The purple color of the cauliflower is due to the presence of a subtype of flavonoid compounds called anthocyanins, which may help to regulate your blood lipid and sugar levels and body weight, as well as help to lower your cancer risk. Additionally, purple cauliflower contains a compound called glucoraphanin, which is also found in common green broccoli. In your body, glucoraphanin can be converted to compounds with anticancer properties.
Simply toss the cauliflower and a sliced red onion with avocado oil, garlic powder and salt. Roast on a sheet pan in a very hot oven, about 450℉ for 15 minutes. We encourage you to think outside the box when incorporating these waffles into your meal plans. They are particularly delicious when used along with savory ingredients, such as a replacement for a burger bun or hotdog roll. They hold fat amazingly well and do not feel greasy, even at their high-fat ratio (greater than 4:1). Feel free to use another fat besides butter. Coconut oil, bacon fat, or a combination of fats will all work well.
