In this video I do a Weber Smokey Mountain Comparison between the 18" WSM and the 22" WSM. Right off the bat I meant to say hardware store in the beginning on the video and not grocery store. I also go over all the MODS that I have for both of my Weber Smokey Mountain cookers as well. Now to give my 2 cents.
The 18" is probably one of my favorite cookers in my lineup but what it does lack compared to the 22" space obviously. So if you're looking at getting a Weber Smokey Mountain and you think that the 18" might be too small then buy the 22". The 18" Weber Smokey Mountain to me is a lot more of a consistent cooker compared to the 22" WSM simply because it holds temps a lot easier IMO. But with that being said they both are really solid cookers and I do believe you would be happy with either one. As stated in the video I will leave links below for all of my Weber Smokey Mountain MODS except for the wheels on the 18" because I honestly don't remember where or when I got them. Hopefully this comparison video between the 18" and the 22" Weber Smokey Mountain helps you all out and if there's any other comparison videos that you would want me to do just let me know in the comments. Thanks for watching!

In this video I cook up some chicken wings hot and fast on my Pitts and Spitts Maverick 1250 Pellet grill. Not much else to say about this cook except for the fact the the Butcher BBQ and Tailgaters BBQ Rubs were both fantastic! If you've been on the fence about doing wings hot and fast I highly suggest you give it a shot. Thanks for watching and see you in the next video. And don't forget to check out Porter Road!
In this video I cook 2 racks of baby back ribs on my 55G gateway drum smoker hot and fast! I load the drum up with some Blues Hog lump charcoal and I use some rubs and sauce from Butcher BBQ. The combination of all those things together really made for some good ribs with some really nice color! So if haven't tried the hot and fast method yet and you have a Gateway or another type of drum or bullet smoker I highly suggest you give these a try! As always I really appreciate you all watching and we will see you in the next video!... Which is hopefully sooner than later 🍻 🍺

In this weeks video I do a unboxing/assembly on the 59" Stainless Steel Propane/Charcoal Spit Rotisserie made by Smoke Daddy Inc! First things first.... this is a new kind of cooker for me and I am super excited to get to using it. I mean I have several other rotisserie attachments for my pellet and charcoal grills but none of them even come close in size to this! With the rotisserie basket attachment I think I can easily do 16-24 pork butts at once and the ability to use propane or charcoal is a huge advantage! The entire process of putting this together took me approximately 4 hours but if you have an extra set of hands it would streamline the process for sure! This grill is an absolute tank and this is for sure the biggest grill i've even owned! So I hope you enjoy the video and be sure to visit the Smoke Daddy Inc. webpage and get yourself one of these if you're in the market. Thanks for watching and see you all in the next video!
In this weeks video I do a 3 year pellet grill review of my Pitts & Spitts Maverick 1250. There isn't a whole lot of bad with this pellet grill and the fact that i've had it for 3 years and only had a few issues is impressive! This pellet grill has been used in all the weather you could imagine and just keeps chuggin. To anyone in the market for a pellet grill I would highly recommend spending a little extra cash and buying a Pitts & Spitts. Thanks for watching and see you in the next video!
In this video I fire up the PK yet again for some steak! Specifically I cook up 2 giant cowboy ribeye steaks! I do about a 5-6 hour salt brine on the steak and use the Steak & Brisket Rub and Grilling Addiction rub from Butcher BBQ. The coal I use in the PK is a combination of B and B Oak Briquettes and Blues Hog Lump Charcoal and 1 little chunk of hickory. All of these ingredients put together made for a pretty dang good steak and I'll for sure be using this combo again! I also used my trusty grill grates for some cross hatch marks because when it comes to steak that is my preferred method! Thanks for watching and see you all in the next video!
In this weeks video I do a whole chicken in the oven. Not a very exciting cook by any means but its honestly my first full chicken i've ever cooked indoors! This was a super easy cook to do and the Blues Hog ingredients I used were fantastic and I highly suggest you give them all a try! As always thanks for watching and see you in the next video!
In this weeks video I fire up my dad's Vertical Pellet Grill! That's right we are on special location this week in the "Land Of Grills"! This Pellet Pro Vertical Pellet Grill is an absolute tank and it did an awesome job on the bacon wrapped wings! I cook at 350F and these wings were done in about an hour! When you do bacon wrapped wings it works better with regular cut bacon and if you cook at a hotter temp! I have to say that the combo of the Chicken Fried BBQ Texas Rib Grind and the Blues Hog Raspberry Chipotle was an awesome combo on these wings and i'll for sure be using this combination again! A special thanks goes out to my Dad for cleaning the grill when I was done! Thanks for watching and see you all in the next video!
In this weeks video I show you how to smoke a pork butt on a Weber Smokey Mountain! This is the highly anticipated Pt.2 of my pulled pork recipe video series. In this video I go over everything you need to know on how to smoke a pork butt on a weber smokey mountain! From Lighting and running the WSM to cooking the pork butt and lastly eating the pulled pork! I use my 18 inch WSM for this video and as previously stated I used products from Butcher BBQ to prep the butt! Not only is this cook super easy to do but the flavor you get when you cook directly over coals is something that everyone should try at-least once in there lives. Hopefully this video series is as fun for you all to watch as it was for me to make. As always I appreciate everyone watching and i'll see you all in the next video!
In this weeks video I go over injecting a pork butt! This video is part 1 of a 2 part series and it is a simple pulled pork recipe. I go over how I inject a pork butt as well as what kind of injection I use and the equipment I use to do it! As I state in the video when it comes to injecting you do not have to do it but if you've smoked a bunch of butts and want to try something different I suggest you give it shot! Part 2 of this series will be out next week so keep your eyes peeled for that! Thanks for watching and let me know in the comments if you're a fan of injecting.

