Chicken Hand Pies
Ingredients
1 box (2 refrigerated pie crusts)
2 cups cooked, shredded chicken (rotisserie chicken works great)
1 cup frozen mixed vegetables, thawed
⅓ cup cream of chicken soup
¼ cup shredded cheddar cheese
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon black pepper
1 teaspoon dried parsley (optional)
Egg Wash
1 egg
1 tablespoon water
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper.
In a medium bowl, mix together the shredded chicken, vegetables, cream of chicken soup, cheddar cheese, garlic powder, onion powder, pepper, and parsley until well combined.
Roll out the pie crusts slightly to make them a bit larger.
Cut each crust into 4 circles using a 4½- to 5-inch round cutter or a small bowl, for a total of 8 circles.
Spoon about ¼ cup of filling onto one half of each circle, leaving a border around the edge.
Brush the edges with a little water or egg wash.
Fold the dough over to create a half-moon shape and press the edges together with a fork to seal.
Place the hand pies on the prepared baking sheet.
Whisk together the egg and water, then brush the tops of each hand pie with the egg wash.
Cut a small slit in the top of each pie to allow steam to escape.
Bake for 20–25 minutes, or until the crust is golden brown and flaky.
Let cool for 5–10 minutes before serving.
