★ RECIPES ★
~~~ Zesty Cabbage Salad ~~~
1 sm-med size cabbage, finely shredded
2 apples-chopped
Juice of 2 lemons
2 cloves garlic-crushed
1 1/2 TBS olive oil
1/2 tsp salt
1/2 dried oregano
3 TBS finely chopped cilantro
1/4 cup sunflower seeds
Combine ingredients. Adjust seasonings and ratios to your liking!
~~~ Indian Style Lentils (Dal) ~~~
1 1/2 cups lentils (brown, red or green)
3-4 cups water
2 tsp turmeric
1/2 tsp black pepper
2 cloves garlic- minced
1 onion-chopped
1/4 cup ghee or coconut oil
1 1/2 tsp cumin seeds
1 jalepeno or chile pepper seeded and chopped
Salt to taste
Sort and rinse lentils- set aside. Heat oil over med-low heat. Add cumin seeds. When they make a popping sound in the oil, add the onion. Cook onion on low heat until translucent. Add garlic, pepper and turmeric. Add lentils and 3-4 cups of water. Simmer until lentils are fully cooked. The longer it cooks, the thicker it will become. Add salt and adjust seasoning as needed. Serve over rice with chopped cilantro. Enjoy!
