★ Sweet Potato Salad • 2 medium sweet potato, chopped • 2 tomatoes, diced • 4-5 cups spring mix • 1 can black beans, rinsed and drained • 4-6 tbsp onion, minced • Dressing • 4 tbsp maple syrup • 2 tbsp mustard Preheat oven to 400°F (205°C) and toss the chopped sweet potatoes with a little salt or seasoning you like (I love curry powder on them). Bake for 25 minutes on a non-stick pan. Mix together your dressing ingredients and place in 2 containers. Once the potatoes are done, allow them to cool then combine all the ingredients into 2 separate meal prep containers with the dressing on the side.

200g very ripe banana (about 2 medium) 9 tbsp unflavored complement protein powder (bit.ly/3Uvtgj7) 1 cup white flour (can sub gf flour) 1 cup plant milk (I used soy) 1 tsp baking powder & baking soda 1 tsp vanilla extract 1/4 tsp salt 3 tbsp coconut oil (can replace with plant milk but will make a much denser bread) 3 tbsp maple syrup 5 tbsp vegan chocolate chips
Preheat oven to 350f In a blender, blend banana, milk, maple syrup, vanilla and coconut oil until smooth. Pour into a large mixing bowl and add in the dry ingredients ( protein powder, flour, salt, baking powder & salt ) Mix well. Add in the chocolate chips reserving 1-2 tbsp to sprinkle on top. Pour into an 8 1/2 by 4 1/2 loaf pan and bake 40-50 minutes until a toothpick comes out clear. Cut and enjoy. Makes 8 servings 200 calories per serving 9g protein 27g carbs 9g fat

🍜 Recipes - Chocolate Strawberry Oats • 1 cup instant oats • 1 cup strawberries, sliced in half • 1 tbsp cocoa powder • 1/2 tsp vanilla extract • stevia (to sweeten) • splash of soy milk
Place oats in a bowl. Heat up 2 cups of water and pour over top or mix together and microwave 2 minutes. Add in your vanilla, cocoa powder and stevia and mix well. Add cut strawberries on top. Add a splash of soy milk for creaminess. If strawberries are not in season or you can’t find good ones use sliced apple or other berries.
LUNCH Vegetable Chowder (4 servings) • 1 large yellow onion, diced • 4 cloves garlic, minced • 6-8 yellow potatoes (1300g), chopped • 4 cups frozen cauliflower florets • 1 tbsp nutritional yeast • 4 cups vegetable broth • 1 tsp dried thyme or 1 tbsp fresh • 1 can light coconut milk • 1 tsp dijon or yellow mustard • 3/4 cup green or brown lentils, dry In a saucepan over medium heat, add in the onion, garlic and 2 tbsp of vegetable broth and sauté 4-5 minutes until fragrant. Add in the rest of your ingredients bring to a boil, reduce heat to a simmer, cover and cook 20 minutes. For the instant pot, throw everything in there and cook 15 minutes on manual pressure, sealed and let it naturally release. Lightly blend with an immersion blender, then separate into 3 meal prep containers.
DINNER Burrito Bowl • 1 cup black beans, rinsed and drained • 1/2 avocado • 1 cup cooked rice • 1/2 cup corn, defrosted • 1 cup spring greens • 1 medium tomato, chopped • 1/4 red onion, finely minced • salsa or hot sauce to top
In a large bowl, add in all the ingredients. Top with salsa or hot sauce. TIP -Feel free to swap lunches with dinners if that makes things easier with your schedule. You can always switch dishes between days as well or eat a certain dish for a few days in a row if you wish.

6 sweet or normal potatoes chopped into cubes 1/2 red bell pepper, diced 1/2 onion, diced 1 zucchini, chopped 1 cup pinto beans 1 tbsp chili powder 1/2 tbsp cumin and paprika 1/2 tsp garlic salt 1 cup roasted corn 1/2 cup nutritional yeast Bake on 350 for 1 hour, serve with avocado and hot sauce
For the turmeric chickpeas rinse and drain 1 can of chickpeas and toss in 1 tsp turmeric, a little lemon 🍋 juice and a dash of salt. Bake in the oven on 400 for 15 minutes.
Dressing - 1/4 cup tahini, juice of 1/2 lemon, 1/2 tsp salt, 1 tsp garlic powder, 1 tbsp maple syrup, 2-3 tbsp water to thin it out. Combine all ingredients and whisk together in a small bowl.
Add ingredients into bowls evenly and place the dressing on the side to drizzle over top when ready to eat. I like to add tofu to this as well!

