Ingredients: - 3 medium Eggplant/Aubergines - 1 handful chopped parsley - 1 handful chopped rocket - Zest of 1 lemon - Juice of 1/2 a lemon - 2 cloves of garlic - 2 tbsp chopped capers - 1 tbsp tahini - Salt and pepper to taste - 1 cup extra virgin olive oil
Method: Place the aubergines over an open flame and char the skin until black. The aubergine will be cooked, with a creamy texture and smokey aroma Place in a covered bowl for 10-15 minutes Meanwhile, chop the rocket, parsley, capers, and garlic Wash the burnt skin off the aubergines and roughly chop Place everything in a food processor and pulse till creamy but with a chunky texture.

Brine the beef Rib Cage - 12 hours - 10 liters water - 500g salt - 500g sugar - 100g citric acid Place in the Stoker (or any other slow cooking device big enough) for 5 hours at approximately 170degC Remove ribs and check they are cooked. Portion into individual ribs. Glaze with honey and blow torch, or put under a very hot grill until caramelized. Sprinkle with sesame seeds. Serve with your choice of sauce. In this case, I used a herb salmoriglio (parsley, basil, mint with olive oil, and lemon) and a roasted chili sauce.

Recipe: Wash the chillis, remove the stems but keep the seeds Roughy chop the chillis Add all the ingredients to a food processor and pulse, then blitz on the highest speed Once nicely chopped transfer to a blender and blend to a smooth paste. Put in a clean sealed jar and keep in the fridge. This will last up to 1 month.

Ingredients:
For the Pigs Ears 4 large pigs ears cleaned and hair removed 1 leek 1 large red onion 4 carrots 1 tbsp star anise 1 tbsp fennel seed 4 tbsp seasoned all-purpose flour 200gms crushed cornflakes 1 egg 100ml milk Oil to deep fry
For the Dipping Sauce 4 tbsp rice wine vinegar 2tbsp sesame oil 1/2 tablespoon fish sauce 1/2 tbsp soy sauce 2tbsp honey pinch pepper pinch sesame seeds 1 handful fresh coriander 2 radish finely chopped juice of 1 lime Method:
Add 1 liter of water to a pressure cooker Throw in the leeks, onions, carrots, fennel seed, and star anise Remove the base of the ear, and place the lobes in the pressure cooker. Bring the pressure cooker up to pressure and cook for 1 hour. If you don't have. pressure cooker, simply boiler for 2-3 hours, or until the ears are thoroughly cooked To make the sauce, simply combine all the ingredients together in a bowl. Heat your oil. Remove the pig's ears from the stock (keep the stock for later use), and slice them into 1/2cm wide slices. Combine your milk and eggs to create an egg wash. Crush the cornflakes roughly by hand. Do not turn them into powder. They should retain some of their texture. Drop the pig's ears in the seasoned flour, then the egg wash, and then finally coat thoroughly in cornflakes. Drop into the hot oil and fry for 1-2minutes until golden brown. Serve with the dipping sauce

50gms butter 2 tbsp whole cumin seeds 2 tsp turmeric 1 red onion (finely chopped) 1 tbsp crushed/grated garlic 2 tbsp crushed/grated ginger 1 tsp green chili 1kg chicken hearts Zest of 1 lemon 1 handful chopped fresh coriander salt to taste
Method: Melt the butter and add the cumin seeds. Toast the cumin in the butter for 2 minutes Add the onion and soften Add the ginger and green chili Caramelize the onion and ginger When the onion starts to brown, add the garlic As soon as the garlic begins to brown, throw in the chicken hearts Cook for 15 minutes Now add the turmeric Cook for a further 5-10 minutes Season with salt and add lemon zest Add the fresh coriander and serve
