Today's Whytchy Shout-out -
Menshikova School:
Soul Cakes: yields 12-15 2" cakes
* 2 C King Arthur's Whole Wheat Flour
* 1/4 tsp Rosemary, powdered
* 1/2 tsp Salt
* 1/2 C Milk
* 8 Tsp Unsalted Butter, softened
* 1/2 C Sugar
* 2 Egg Yolks (save the whites)
* 1/2 C Black Currants
1) pPeheat oven to 400°F.
2) Sift flour, rosemary, and salt in a bowl, and mix with a fork.
3) Cream butter and sugar in a separate bowl with a spoon. Add yolks and blend thoroughly with back of the spoon.
4) Add dry mixture and mix until fully incorporated. Mixture will be crumbly.
5) Slowly mix in milk, 1 tsp at a time, and blend thoroughly with a spoon. Stop when you acquire a soft dough.
6) Knead on top of a floured counter until smooth and only slightly sticky. Roll out to 1/2" thickness.
7) Using a 2" cookie/biscuit cutter, cut out cakes and lay on top of a floured baking sheet lined with parchment paper.
8) Decorate with currants and brush with egg whites.
9) Bake for 15 minutes or until slightly golden and shiny on top.
