General Session IX: Our Gastronomic Heritage: Food Traditions for a New Generation
One tool in the kit of a dynamic menu is the utilization of quality ingredients for superior and varied flavor and a story that can elevate an ingredient or recipe’s narrative. Here we’ll end our 2024 Worlds of Flavor conference looking at undervalued heirloom ingredients and heritage recipes as the building blocks to deliciousness for a new generation. We’ll learn about the Ark of Taste, the nonprofit organization Slow Food’s living catalog of our nation’s food heritage, which offers operators dynamic inspiration for the menu.
