In the Summer Gazpacho has to be hands down one of my favorite dinners... all summer long! ITs so good, can be finished many many ways. I now personally like to make a watermelon gazpacho and finish it off with a hot crumbled tofu or hot textured protein to give it a balance of hot and cold!
But either way the star of the show is the cold, refreshing super easy to make watermelon gazpacho!
