use Hershey’s Special Dark) 1 tsp. baking powder ¼ tsp. salt 1 tsp. instant coffee powder 1 stick (½ c.) unsalted butter, softened 1 c. sugar 1 large egg 1 tsp. pure vanilla extract 4 oz. semisweet chocolate chips/chunks 4 oz. white chocolate chips 1 c. dried cherries
Preheat oven to 350 degrees. Whisk together the flour, cocoa powder, baking powder, salt and coffee powder. In a large mixing bowl, cream the butter and sugar together with an electric mixer until fluffy. Add the egg and vanilla and beat to combine. Add the semisweet and white chocolate chips and the cherries and mix together with a rubber spatula to incorporate the ingredients. Using a medium cookie scoop, form your cookies and place 2 inches apart on a baking sheet lined with a non-stick baking mat or parchment paper. I made about 24 cookies with this scoop. Bake for 10-12 minutes. Allow to cool before enjoying!
PRETZEL HUGS/ROLOS Arrange square shaped pretzels on a lined baking sheet (silicone mat or parchment paper works). Place an unwrapped Hershey's Kisses "Hugs" or a Rolo on top. Bake at 350* for about 2 1/2 - 3 minutes or until the candies just start to soften. Gently place an M&M on top of each one, pressing down slightly. Allow to cool completely before storing. I put mine in the fridge to speed up the cooling process. Keep in an airtight container for about a week. ENJOY!

KETTLE CORN 1/2 c. popcorn kernels (plus 4-5 extra kernels to test the oil) 1/4 c. sugar Avocado oil Salt
Lightly coat the bottom of the Whirly Pop with avocado oil (about 1.5 Tbsp.). Heat the pan over medium heat. Add the test kernels to the heating oil. Once those kernels all pop, add the 1/2 c. of kernels. Stir about 10 times then add the sugar. Constantly stir the kernels while they heat and then pop. When there is some resistance while stirring, the popcorn is ready. Immediately pour the popcorn into a large serving bowl. Sprinkle lightly with 1/4 tsp. salt (Use more or less depending on your preference!). Stir to coat and also to break up the kernels a bit. ENJOY!

CINNAMON ORNAMENTS 1 cup cinnamon 3/4 cup applesauce
Mix cinnamon and applesauce together in a bowl until a dough forms (add extra cinnamon or applesauce as needed until the dough holds together). Form the dough into a ball. Place onto a silicone baking mat with a sheet of parchment paper over top. Gently roll the dough out with a rolling pin to 1/4 in. thick. Remove parchment paper. Cut out shapes using cookie cutters. Use a plastic straw or unsharpened pencil to make a hole near the top of each ornament. Remove any excess dough (you can roll this out again and make more!). Transfer the silicone baking mat to a cookie tray. Bake at 350* for about 30 minutes. Allow to cool completely. String a ribbon through the hole and tie to hang. You can also embellish these with glue and glitter or a white chalk pen.

In a large bowl add the beef, breadcrumbs, eggs, onion, garlic powder, Worcestershire sauce. Season with salt & pepper. Mix together until thoroughly combined. Line slow cooker with foil then spray with baking spray. Form the meat mixture into a loaf shape and place inside the slow cooker. In a small bowl stir together the ketchup, brown sugar, garlic powder, onion powder, and Worcestershire sauce. Spread this mixture evenly over the meatloaf. Cover and cook on HIGH for 3 hours. Remove excess fat if desired before transferring meatloaf to cutting board to slice.
KIELBASA WITH POTATOES & GREEN BEANS (I doubled the recipe in the video.) 1 lb. kielbasa, cut into 1 inch pieces 1 small onion, diced 1 bag frozen green beans 1.5 lbs. baby yellow potatoes, quartered 1.5 c. chicken broth salt & pepper garlic powder
Spray inside of slow cooker with baking spray. Add in the potatoes, onions, green beans, and kielbasa. Season to taste with salt, pepper, and garlic powder. Pour the chicken broth over top. Cover and cook on HIGH for 4 hours.

