This fruit has natural latex and it is very sticky. Here’s how to remove it and how to cut up a whole jackfruit. Make sure you are wearing gloves because the white latex will start seeping through the pours once it’s cut. You can put natural oil on your knife and hands to prevent the latex from sticking. Cut it into large chunks and make sure to remove the tough outer layer. Inside, you will find the fibrous layers, the fruit, and the seeds. Cut the middle core out and toss then place all the fruit in a large water bowl to prevent it from browning.

The Lao community is small, so when I heard about Chef Noi’s passing, I was in shock. She had just released her cookbook late last year, and I was planning to celebrate her and her incredible work during this year’s Lao Foodie Tour.
Being around Noi was always a joy. She was constantly teaching, always generous with her time and her kitchen. A true pioneer, she dedicated herself to sharing the beauty of Lao food with the world and her cookbook is now a lasting gift to the culinary world.

This is a sauce that never expires. I think jeow som is one of those sauces that never expire because it has a high concentration of fish sauce which means it has a lot of salt in there. Since it does have fresh herbs in this version, for the freshest tasting sauce, it will be best to enjoy within 3 weeks. After that amount of days, toss it if you see the herbs turning dark and mushy, it smells unpleasant, and you see mold or strange floating particles.

I used a colander to put my filling in so the liquid can drip out before wrapping it. Excess moisture can weaken the wrappers, causing them to tear before they even hit the oil. When I was making or lam with duck, I couldn’t stop thinking about memories of my childhood on the farms in Wisconsin. Those days were filled with mixed feelings, both love and reluctance, as I had to use my imagination to find joy during long hours outdoors.
Cooking this dish reminded me of my parents' tireless work, both in the fields and at home. I especially think of Paw, who studied hard for his citizenship so that I could have mine, a sacrifice that shaped my future.

In Part 7, we focus on jeow som, a beloved Lao sour dipping sauce made with bird's eye chili peppers, garlic, lime juice, fish sauce, sugar, and cilantro. This versatile sauce complements a variety of dishes, including sticky rice, steak, and seafood. Its popularity is so widespread that people often bring it along when visiting friends or even when dining out at restaurants. This sauce, like many others in Lao cuisine, is traditionally enjoyed with sticky rice while eating at a phakhao—a low-standing table. Sticky rice is placed at the center, surrounded by an array of salads, dips, stews, and fresh herbs. Guests take turns grabbing sticky rice with their hands, using it as a vehicle to scoop up and enjoy the other dishes. Eating with your hands holds deep cultural significance in Lao traditions. It fosters an intimate connection with the food and reflects the collectivistic values of Lao culture, emphasizing support, sharing, and togetherness. In Part 6, we focus on khanom nap, a beloved Lao dessert made from sticky rice and coconut, often wrapped in banana leaves to form small triangles. However, making khanom nap can be quite involved. Preparing and cleaning the banana leaves requires teamwork, and shaping the perfect triangles feels like an edible art project. Like many Lao dishes, this recipe has been passed down orally, as part of a larger tradition where communities teach and learn through participation in celebrations, storytelling, and communal cooking. It’s an honor to carry on this tradition, having learned variations from Lao families around the world, each with their own unique spin. I’m excited to continue sharing these recipes through my live cooking sessions with Laos in the House in Philadelphia. 1 large shallots, thinly sliced

1 tablespoon small dried shrimp (soaked in water for 5 mins then drain)
8 ounces pork tenderloin, cut into matchsticks
⅓ cup soy sauce
1 tablespoon white sugar
2 teaspoon black vinegar
3 tbsp oyster sauce
1 large carrot, peeled and cut into matchsticks
1/2 cup sliced bamboo, cut into matchsticks

How to make homemade spam (Lao style) and then turn it into a musubi using @jeanelleats new MyMusubi mold.
If you could create your own SPAM flavor, what would it be? Mine would be a Lao-inspired version, with flavors similar to the popular Lao sausages. This inspired me to make a Lao Musubi, using sticky rice as the base. For the "Lao SPAM," I mixed ground pork with aromatics, padaek, and Lao Spices BBQ blend, then processed it into a sticky consistency. Using a musubi mold created by Jeanelle Eats, I shaped the mixture. I love the mold's simple yet thoughtful design, with a sturdy, colorful press, a see-through mold, and a sharp base for cutting.
After wrapping the mixture in foil, I steamed it, then sliced it into thin strips and lightly fried them. Assembling the musubi was the easiest and most fun part—the mold made it perfect for pressing the sticky rice, spreading on spicy jeow bong, and topping it with the Lao SPAM. Girl, listen up. Step 1 if you’re gonna call a dish by its original name, make sure it actually includes most of the ingredients. Over half of what you’re using doesn’t belong in nam Khao. It looks more like a whatever asian ingredients I have in my pantry salad. Step 2 if you want to go viral, let’s not grab on to the cultural dishes to make yourself appear cultured. Girl Its giving desperate. Step 3 Give credit where it's due—to the country, the people, and even better, the chef or creator who inspired you. We know you didn't just wake up and magically think of nam khao. Girl LOL. And step 4 If you're going to showcase a cultural dish, why not make it authentically, or just make whatever you want without sharing it publicly? Burmese food is not talked about enough so I got a whole table full of Burmese dishes I’ve never had before. I was told about this Burmese food event that sold many traditional and uncommon Burmese foods so I had to check it out. As I entered the event, it reminded me a lot of the Lao community gatherings with aunties selling the most delicious foods that you can only find at the temple. One of the unique dishes was this salad made from crumbling up shrimp vegetable fritters and tossing the salad with a red dressing. I also got the popular tofu salad and a Burmese pizza covered with a type of bean and herbs. My favorite dish was nan gyi thoke and its a thick noodle salad mixed with chicken curry, chili oil, chickpea flour, herbs, and a squeeze of lemon. What are your favorite Burmese dishes?

Lao Food is not talked about enough! In part 5, let's explore the delicious Lao sausage (sai oua) and how this dish, along with other traditional Lao foods, arrived in the US. This chapter of history is dark, as it is closely tied to the Vietnam War. Concurrently, the American Secret War involved bombing campaigns that dropped over 2.5 million tons of ordnance on Laos from 1964 to 1973. My family is among the refugee families that fled to the United States. To learn more about this history and discover ways to help, check out the organizations listed on my website or here:
Legacies of War : an educational and advocacy organization working to address the on-going impact of the American wars in Laos, Cambodia, and Vietnam.
Cope Laos : their mission is to help people with mobility-related disabilities move on by supporting access to physical rehabilitation services in Laos. This organization was in part due to the increasing number of casualties from unexploded ordnance from bombs dropped on Laos during the Secret War.
MAG Laos : MAG has worked in Laos since 1994. Working across Xieng Khouang and Khammouane provinces, they clear community land from unexploded bombs.
