Recipe for Hoppin John
6- thick cut sliced bacon, chopped
4 cups frozen blackeye peas
1 1/2 cups uncooked rice
fresh green onions, chopped
4-celery stalks, sliced (about 1 1/2 cups
1 medium size yellow onion, chopped ( 1 1/2 cups)
1 small green bell pepper, finely chopped (about 1 cup)
3 garlic cloves chopped, about 1 Tbsp
1 tsp chopped fresh thyme
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 1/2 tsp kosher salt (divided parts)
8 cups of chicken stock (2 qts)
2 Tbsp olive oil
Directions:
In a dutch oven pot, fry bacon over med-high stirring occasionaly until starting to crisp. after about 10 minutes, add celery, onion, bell pepper, garlic, thyme, blk pepper, cayenne, and 1 tsp of the salt. Cook about 8 min or until the onions are tender. Add chicken stock and blackeye peas and bring to a boil over med-high heat. Reduce heat to med-low and simmer until peas are tender, about 40 minutes. Drain pot mixture (peas and veg) but retain the cooking liquid for later use. Return pea mixture and 1 cup of the liquid back into the dutch oven pot. Cover to keep warm, and set aside. Heat oil in a medium saucepan over med-high heat. Add rice and cook, stirring often until fragrant and lightly toasted (3-4 minutes) Stir in 3 cups of the reserved cooking liquid and remaining 1/2 tsp of salt. bring to a boil and reduce heat to med-low. cover & cook until rice is tender (15-18 min) Fluff rice with a fork, and stir into pea mixture in dutch oven, stir in remaining cooking liquid 1/4 cup at a time until desired consistancy is reached. sprinkle servings with chopped green onions.
