I will share tips, recipes, and more.
Soft Pretzels: To a stand mixer add: 1 cup of warm water and ½ cup of sourdough starter. Whisk to combine. Then put on your dough hook and add ¼ cup brown or maple or brown sugar, and 3 ½ cups flour. Knead on med for 7 minutes. Place in a warm place until doubled. This will take a few hours depending on the temperature of your kitchen. You can also pop in your oven with the light on to speed up the process. Next, roll out the dough into a big rectangle and cut it into strips. Roll out each strip into a rope. Then to shape them, cross it. Cross again. And then flip up. You can also skip shaping these altogether and just do pretzel bites, but I think the shape is half the fun. As you shape them, set them aside on parchment paper lined baking sheets. Cover, and let rise for about 1 hour more. When you are getting close to that time being up, mix up a solution of 3 cups of hot water and ¼ cup of baking soda. Mix well. Dip the whole pretzel into the solution and then place it back on your baking sheet. You will need to stir every few pretzels because the baking soda will settle. Preheat your oven to 475 F and let the pretzels sit for about 10-15 minutes while your oven preheats. Now is also the time to add pretzel salt or whatever other toppings you’d like on them. Bake for 8-10 minutes, but watch them closely since every oven is different and the baking soda solution will make them turn very brown, very quickly. After you remove them from the oven, brush immediately with melted butter.
Bagel bites: Start by adding to a large bowl: ¾ cup sour cream, ¼ cup water, 1 ½ cups flour, 2 tsp. baking powder, and ½ tsp. salt. Mix the dough together well. It will be pretty sticky, but if it’s too sticky to work with, you can add in a bit more flour. Let this dough rest for about 15 minutes, then preheat your oven to 350. If you are making these at the last minute you can definitely skip the rest period.
Now take a heaping tablespoon of dough and spread it out into a circle. Don’t roll it too thin or the dough will break open when they are baking. Then you take a heaping teaspoon of cream cheese, make it into a ball, and place it in the center. Then, form the dough around the cream cheese ball, making sure to seal any seams. I usually roll it between my hands at the end. Place them on a parchment paper lined baking sheet. You are going to repeat this until all of the dough is used up. Then brush the tops of each ball with egg and sprinkle with whatever seasonings your kids like, or you can skip seasoning all together. We like everything bagel seasoning, but you could also do a little cinnamon sugar or get creative. Bake those for 15-20 minutes or until they begin to brown and are cooked through.

Discard Recipes: youtu.be/2kcq9S4UrdcStaying motivated as a homemaker on cold winter daysThe From Scratch Farmhouse2025-01-25 | If the bitter cold winter weather is getting you down, I’m hoping this video will help get you motivated and upbeat again. I’m going through 6 ideas to help boost motivation when the weather is too cold to be outside and cabin fever is setting in.
1. Heat a cup of milk until hot, but not boiling, and then whisk in ¼ cup of unsweetened cocoa. Set that aside. 2. To the crockpot add: 5 cups of whole milk, 2 cups of heavy whipping cream, 14 ounces of sweetened condensed milk, 2 teaspoons vanilla, and 2 cups of semi-sweet chocolate chips. Finally, pour in the cup of milk with the dissolved cocoa powder. Whisk well. 3. Turn the crockpot on low and whisk every few minutes as it heats up and the chocolate melts. After about 30 minutes, you can just go back and stir it every once in awhile and in about an hour and a half, or after it is hot and fully incorporated, it’s ready to serve. I just switch it over to keep warm at that point and then we can enjoy it for the afternoon!
Marshmallow Fluff Recipe:
1 cup hot water 3 T gelatin 1 cup of sweetener (honey, maple syrup, or powdered sugar)
1. Add gelatin to hot water to a stand mixer or bowl. Let sit 3 minutes. 2. Whisk on high using a stand mixer or hand mixer until well blended and it begins to thicken. 3. Add sweetener and then whisk on high until white and fluffy.