In this weeks video I show you how to cook up some Hot Beef Sandwiches! This recipe is the same recipe I use for Mississippi Pot Roast and if you're a fan of hot beef sandwiches I highly suggest you give this recipe a shot! I use my 18" WSM and B and B Oak briquettes for the fuel and ran the cooker in between 275-300F for the entire cook. The flavor you get with cooking directly over coals really gives the hot beef sandwiches a nice subtle smokey flavor! If you don't have the time to do it on the grill just use this recipe in your crock pot. 8-10 hours on low and 4-6 hours on high! Thanks for watching!
Hot Beef Sandwiches Ingredients
- 3-4 pound chuck roast - Tailgaters BBQ Party Rub - 1 packet of Hidden Valley Ranch Mix - 1 Packet of Au Jus - 1 Jar of Peperoncinis - 1 Can of Beef Consomme - B and B Oak Briquettes - 18" Weber Smokey Mountain
In this weeks video I cook 3 racks of St. Louis Style Ribs On A Pellet Grill! Typically I wouldn't post 2 rib videos in a row but I had to make up for last weeks fail! I cook these St. Louis Style Ribs on my Pitts & Spitts Maverick 1250 at 275f for about 3.5 hours. The rubs I used were the Butcher BBQ Honey Rub and Grilling Addiction and I finish the ribs off with Butcher BBQ Apple Orchard bbq sauce. The flavor and the color these products gave me on these ribs was awesome and will for sure be using this same exact combo again in the future! This recipe is super easy to follow and really does make some good ribs so I highly suggest you give it a shot! As always thanks for watching and see you all in the next video!
On a side note I had some lighting issues when I was cutting the ribs so apologies for the darkness.
Custom Flag - handcraftedbyjohn.comPellet Grill St. Louis Style Ribs | Too Hot And Too FastMad Horse BBQ2022-02-11 | In this weeks video I do 3 racks of St. Louis Style Ribs way too hot and way too fast!
Right off the bat I will say that like I said in the video, you need to always know the cooker you're using so I will chalk this mess up all on me! However I did stick my thermoworks smoke X4 in the grill after I was done.... I had the GMG set to 275F and the X4 was reading anywhere from 370-385F. I have had issues in the past with this grill but I thought I had all the kinks worked out of it but apparently not. So this is unfortunately strike 3 on that GMG so she will be put in timeout for a long while.
For those of you who are going to ask. I've had everything on this GMG set the same way for the last dozen cooks and never had this issue. I vacuum out my grill at-least every other cook and the temp sensor clean. After I finished this cook I powered the unit down until it cooled and then fired it back up to 275F and it was +\- 15to20F.
Any-who I will say that on the good ribs the flavor from the Butcher BBQ products was fantastic and will for sure use the same combo again. I actually plan to run this same exact cook again in the near future but use my Pitts And Spitts Maverick 1250. So if I get it done I will for sure record it and hopefully have it up soon!
I do not want to stray anyone away from GMG what so ever! I personally have a lot of friends that own the grills and know of a ton of people who have them and they work great for them. For me I just have had bad luck. Anyways thanks for watching and see you all in the next video!

