Today, I’m diving into a classic church cookbook to make three time-tested recipes that are full of nostalgia and flavor! These dishes have been shared at potlucks and Sunday suppers for generations—so you know they’re good. Watch as I recreate these comforting favorites and give them a taste test to see if they still hold up today. MICROWAVE FUDGE:
1 can sweetened condensed milk
2 cups semisweet choc. chips (12 oz bag)
1/2 jar (7 oz jar) of marshmallow cream
1 cup chopped nuts
Mix sweetened condensed milk and choc. chips in a microwave safe bowl. Microwave on high for 30 second increments, stirring in between, until all melted (about 2 minutes total). After all melted and combined, add marshmallow cream and stir. Stir in nuts. Pour into 8x8 dish and place in the fridge or freezer until hardened.
BROCCOLI CORNBREAD:
1 (10 oz) pkg frozen broccoli cuts, thawed and patted dry
1 (8.5 oz) box Jiffy cornbread mix
3 eggs, beaten
1 onion, finely chopped
1 cup shredded cheddar cheese
1/2 cup unsalted butter, melted
1/2 tsp garlic salt
1/4 tsp cayenne pepper
Preheat oven to 375 F. Grease 8x8 pan and set aside. Combine cornbread mix with onions, eggs, cheese, butter, garlic salt and cayenne. Stir in broccoli. Pour into prepared pan and bake for 30 minutes. Allow to cook a little before cutting.
BAKED SPAGHETTI CASSEROLE:
1 lb ground beef
1 pkg (8-10 oz) spaghetti noodles
2 eggs
3 Tbsp melted butter
1/2 cup grated Parmesan cheese
1 cup ricotta cheese
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic salt
1 tsp oregano
1 jar favorite spaghetti sauce
2 cups mozzarella cheese
Preheat oven to 350F. Cook spaghetti to al dente in large pot. Drain and put in the bottom of a 9 x 13 casserole dish. Mix 2 eggs, melted butter and parm. cheese. Spread mixture over spaghetti. Brown ground beef in a skillet and drain. Layer 1 cup ricotta cheese, then the ground beef, then seasonings. Pour jar of sauce over top and then top it all with mozz. cheese. Bake at 350 for 30 minutes.