Add in the whipped topping and mix together until fluffy and combined. Stir in the mini semi-sweet chocolate chips, reserving a handful to sprinkle over the dip before serving, if desired. Cover and chill. Remove from fridge 20 minutes before serving. I served my dip with chocolate teddy grahams--delicious!
BUFFALO CHICKEN DIP 2 8-oz bricks cream cheese, softened 2 cans chicken breast, drained 8 oz. colby jack cheese, shredded 2/3 c. Frank's red hot sauce 1 c. ranch dressing tortilla chips for dipping
Spray slow cooker with non-stick spray. Add in all of the ingredients. Cover and set slow cooker to HIGH for 2 hours. Stir everything together after 1 hour making sure to break up any larger chunks of chicken. Stir as needed during remaining cooking process. Set slow cooker to WARM for guests to enjoy.

In a large mixing bowl, use an electric hand mixer to cream together the butter and sugars. Add the eggs and mix to combine. Add the pumpkin puree, vanilla extract, and buttermilk. Mix to combine. Add ½ of the flour mixture and mix until just incorporated. Add the other ½ of the flour mixture and mix until just combined. Scrape the sides of the bowl with a rubber spatula if necessary and give one final mix. Grease two 9X5 loaf pans with baking spray. Divide the batter between the two pans. Bake at 275* for about 70 minutes (start checking around the 50 minute mark). A toothpick inserted into the middle of the pumpkin bread should come out clean. Cool slightly, then remove from loaf pans to cool completely on a wire rack (I take a butter knife and run it around the edges of the pan to loosen the bread. If the loaf pan was well-sprayed, it should come out easily!). Delicious served plain or slathered with butter or cream cheese!
APPLE PIE Double Crust 2 sticks (1 c.) unsalted butter, cold ½ c. coconut oil, lard, or vegetable shortening 1 tsp. vinegar (apple cider or white) 1 tsp. vanilla extract pinch of salt 1 Tbsp. sugar 1/4 c. ice water 2 ½ c. flour
Filling 8-9 granny smith (or variety of) apples—peeled, cored, thinly sliced 1 1/4 c. sugar (I used a little less because my apples were sweeter) 1 Tbsp. cinnamon juice of ½ fresh lemon pinch of salt 2 tsp. vanilla extract 2 Tbsp. flour 1 Tbsp. unsalted butter, thinly sliced
Egg Wash 1 egg white 1 Tbsp. milk or cream 1 Tbsp. sugar (for sprinkling on top)
Preheat oven to 375*. In a large mixing bowl, mash the butter with pastry blender or wooden spoons. Add in coconut oil, vinegar, and vanilla and continue to mix. Sprinkle in a pinch of salt and 1 Tbsp. sugar. Add 1 Tbsp. ice water, followed by one cup of flour. Repeat this process using a total of 2 ½ cups of flour and ¼ cup of water until dough forms a ball and feels like play dough (a few dry crumbs may remain). Use your hands to mix the dough together. Divide in half. Refrigerate dough for about 20 minutes so it's easier to work with. Flour your work surface and rolling pin, and roll the dough out evenly, turning and flipping the dough as you roll. Add extra flour as you go, if needed, to prevent sticking. The crust should be slightly larger than your pie pan (we used a 10 in. pie plate). Gently roll the dough around your rolling pin and carefully transfer it to the pie plate. In a large mixing bowl, combine the apple slices, 2 Tbsp. flour, 1 ¼ cup sugar, pinch of salt, lemon juice, cinnamon and vanilla. Pour the apples into the pie crust. Top with small pats of butter. Sprinkle with a bit more flour to help the juices thicken. Roll out your second crust. Fold and lift to place gently on top of the pie. Seal the edges by crimping. Cut vent holes into the top of the pie to release steam. Whisk together the egg white and milk. Use a pastry brush to evenly spread the egg wash over the top of the crust. Sprinkle the top of the crust with sugar. Place your pie onto a baking sheet to catch any drips. Bake for 1 hour at 375* on a center rack until crust is golden brown and apples are tender. (Start checking the pie around the 45 minute mark--you don't want the crust to burn, but you do want the apples to be soft.) Cool before serving.

