I forgot my cast iron pan at home but, more importantly, I forgot to squeeze the water out of the grated potatoes and to heat the oil in the pan before adding the potatoes. They turned out fine because they still had to cook on the bottom of the frittata, but they probably would have been better if I'd have taken these two steps.
This ended up feeding 5 us, including seconds for three of us. I didn't use a recipe but our frittata included:
