A lot of people say to me, “Did you ever imagine the brewery would be this successful?” My answer is, “Hell, yes. That was the _________ idea, right!” We gotta have a great beer, we have an incredible beer, we gotta have a great ____________ and we gotta have a lot of luck.
You know, I don’t know how many beers we’ve done since we started, but there must be hundreds and that’s an incredible testament to the creativity of Garret Oliver.
I went to school for film, got out and my best friends said, “Hey, I got a work _________ and I’m moving to London. You are moving to London?” I actually ended up working as a stage manager. I ______ University of London Union. I was also falling in love with beer. I discovered there was this _______ other world. And that beer was actually fascinating and that’s when I got back to the United States and found that we didn’t have beer yet and I started brewing at home, not because I was interested in making beer, I was brewing beer in other to have some beer.
What ________ is this? I would say we got some Summit Palacet Emeral. It’s nice! We are not doing, like ____________ group, trying to figure out the mind of America. We make stuff we like and we go out to sell it. Exactly!
When I got out of the college, I had a degree in English, so I went to work for newspapers. And I got in my head – ‘I wanted to cover the war’. So, I started studying Arabic and said, “I want to go to Middle East”. I was in Iran covering the revolution and the ________ crisis. I was abducted in Lebanon in 1980; very __________ incident. I moved to Cairo - I was sitting behind President Sadat, when he was assassinated.
When I was there, I met American diplomats who worked in Saudi Arabia, when you have this Islamic Law - no alcoholic beverages. And these guys were ______ home brewers. So I got into home brewing. So we decided to come back to New York and I was making beer at home serving to all my friends and neighbors and ________ put my downstairs neighbor Tom Potter, a young guy with a MBA. I persuaded him to quit his job and start the Brooklyn Brewery with me.
So, this is what we are testing, this winter season.

Garret went to work for Manhattan Brewery, so I told him, “When we build out brewery in Williamsburg, I want you to be part of it”. You know, nice and dry. It’s beautiful.
I think what we are doing now is much more __________ than what we were doing seven or eight years ago. We had no idea how to do the stuff that we are doing now. All the bottles of fermentation and stuff, all the barrel and __________ and stuff.
This going to hold about 2,000 barrels at once. Beer is much more ____________ in many ways than wine is. First 10 years were very difficult. We were functionally bankrupted for many of those years. But at that time you know, 1984, 1985, all the beer in America was controlled by the big three – Bud, Coors and Miller. The big breweries were getting bigger and regional breweries, these smaller breweries were been ____________ business. When I told Tom, “We should start brewing in Brooklyn”, and he said, “Are you kidding me?” He had studied the beer industry. He said, “How can we compete with the big guys in this market?” My answer was,” We are not going to compete with the big guys, we are going to compete with the imports”. We weren’t drinking American ___________________ beer, we were drinking imported beer.