In this weeks video I cook a Huge Tomahawk Ribeye on my PK Grill! This isn't just any steak as I finally bit the bullet and bought myself a gold grade tomahawk ribeye from Snake River Farms! Now when I say huge I mean it! This steak weighed in at 3.8lbs and was absolutely massive! And I have to say that to me one of my favorite cuts to cook is a tomahawk ribeye and this one was about as tender as i've ever had! In this video I show you the techniques I used to cook this massive cut of meat! And like I said in the video if you want to see a more in depth process on how I cooked the steak and set up my grill I will leave a link to another video I did in the description. The charcoal I used for this cook was about a 50/50 mix of Blues Hog Briquettes and Lump. In this weeks video I fire up my Pitts & Spitts Maverick 1250 pellet grill for a smoked brisket! This injected smoked brisket recipe is not only super easy to do but it also adds another layer of flavor that is delightful! All the products that I used are from Butcher BBQ and will for sure be ordering more stuff from him and using the same stuff again for cooks in the future! If you've never injected a brisket before I would highly suggest you at least give it shot! This weeks video is more or less a product review of a bunch of bbq smoker accessories from Grillaholics! If you're like me and have multiple grills then you need some BBQ accessories to keep things in proper operating condition as well as needing utensils to cook the food. Grillaholics is a company that sells all of that in 1 spot and I honestly have to say that the stuff that they sent me is all high quality. I prefer to buy my bbq accessories in person but I live in a small town and finding what I want isn't always possible. So the next best thing is to hop online and buy there. I will include a discount code as well as a link down below for grillaholics.com and you will be able to save 10% on your order when you use it! This weeks video is bacon wrapped tater tots! This appetizer recipe is super easy to do and only takes about 40 minutes! This recipe basically requires 2 ingredients.. bacon and tater tots! I find this recipe to work the best with a half strip of regular cut bacon and just a little bit of sweet rub! If you really want to take these bacon wrapped tots to the next level give them a dip in your favorite bbq sauce at the end and add another layer of flavor! I used my Pitts & Spitts Maverick 1250 for these bacon wrapped tater tots but any pellet grill for that matter will work perfectly for this recipe or if you don't have a pellet grill just pop em in your oven! In this video I show you how to hang pork ribs on my 18" Weber Smokey Mountain using the 18" WSM Hanging System by Pit Barrel Cooker. I also go over the complete process of this cook during this video. From prepping the ribs, starting the grill, and controlling the temp this video pretty much goes over everything. I will say that when you hang ribs over coal the flavor is unmatched compared to anything else and it's something you have to try! I ended up using the square piece of the hanging system just so I would get a better thumbnail, if I would've hung the ribs on the outer ring I easily could've fit 10-12 racks. The 18" hanging system by pit barrel cooker is quickly becoming my go to method for using the 18" WSM and i'd highly suggest you purchase one! Have a great week everybody and thanks for watching!

In this video I show you an super easy smoked chili recipe! This over the top chili is not only super easy to make but it is also absolutely delicious! I will include the ingredients down below but if you have a chili recipe that you like just follow that! I use my Oklahoma Joe's Bronco Pro for this cook and having 2 separate levels really makes this chili easy to cook! So chili to me is one of those meals that is better when it's cold out and i'll have to admit that growing up if we had chili it would be in the crock pot. But let me tell you that once you make this chili on a smoker you'll have a hard time crock potting it ever again! I'm always up for trying a new recipe so if you have a chili recipe that you like leave me the ingredients in the comments! Have a great week everybody!

In this video I show you manually lighting a pellet grill. Manually lighting a pellet grill is not just easy but also something you should probably know how to do just in case you ignitor rod goes bad. I will be honest with you in saying that if you own or plan on owning a pellet grill that you will more than likely have a ignitor rod go out at some point. Over the years i've owned 7 different pellet grills and I have had the rod go out in 5 of them so to me it's pretty normal for that to happen. So if you have a pellet grill that trips the GFCI or the hot rod doesn't heat up just go grab a torch and follow this video and you'll be cooking on your pellet grill in no time.BBQ Smoked Ham | Masterbuilt Gravity Series 560Mad Horse BBQ2021-12-17 | #smokedham #meater #bbq

In this video I show you how to cook a prime rib roast on a pellet grill! Now first things first....if you're after that perfect medium rare prime rib you're gonna want to pull the prime rib off once it hits and internal temperature of 120. But if you're after a medium prime rib this video is for you!
The pellet grill I use for this prime rib is my Pitts and Spitts Maverick 1250. I ran the pellet grill low for half the cook and finished it off hot for the 2nd half to get that nice crust. If you're wanting to cook a hot and fast prime rib I highly suggest that you let the roast sit out on the counter for at-least an hour before the cook to it cooks evenly.
If you'e nervous about cooking a prime rib roast on a pellet grill and you want to do 1 for Christmas go out and get yourself a smaller one and do a practice cook before the big day! But to be honest, cooking a prime rib roast is super simple to do and you really don't have a thing to worry about! Thanks for watching!

I've had quite a few people ask and I see comments quite frequently online about people having issues controlling the temperature on their drum smoker so I figured i'd show you some easy tips to make your drum smoking experience a little easier! Right off the bat I did have about 40mph winds throughout the video so I do apologize about the audio in some parts but I pretty much live in farm land so there isn't much to block the wind in my area lol.
One thing I failed to mention is that IMO it is easier to control your temperature in your drum if you use briquettes. So if you're new to drum smoking and want it to be a little bit easier you can go ahead and buy some briquettes. Another route you can go is buying a thermostatic controller for your drum and use that to regulate you temperature. I do own a cyber q cloud but haven't used it in years because I go tired of relying on it. My hope is that this video helps you all out a little bit. And remember this is just the way that I control my drum smoker. I know of quite a few people that adjust the chimney throughout the cook as well as the intakes and have great success with doing that....but BBQ is highly subjective and I like my chimney wide open.