Garlic Roasted Broccoli - Cut broccoli into chunks or use a bag of florets Steam in a steamer tray for about 3 minutes until bright green (dont let it get soft) Add 1 tsp garlic powder Juice 1/2 lemon 1/4 tsp garlic salt and red chili flakes Toss to coat in the seasoning and bake on 450 for 10 minutes. You can broil it at the end to make it extra crispy.
Mixed Veggies with Vegan Feta Use any mixed veggies you like but I do chopped zucchini, mushrooms, onion, sliced tomatoes, and bell pepper. Toss veggies in 1/4 tsp garlic salt and goddess seasoning or a little Italian seasoning. Air fry on 400 for 10 minutes. Top with vegan feta, I like the one from trader joes but follow your heart has a good kind as well.

- Almond Milk Ingredients 1 cup raw almonds (or a mix of coconut flakes / hemp seeds etc) 4 cups filtered water 3-4 medjool dates (pitted) 1/4 tsp salt 1/2 tsp vanilla extract
1. Blend your ingredients for about 1 minute in a high speed blender. If you dont have one then it can help to soak your almonds overnight. 2. Strain through a nut milk bag or even a clean old dishcloth can work! 3. Pour into a jar and enjoy during the week! You can also make this unsweetened by removing the dates and vanilla extract. If you dont like almonds or are allergic try any other nut or seed with the same ratios 🥰
Preheat air fryer to 350°F (175°C). In a mixing bowl add in your granola ingredients and mix well with your hands. Lay out granola on a piece of parchment paper on a baking tray. I like to clump some pieces together to get some nice crunchy bits. Bake on 350°F (175°C) for 10 minutes (in the oven this will need about 30 minutes) . Toss and bake again until crispy (watch closely).
- Korean Veggie Pancakes (prepped the veggies and sauce for these) Ingredients 2 cups finely sliced and chopped veggies 3/4 cup flour (I use regular but chickpea works great too) 1/4 tsp turmeric 1/2 tsp salt 1 cup water Sauce 2 tbsp soy sauce 2 tbsp maple syrup 1 tsp sesame oil (optional but adds great flavor) 1 tsp garlic powder 1 tsp red chili flakes (optional, spicy 🌶) 1 tbsp sesame seeds
Chop veggies very finely. You can dice them in small chunks or which can make it easier to cook. Set the veggies aside and add your water, turmeric, salt and flour (slowly) into a bowl and whisk very well. Add in the veggies. On a hot nonstick pan over medium high heat pour 1/3 of the batter and let it cook 5-7 minutes or until cooked on the bottom. You should be able to easily flip this. If you don’t have a good nonstick pan use a tiny bit of spray oil. Flip and let cook another 5-7 minutes or until lightly golden brown. Cut into 4 triangles and serve with sauce.

★ Brownies Im not even messing around when I say these are THE BEST brownies I have ever made. They are gluten free, vegan, oil free and 100 calories each. You will not regret making these 🍫🤎 I doubled this recipe for the video. Ingredients - 3/4 cup oat flour - 4 tbsp maple syrup or agave - 1 medium baked sweet potato (200g) - 1/4 cup cocoa powder - 1/4 cup plant milk - 1 tsp vanilla extract - 1/4 tsp salt - 1/2 tsp baking soda - 3 tbsp vegan chocolate chips
1. Bake your sweet potato and let it cool. I do this by putting a whole one in my air fryer on 400F for 25 minutes and then letting it cool overnight in the fridge. You can also sub banana or apple sauce but I think it's much better texture and taste with the sweet potato. Preheat your oven to 400F. Mash your sweet potato well and add in your plant milk (I use soy) maple syrup and vanilla and mash well again to combine.
2. Add in your cocoa powder, salt and baking soda and again combine well then add in your oat flour. This will seem a bit dry but do not add anymore liquid. In a 9x9 loaf pan line it with parchment paper and evenly spread out the mixture. Top with chocolate chips. Bake on 400F for 22 minutes. Let cool another 30 minutes before cutting. Cut into 10 pieces. Makes 10 servings. Calories per serving 100 - Macros 19g c/2.5p/2.5f
★ Caffeine Free Mocha - 1 tsp dandy blend - 1 tbsp cocoa powder - 1/8 tsp ashwaganda - 1/2 tsp cinnamon - 1 medjool date - 1 cup hot water - 1/2 cup plant milk
1. Combine milk and powdered peanut butter until a paste forms. Split dates in half and spread peanut butter paste on them and sprinkle with coconut and chocolate chips