Marinara Sauce Recipe:
1. Put 2.5 gallons of plain thickened tomato sauce into a large pot. 2. Then, rough chop 5 large onions, mince 4 garlic cloves, and then saute them over medium heat until the onions are beginning to brown. 3. Run the onions and garlic through a blender until the mixture is fairly smooth. Then, add it into the pot of tomato sauce. 4. Add: ½ cup + 2 T salt; 1 cup of sugar; ¼ cup + 2 T basil; ¼ cup + 2 T oregano; 3 T Italian seasoning; 1 T red pepper flakes; 3 tsp. Garlic powder; and 5 bay leaves crumbled fine. 5. Let that simmer for about 45 minutes, stirring often to keep it from burning on the bottom.
You can freeze this, but I prefer to can it so that it’s shelf stable.
To each quart jar I add 1/2 tsp. citric acid. Pints get 1/4 tsp and this is just to ensure that my recipe is acidic enough to be safely water bath canned. Then fill your jars, wipe the rims, and add your lids and rings. Quart jars are processed in a water bath canner for 40 minutes and pints 35. And if you are like me and live about 1000 ft. in elevation you should add 5 minutes to those times.
Bean Cookie Dough Recipe:
Add to a food processor or blender: 1 can northern white beans 1/2 cup peanut butter 1 tsp. vanilla
Blend until smooth. I have more information on this over on my Instagram @thefromscratchfarmhouse but plan to share more here as well. Today I'm diving into those questions as I complete some homemaking projects in my fall farmhouse.
Ingredients: 2 T soft butter + 6 T melted 2 lg. eggs 7 cups a.p. flour 2 T active dry yeast 2 1/2 tsp. salt 1/2 cup sugar 2 cups lukewarm water
1. Add all ingredients except the 6 T melted butter to a stand mixer and knead until soft and smooth. Alternatively, you can mix and knead by hand. 2. Cover and let rise 1-2 hours, or until almost doubled. 3. Gently deflate and divide into 16 (3.5 oz.) balls. Shape into a round ball, flatten to about 3" across. 4. Place buns on a lightly greased baking sheet, cover, and let rise about 1 hour. 5. Brush buns with half the melted butter. 6. Bake at 375 degrees F for 15-18 min., until golden. 7. Remove from oven, brush with remaining butter, and cool on a rack.
Homemade Cream Cheese (Better than store bought!)
Ingredients: 1 cup cream 1 cup whole milk mesophilic culture
1. In a quart-size mason jar combine 1 cup cream and 1 cup whole milk. 2. Stir in 1/8 tsp. mesophilic starter culture (on Amazon or cheese supplies stores) 3. Cover jar with a clean towel or coffee filter and rubber band and set in a warm place for 8-12 hours or until it resembles thick yogurt. I put mine in the oven with the light on overnight. 4. Pour the thickened cream into a piece of clean cheesecloth, tie the ends, and hang in the fridge above a bowel. I use a chip clip to clip it to the side of my bowl. Let the whey drive for 2-3 hours or until your desired consistency is achieved. 5. #homesteading #preserving #motherhoodAzure Standard Alternatives (+ Favorites & Things We No Longer Buy)The From Scratch Farmhouse2024-05-23 | In this video I will tell my 10 favorite items from Azure Standard, 5 things we will no longer buy from them, and several Azure Standard alternatives in case shopping with Azure is not something you are able or wanting to do.
To a large bowl add: 5 cups fine almond flour 1 tsp. salt 1 tsp. baking powder
Whisk to mix well.
In a separate bowl combine: 1/2 cup softened coconut oil 1/2 cup melted honey 4 tsp. vanilla extract
Stir to combine the wet ingredients
Add wet ingredients to dry and mix well.
Chill 30 min while you preheat oven to 350 F.
Drop spoonfuls of batter on a cookie sheet. I like to use parchment paper. Bake 8-10 minutes or until slightly brown.
Let cool 5 minutes, then transfer to a cooling rack.

Plus, come see how we have a milk cow without a "real" barn and be encouraged that it's not as hard as it may seem!

Recipe: Ingredients: 2 cups heavy cream 1 cup whole milk 2/3 cup sugar 1/8 teaspoon fine sea salt 4 large egg yolks 1 1/2 tsp. gelatin powder 1 teaspoon peppermint extract 1/2 teaspoon vanilla extract 1/2 cup crushed peppermint candy canes (optional)
Directions: 1. In a small bowl add 1 cup of the cream. Sprinkle the gelatin across the top of the cream and let sit. 2. In a small saucepan combine 1 cup of the cream, milk, sugar and salt over med-low heat until sugar is dissolved and it is hot. Remove from heat. 3. In a separate bowl, whisk yolks. Whisking constantly, slowly add in 1/2 cup of the hot cream mixture. Then, still whisking, slowly add the egg mixture into the pan. 4. Return the pan to med-low heat, slowly stirring while the mixture gets to 165 F. Whisk the gelatin into the cream. Then, add the cream and gelatin mixture slowly to the pot. Continue to heat, while whisking gently, until the mixture gets up to 170 F. 5. Remove from heat and whisk in the peppermint and vanilla. 6. Pour through a sieve into a blender. 6. Place the whole blender into the refrigerator to chill for at least 4 hours. 7. Blend the mixture until smooth, scraping down the sides if necessary. It should be similar to a pudding consistency at this point. 8. Add in the crushed candy cane and pulse until mixed in evenly. 8. Pour the mixture into your ice cream maker and freeze according to your appliance's instruction manual. I set mine for 45 minutes.