I had a product sent to me called the 18" WSM Hanging System By Pit Barrel Cooker to try out and I have to say that I am not disappointed! Not only does this product work as advertised I really like the fact that the hanger is taller so you're able to keep the meat further away from the heat! So in this video I go over every part of this cook! From assembly and installation of the system, starting the grill, and prepping and cooking the chicken. If any of you have an 18" Weber Smokey Mountain and have wanted to hang meat I highly suggest you give this hanging system a shot, I will leave the link in the description. In this video I do a super simple chicken wing cook on my Gateway Drum Smoker! Not only is this recipe I use super simple but it only takes about 45 minutes to complete. If you don't have a gateway drum smoker or any kind of UDS/WSM/PBC just fire up any other grill and set it to 400. But I will say that this recipe does work the best on a gateway drum smoker because I cook the wings directly over coals and I do this cook hot and fast so it it gets that skin pretty crispy. Like I said in the video I used all Blue's Hog products for this cook and I will say that I will for sure do this again. Thanks for watching and see you in the next video!
In this video I fire up my gateway drum smoker and cook a smoked turkey! Smoked turkey is one of the easiest things to do and it is really underrated. I filled my gateway drum smoker up with blues hog lump charcoal and I did not use any wood for this cook. For this smoked turkey recipe I did a brine using Oakridge BBQ Game Changer for 20 hours and then I injected the breasts and this smoked turkey turned out absolutely fantastic. For those of you who may be intimidated to do a smoked turkey for thanksgiving I would highly suggest you go out a do a practice cook because there really isn't much to it. The gateway drum smoker ran flawlessly per usual and with winter approaching here in Southwest MN I am really looking forward too using it throughout the winter and seeing how it performs. I hope this smoked turkey recipe on my gateway drum smoker was helpful and if you have any questions what so ever be sure to leave a comment! Have a great week everybody and thanks for watching!!
PS...I am testing out a new audio system so let me know in the comments if anything sounds off or is too quiet/loud.
In this video I fire up my 55G gateway drum smoker and do some smoked turkey halves. I go over everything from brining, halving the turkey, seasoning, and how I run my drum. This cook was super simple to do and you end up significantly cutting your cook time down when you half the turkey. With Thanksgiving right around the corner I would highly suggest you give this smoked turkey halves recipe a shot. If you don't have a drum that is 100% ok, just fire up whatever grill you have and keep your temps right around 275F-300F. I hope this video helps you guys and girls out and as always have a great week and see you in the next video.

Blues Hog Raspberry Chipotle - blueshog.com/collections/sauce/products/raspberry-chipotle-bbq-sauce-19-ozOklahoma Joes Bronco Pro - Beer Can ChickenMad Horse BBQ2021-09-10 | In this video I fire up my Oklahoma Joe's Bronco Pro and cook up some Beer Can Chicken! This was a super easy cook and I even did it without the beer can chicken holders(because I couldn't find them). I used some tailgaters bbq party rub for the seasoning and used two 16oz cans of Busch Light Apple A.K.A BLAPPLE for the beer. The goal for this cook was to see if I could tasted the apple flavor in the chicken and I have to say that I could not. However these were some of the most juicy and tender chickens i've ever had so there is some benefit to doing beer can chicken. Well drinking beer is the best part but you get what i'm saying. One thing to mention is that I used my GrillGrates upside down to ensure that the chicken didn't fall over. If you have a drum style cooker I highly suggest you give this beer can chicken recipe a shot! Have a great week everybody! 🍻🍻

Is there anything better and easier than smoked pork butt on a pellet grill? For this cook I use my GMG DB Prime Plus and smoke a pork butt overnight and I do it low and slow! This cook was a ton of fun because it has been forever since i've gone low and slow on anything! The Blues Hog Pork Marinade that I used for an injection combined with the rubs I used gave this butt some really good texture and flavor! Even though this cook was low and slow it still turned out pretty dang good but I must say I do prefer hot and fast! Hope you all enjoyed this video and as always I really appreciate you watching!

The Kettle I use is a plum "DD" code which I actually picked up a few weeks prior to shooting this video. The Kettle was only a few houses down. This kettle I restore was kept outside and not used much at all but I do think that the previous owner may have planted flowers in it at some point. The restoration method I use is the same technique I use to do a deep cleaning of all my other kettle as well so if you have a kettle that needs a good cleaning you can use this method.