PEACH COBBLER (recipe adapted from Rachael Ray Magazine) 6-8 large peaches, sliced ¼ cup brown sugar (can use more or less depending on ripeness/sweetness of your fruit) 2 Tbsp. flour
Biscuit Topping 1 ½ cups flour ½ cup cornmeal 2 tsp. baking powder ½ tsp. baking soda ½ tsp. salt 1 stick unsalted butter, frozen then grated 1 ¼ cup heavy cream 2-3 Tbsp. sugar
Vanilla Whipped Cream 1 cup chilled heavy whipping cream 1-2 Tbsp. sugar ¼ tsp. vanilla extract
Preheat oven to 400 degrees. Mix peach slices, ¼ cup brown sugar and 2 Tbsp. flour in a large bowl until the peaches are coated. Transfer to a greased 13x9in. glass baking dish. Cover with foil and bake for 20 minutes at 400 degrees. In a medium mixing bowl, whisk together 1 ½ cups flour, ½ cup cornmeal, 2 tsp. baking powder, ½ tsp. baking soda, and ½ tsp. salt. Add in the cold, grated butter and lightly stir together with a fork. Just as the peaches come out of the oven, add 1 ¼ cups heavy cream to the flour and butter mixture and stir with a fork to lightly incorporate the ingredients. Carefully remove the foil from the peaches and spoon dollops (1-2 Tbsp.) of the biscuit dough all over the surface. Sprinkle the dough evenly with 2-3 Tbsp. sugar. Place back in the oven, uncovered, for another 20-25 minutes until the biscuits are lightly golden and puffed up. Using an electric hand mixer, whip 1 cup cold, heavy whipping cream adding 1-2 Tbsp. sugar and ¼ tsp. vanilla extract about halfway through the mixing process. Cool peach cobbler for 10-20 minutes before serving with freshly whipped cream. Enjoy!

CHERRY & BLUEBERRY PIE SUGAR COOKIE CUPS: (original recipe from lemontreedwelling.com) 1 bag sugar cookie mix* 1 stick unsalted butter, softened 1 egg 1/2 c. granulated white sugar 1-21 oz. can cherry pie filling 1-21 oz. can blueberry pie filling 1 c. powdered sugar 1 Tbsp. unsalted butter, melted 1-2 Tbsp. milk
Preheat oven to 350 degrees. Mix together the sugar cookie mix, softened butter, and 1 egg until combined. (For refrigerated cookie dough: Cut the cookie dough into 24 even slices, and roll each slice into a ball.) Pour 1/2 c. granulated sugar onto a plate or shallow bowl. Spray a 24 cup mini muffin tin with baking spray. Scoop the cookie dough into a ball and roll in the sugar to coat evenly. Repeat placing each sugar coated ball of dough into the muffin tin. Bake at 350* for about 15 minutes. Remove from the oven and press the inside of each cookie cup down (if necessary) to create a well. Spoon about 1 Tbsp. of cherry or blueberry pie filling into each cookie cup. Bake for 3 minutes. In a small bowl, whisk together the powdered sugar, melted butter and milk until it is smooth and pourable. Use a spoon to drizzle the glaze over the cookie cups. Cool completely before eating. Use a butter knife to help you pop the cookies out of the muffin tin. Store in the refrigerator. ENJOY! *I had a small amount of cookie dough leftover along with half a can each of the pie fillings.

