This dish often reminds us of the dry and sometimes punishing dinner that our childhood nightmares were made of. It would be a stretch to say that I was excited to develop this recipe. Stir and cook until softened, about 5min. Move onions to a bowl and set aside. In a food processor, add breadcrumbs. Spin to break down until powdery. Add buttermilk then spin for 10 seconds or until mixture is hydrated. Add ground meats and process to combine and break down meat, about 15sec. Transfer meat mixture to onion bowl and add eggs, garlic, worcestershire, mustard, poultry seasoning, pepper, and salt. Mix and fold until just combined. Shape into a loaf. I use a loaf pan to shape it, then transfer out onto a foil lined baking tray. Refrigerate for about 10-15min while you make the glaze. Sear meat loaf under medium-low broiler for 5-10min until beginning to take on color on top. Add a layer of glaze (recipe below) and return to cook under broiler for another 3min. When glaze gets sticky and begins to take on color, remove loaf from oven and glaze again. Return to oven under broiler and repeat, rotating as necessary. Glaze a third/final time then load into a 325F/160C to bake for 25-35min or until internal temp reaches 155F/70C------MEATLOAF GLAZE (...that you'll want to put on all the meats)▪60g or 1/3c brown sugar ▪40g 2 2/3Tbsp cider vinegar ▪10g or about 1/3Tbsp worcestershire▪20g 1 1/4Tbsp sriracha ▪300g or 1 1/4c ketchup Add ingredients to small sauce pot and stir. Once meatloaf has been glazed three times and is baking (see recipe above), place over medium low heat to reduce by half, about 3-4min Stir often to prevent burning. ------ONION GRAVY▪50g or 3 1/2Tbsp butter ▪100g or 2c onion, medium diced ▪salt▪25g or 3 1/4Tbsp AP flour ▪450g or 1 ¾-2c beef stock ▪10g or 1Tbsp beef flavored better than bouillon ▪5g or 1tsp soy sauce Preheat saute pan over medium heat. Add butter, onion, and a pinch of salt. Sweat for about 5min to soften. Add flour and whisk to combine and cook for 3-5min. Whisk in 100g of the beef stock. When stirred in and thickening, whisk in remaining 350g stock. When simmering, add bouillon past and soy sauce. Crack 6 eggs and separate whites from yolks2. Melt butter & chocolate in non-stick pan over low heat. Temp should be 100-110F/40C. Set aside to cool.3. In a stand mixer, whip the egg whites to soft peaks (or whisk by hand), then add sugar, whipping on high (about 3 min) to stiff peaks.4. In clean mixer bowl, whip heavy cream to just before stiff peaks, careful not to over-whip. This should take about 90 sec5. Gently fold whipped cream into the egg yolks, then gently fold in the melted chocolate until combined.6. Fold in the egg white meringue gently to keep the mixture light and fluffy.7. Transfer the tails to the fridge to cool for 5 minutes.4. Use food scissors to cut the tails open on both sides.Peel off the outer shell and refrigerate the meat while preparing the bisque .5. Chop the lobster shells into chunky pieces. Also, rough chop onion, celery, carrots, and press garlic.6. In a large soup pot over medium heat, add a long squeeze of olive oil, butter, and the chopped lobster shells. Fry the shells for 5-6 minutes to infuse the fat with lobster flavor.7. Strain the shells out of the lobster-infused butter, discard the shells, and return the pot and strained butter to the medium heat. Add chopped veggies and a large pinch of salt. Before searing, dry beef very well on all sides with a towel. Preheat a dutch oven or large heavy-bottomed pot over high heat. Add a long squeeze of neutral oil. Drop in salted roast and press the meat down into the pan. Sear for 6-7 minutes until a brown crust has formed. Flip and sear on the second side for 5-6min. Transfer to a plate. Return the pot to medium heat and add 50g of butter, followed by veggies, garlic, and a large pinch of salt. Stir and cook to caramelize and slightly soften for about 3 min. Add tomato paste. Stir and saute for about 2 minutes until it has taken on a darker rusty color. Stir in flour for 30-60 sec. Add in wine, worcestershire and stir to deglaze solids on the bottom of the pot. When slightly thickened, add better than bouillon and stock. Bring to a simmer. When simmering, snuggle the seared beef into the pot so that it’s touching the bottom of the pot. Add bay and thyme. Add a probe thermometer if you have one, set the temp to 195F/90C. cover the pot leaving the lid slightly ajar, and load into a 275F/135C oven to cook for 4-5 hours. Checking on the beef in about 2 hours when the temp hits 195F. Check the meat at this point. It shouldn’t be shreddable yet. Return the lid to the pot, and return the pot to the oven to cook for about 2-3 more hours, checking the roast gain at the 4-4.5 hour mark. You’re now looking to maintain the temperature of about 190-205F/90C for a few more hours until the meat is fork tender and shreddable, but does not totally fall apart. If internal temp rises above this temp, turn down the oven to maintain 190-205F/90C. When done, you'll be able to easily pull the meat apart with forks. Taste sauce for seasoning and add salt if needed. Allow beef to rest in the cooking liquids for about 30 minutes while you finish your potatoes. Allow to sit at room temperature for 20 minutes then add this yeast mixture to the salted dough & squeeze with a wet hand to combine. Cover with lid. Let sit for 30 mins. Perform a strength building fold. Cover, rest for 30 minutes. Do another strength building fold. Cover, rest for a final 60 minutes. Transfer dough to a floured surface & divide into 4 equal pieces (about 230g each). Preshape each piece as shown @11:15. Cover with a towel & rest for 15 minutes. Shape as shown @7:05 (process is the same as “better” baguette shaping).Proof in a floured couche, cover, & proof shaped loaves for 45-60 minutes. Score with a bread lame and bake in a preheated, semolina dusted challenger bread pan. Bake 465F/240C covered for 12 mins. Remove lid & bake for 12-15 more mins until crusty & golden brown.