★ Chipotle Potato Bake - 1 can black beans, rinsed drained - 1 cup corn - 3-4 cups chopped pre-cooked potatoes - 1 cup bell peppers - 1/4 cup onion diced - 1 zucchini chopped or any other veggies you like, mushrooms would be good. - 1 tbsp chili powder - 1 tsp chipotle powder - 1/2 tsp garlic salt - Cheese sauce (optional) Directions 1. Toss everything together and bake on 400F for 30 minutes.
★ PB&J Overnight Oats - 1/2 cup rolled oats - 1/2 cup almond milk - 1 tbsp chia seeds - 2 tbsp powdered peanut butter - 1 tbsp maple syrup - 1/2 tsp vanilla extract - 1.5 cup blended berries Directions 1. Add your blended berries into the bottom of a 16oz mason jar. 2. Add the rest of your ingredients, lightly mix. 3. Top with a few extra frozen berries or extra blended berries. 4. Let sit overnight 5. Enjoy in the morning ☀️ 1 serving - 426 calories - 77g carbs/14g protein/8g fat
★ Cheese Sauce Ingredients 1 cup nutritional yeast 1/2 cup pb2 powdered cashews* 2 tbsp tapioca starch 1 tsp turmeric 1 tsp garlic powder 1 tsp paprika 1 tsp umami flavor (optional) 1/2 tbsp salt - To make 1 cup plant milk (unsweetened soy is best) 2 tbsp powdered cheese Juice lemon (optional) - Mix dry ingredients and store in a mason jar. When you are in the mood for cheese sauce combine 1 cup plant milk with 2 tbsp of the cheese powder. Place in a saucepan over high heat and once it starts boiling it will thicken fast. Stir it continuously until it is as thick as you want it. I do only about 20-30 seconds then take it off the heat and use. You can add a little lemon juice or maple syrup to this for some extra flavor. Just a tiny splash can add a more complete flavor profile. *if you dont have access to the powdered cashews you can either grind your own powder or leave it out. - Makes 16 servings - For 1 serving of only the powder it is 38 calories 4g carbs/4g protein/0.5g fat the calories will be different when its made depending on the milk you use ❤️ -

I messed up the Korean pancakes and totally forgot a step in making them. You want to mix the veggies into the batter and then pour it on the skillet. Chop up whatever veggies you like and mix together 1 cup flour with 1 cup water, add 2-3 tbsp more water if you need to then mix the veggies into the batter. Pour on a hot non stick skillet and cook 8 min each side. Dip in sauce. Sauce recipe 1 tbsp maple syrup 1 tbsp soy sauce 1 tsp sesame oil (optional) 1/2 tsp garlic powder, red chili flakes and sesame seeds
The chocolate sauce I made is 2 tbsp maple syrup 1 tbsp soy milk (or any plant milk) pinch of salt 1 tbsp cocoa powder 1/4 tsp vanilla Mix well and pour over fruit. Makes 2 servings of 60 calories each.

🥗For the dressing use 1/4 cup tahini 4 tbsp coconut aminos Juice 1/2 lemon 4-6 tbsp water 1 tsp garlic powder Mix together and add into the bottom of 2 mason jars (32 ounce size) Then add in any veggies you like. I used Onions, cucumber, tomatoes, carrots, marinated beets, chickpeas that I tossed in curry powder and salt and baked on 400 for 30 min. Cilantro, kale and hemp seeds. Keep these in the fridge and when you want a salad add some extra greens into a bowl and pour over top! .