STRAWBERRY SHORTCAKES: BISCUITS 2 c. all purpose flour 1 Tbsp. sugar 1 Tbsp. baking powder 1/4 tsp. salt 1 stick unsalted butter, melted & cooled slightly 1 c. milk STRAWBERRIES 1 lb strawberries 1 Tbsp. sugar 1/4 tsp. vanilla extract WHIPPED CREAM 1 c. heavy whipping cream 3 Tbsp. sugar 1/4 tsp. vanilla extract
Preheat oven to 450*. In a large mixing bowl, whisk together 2 c. flour, 1 Tbsp. sugar, 1 Tbsp. baking powder, and 1/4 tsp. salt. Add the melted butter and milk and stir with a wooden spoon to combine. Use a large cookie scoop or spoon to portion out the batter onto a silicone lined sheet pan (they can be pretty close together because this batter doesn't spread). Bake at 450* for about 10 minutes or until lightly golden on top. Cool. Dice the strawberries and place into a bowl. Sprinkle 1 Tbsp. sugar and 1/4 tsp. vanilla extract over top. Stir to combine. Cover and refrigerate for at least 1 hour so the juices start to develop. In a large bowl, add the heavy whipping cream, 3 Tbsp. sugar (or less if you don't want it to be as sweet), and 1/4 tsp. vanilla extract. Whip with an electric mixer until thick. To assemble, slice a biscuit in half with a serrated knife. Top with a couple spoonfuls of strawberries and a large dollop of whipped cream. ENJOY!

ITALIAN SLIDERS: 12 slider buns or Hawaiian rolls 1/2 lb. ham, sliced or shaved 1/4 lb. sandwich pepperoni 1/4 lb. hard salami 12 slices provolone cheese 1/4 c. mild banana pepper rings 1/2 stick unsalted butter 1 tsp. garlic powder 1 tsp. Italian seasoning 1 Tbsp. grated parmesan cheese salt & pepper
Preheat oven to 350*. Lightly grease a 13x9in. glass baking dish. Place the bottoms of the 12 buns in the baking dish. Lay the ham, pepperoni, salami, and provolone cheese evenly over all the buns. Sprinkle the banana peppers over top. Place the "lids" of the buns on top. In a microwave safe bowl, melt the butter. Stir in the garlic powder, italian seasoning, parmesan cheese, and a pinch of salt and pepper. Use a silicone pastry brush to spread the butter mixture over the tops of each bun. Cover the baking dish with foil. Bake at 350* for about 15 minutes. Remove foil and bake for 3-4 more minutes or until the buns are golden and the cheese has melted. Slice into individual sandwiches and serve. ENJOY!

In a large skillet, brown the ground beef over medium high heat. Drain excess grease. Add the baked beans and stir together. Pour the barbecue sauce overtop making it saucy and slightly darker in color. Stir together and simmer over low for a few minutes. Tastes great with cornbread--ENJOY!

In a medium saucepan combine the ketchup, water, Worcestershire, mustard, brown sugar and butter. Heat over medium low and whisk to combine. Add the butter and stir. Add the cream cheese and whisk to combine (it will look separated at first, but will eventually come together!). Add the shredded cheddar cheese and whisk in until melted. Cut up the ham and stir into the dip with a spoon or rubber spatula. Serve with corn chips or crackers. ENJOY!
PHILLY CHEESESTEAK DIP 1 tsp. olive oil 1 pkg. (14 oz.) beef shaved steak 1 Tbsp. butter 1 small onion, diced 1 Tbsp. flour 1 c. milk 1 jar (15 oz.) Cheez Whiz Baguette or sliced hoagie buns for serving
Preheat large cast iron skillet over medium high heat. Add 1 tsp. olive oil and cook the shaved steak until brown (1-2 minutes). Reduce the heat to medium. Push the meat aside and add 1 Tbsp. butter to the skillet. Cook the diced onions for a few minutes until softened. Sprinkle 1 Tbsp. flour over top and stir to combine. Pour in the milk and stir everything together until the milk thickens up. Add the Cheez Whiz and stir together until melted and everything is combined. Serve with sliced baguette. TIP: Keep warm in a small crock pot to maintain a dip-able consistency for an extended period of time.

