Mississippi Orzo
1lb ground beef
2 cups diced carrots
4 Tbsp butter
1lb orzo
4 cups beef broth
1/3 jar pepperonchini or banana peppers, plus the juice
1 ranch seasoning packet
1 au jus packet
1 cup water (if needed)
Cook ground beef with salt and pepper until completely cooked through. Drain grease. Add butter, carrots, and orzo. Saute for 10 min, until the orzo is toasted and the carrots start to get a little tender. Add broth, peppers, and seasoning packets. Continue to simmer over medium heat, stirring often. After about 10 min, if the liquid is absorbed but your orzo and carrots need more time, add the extra water and a lid. Continue to simmer for 10 more min over medium-low until orzo and carrots are done.
Cheesy Broccoli Beef and Rice
1 cup cottage cheese
1 cup chicken broth
¼ cup parmesan cheese
1 cup diced onion
1 bag frozen cauliflower rice
1 lb ground beef
salt & pepper
4 tsp minced garlic
1 bag frozen broccoli florets, steamed
2 cups frozen white rice (or use pre-cooked)
½ cup cheddar cheese, grated
Blend together the cottage cheese, chicken broth, and parmesan cheese. Set aside.
Heat a large skillet over medium-high heat with a little avocado oil. Add diced onion and cauliflower rice and sauté for 10 minutes, covered, but stirring often. We want this to get nice and cooked down so it’s not watery at all.
Scoot the cauliflower mixture to one side, and add a fresh spritz of oil to the empty side of the pan. Add the beef, salt, pepper, and garlic, breaking up the meat until browned and cooked through. Add the broccoli, the blended cottage cheese sauce, and the rice combining well. Cover the pan and let everything warm through for about 10 min.
Cover with cheddar cheese, turn off the stove, and cover the dish to let the cheese melt. Enjoy a nice big serving!