OATMEAL LACE COOKIES
(recipe from Savina Skewis)
2 Tbsp. flour
1/4 tsp. salt
¼ tsp. baking powder
½ c. unsalted butter, melted
1 c. sugar
1 egg, beaten
1 c. old-fashioned oats
½ tsp. vanilla extract
Sift flour, salt and baking powder together in a large bowl. Add the melted butter, sugar, beaten egg, oats, and vanilla. Stir to combine. Drop by teaspoonfuls onto a silicone mat lined baking sheet about 2-3 inches apart. Bake 3-5 minutes at 350* or until light golden brown. Cool completely. Peel away from silicone baking mat. TIP: I used a metal fish spatula, which has a thin edge, to help me remove the cookies from the baking tray. ENJOY!
RASPBERRY THUMBPRINT COCONUT MACAROONS
(recipe from Food Network Magazine) 3 large egg whites
½ c. sugar
pinch of salt
½ tsp. vanilla extract
1 14-oz. pkg. shredded coconut
Preheat the oven to 325*. Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined. Fold in the shredded coconut. Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto a silicone mat lined baking sheet. Use your fingers to form into domes. Bake for 10 minutes. Make an indentation in each cookie using the back of a teaspoon. Fill each with ¼ tsp. raspberry jam, then continue baking until golden brown around the edges, 10-15 more minutes. Cool before eating. ENJOY!

Preheat oven to 375*. Line a rimmed baking sheet with foil and spray thoroughly with baking spray. Place the saltine crackers on the baking sheet in a single layer. Place the 2 sticks of butter into a saucepan and melt over medium heat. Add 1 cup of brown sugar and stir with a rubber spatula. Bring this mixture to a boil and cook for 3 minutes, stirring frequently. Immediately pour over the crackers and spread it out evenly over top with a rubber spatula. Bake at 375* for 7-8 minutes. Sprinkle the chocolate chips over top. Place back into the oven for one minute. Use a rubber spatula to spread the melted chocolate chips evenly over top of all the crackers. Sprinkle your toppings all over the melted chocolate. Refrigerate for 2 hours then peel away from the foil and break into pieces. Store in the refrigerator. ENJOY!

Cinnamon Swirl Cheesecake Bars 8 sheets cinnamon graham crackers 3 Tbsp. white sugar 1 ½ tsp. cinnamon 6 Tbsp. unsalted butter, melted 1 large egg 1/3 c. sugar 2 8-oz. pkgs. cream cheese, softened 2 tsp. vanilla extract 4 Tbsp. unsalted butter ¼ c. brown sugar 1 tsp. cinnamon
Preheat oven to 350*. Coat an 8x8 in. glass baking dish with cooking spray. In a food processor, pulse graham crackers into fine crumbs. Add 3 Tbsp. sugar and 1 ½ tsp. cinnamon while pulsing. Drizzle in 6 Tbsp. melted butter while pulsing until incorporated. Press the mixture evenly and firmly into the baking dish. Bake 5 minutes. Cool for 10 minutes. In a medium bowl, beat the cream cheese. Beat in the egg, 1/3 c. sugar, and vanilla until smooth. Pour mixture evenly over the graham crust. In a sauce pan, over medium low heat, melt butter, brown sugar, and cinnamon about 5 minutes. Remove from heat, allow to cool for 3-4 minutes. Drizzle the cinnamon mixture over the cheesecake layer, making swirls with a knife or toothpick. Bake for 20 minutes, or until the cheesecake is just set. Allow to cool then refrigerate for 2 hours. Cut into squares before serving.
Libby’s New Fashioned Chai Pumpkin Pie 1 can (15 oz.) pumpkin puree 1 c. evaporated milk 1 can (14 oz.) sweetened condensed milk ½ tsp, salt 1 ½ tsp. cinnamon ½ tsp. ground cloves ¼ tsp. nutmeg 1 tsp. ground ginger 1 tsp. ground cardamom 2 large eggs 1 unbaked 9-in. deep dish pie crust
Preheat oven to 425*. Mix the dry ingredients in a small bowl. Beat the eggs in a large bowl. Stir in pumpkin and dry ingredient mixture. Slowly add in the milks. Place pie shell on a rimmed baking sheet. Pour pumpkin filling into pie shell. Bake at 425* for 15 minutes. Reduce temperature to 350*, bake for 30-40 minutes or until knife inserted near center comes out clean. (My pie took 45 minutes at 350* to bake through.) Cool on wire rack. Serve or refrigerate.
