Asian Boil Procedure: - Combine 3 gallons of water with bay leaves, ginger, garlic, lemon juice, lemon rinds, green onions, soy sauce, sugar, crushed red pepper, salt & pepper, and bring to a boil over high heat. - Season the shrimp with the 5 spice and toss into the boil. - Cook for 3-4 minutes, or when the water comes back to a boil. - Turn off heat. - Let shrimp sit for 2 min. - Remove lemon rinds from water, then strain shrimp. - Set shrimp on platter to cool.

Stir Fry Procedure: - Mix together the vegetable oil and sesame oil. - In small mixing bowl, mix together the corn starch, garlic, ginger, and half the oil mix until the corn starch is dissolved. - In large mixing bowl, mix together broccoli, snap pees, carrots, baby corn, red peppers, and starch and oil mixture until vegetables are lightly coated. - Heat the remaining oil mix in a wok, over medium heat. - Cook vegetables in oil for about 2 minutes, stirring often to prevent burning. - Stir in salt, soy sauce, and lastly shrimp. - Continue to cook until vegetables are tender but still crisp. - Garnish with sesame seeds and green onions and remove from heat. - Serve & enjoy!

Pizza Dough: Makes 2 dough balls 1/2 cup mineral water 1 1/2 tsp. yeast 2 tsp. honey 2 T. olive oil 1 1/2 cups bread flour 2 tsp. coarse salt
- Whisk warm mineral water and yeast together in a mixing bowl, and follow that by mixing in the honey and olive oil. - Allow yeast mixture to rest for 10 minutes so that the yeast activates. - In a separate mixing bowl, blend flour and salt together, and form a well in the center of the mixture. - After yeast mixture has rested 10 minutes, pour into the well in the center of the flour mixture. - Gradually spin in the flour mixture so that it combines with the yeast mixture to form dough. - If the mixture is too dry, add a splash of mineral water so that it forms a dough consistency. - Spread some flour on your work surface, and begin to knead the dough for 8-10 minutes, or until it becomes elastic. - Once kneaded, coat with olive oil and place in a bowl to rest. - Cover the bowl with a damp towel and allow the dough to double in size, this should take about 30 minutes. - Once risen, place the dough ball on your floured work surface and cut it into two smaller dough balls. - If not using immediately, place in the fridge for up to 2 days.
- Preheat your Blaze Professional grill on high heat with the lid closed. - Allow Ribeye steak to come to room temperature before grilling for best sear. - Coat steak in coconut oil, season to taste with kosher salt & black pepper. - Sear steak for about 2 minutes per side with the lid of the grill open. - Remove steak from grill, tent with foil & allow it to rest. - Cut onion into rings, grill until caramelized. - Chop 3 grilled onion rings to add in the red wine sauce, reserve the rest for topping pizza. • In a pot over medium heat, stir in salt & sugar until completely dissolved. • Add remaining brine ingredients, cover & allow to steep for at least 20 minutes. • Add a layer of ice to an ice chest large enough to soak pig in brine. • Pour brine over ice to cool before adding pig. • Place pig in ice chest to brine. • Submerge pig completely in cool water & ice. • Close ice chest & allow pig to brine for 4-12 hours • While waiting on pig to brine, pre grill vegetables that will be in the drip pan while the pig finishes cooking. • Rough chop grilled vegetables & set aside in fridge for later. • Set up your Blaze Professional 44 inch grill for cooking the pig by removing the cooking grids. • Remove heat zone separators & middle two flame tamers. Place drip pan over the center two burners, these will not be turned on during the cook. • Place two smoker boxes over both the far left and right burners. • Fill smoker boxes with cherry & pecan wood chips. • After your pig is finished brining, remove from brine & pat dry. • Score pig skin & coat with chilled bacon fat. • Season the inside of the pig with creole seasoning & kosher salt. • Attach U bolt to where the middle of the pig will be on the rotisserie rod • Run U bolt from the inside of the ribs of the pig to the outside of the back, tighten wing nuts to secure to the rotisserie rod. • Use a large needle & kitchen twine to sew up pig belly • Secure the front and back of the pig well with the rotisserie forks, tighten with pliers. • Truss legs & snout of the pig to rotisserie rod. • Turn far left & right burners to medium low, heating ambient temperature of the grill to 350 degrees F. • Add red wine, beef broth, bacon fat & herb sprigs to drip pan. • Place pig on rotisserie of grill & roast with the lid closed. • Baste every 30 minutes with liquid from drip pan. • Once pig has been roasting for about an hour and a half, turn far left and right burners to low. • Turn on rear infrared burner & close the grill lid to allow the pig skin to crisp. • Baste with pure bacon fat for the remainder of the cook every 30 minutes. • After about an hour and a half in front of the infrared burner, your pig might be done roasting. • Turn off grill burners & rotisserie motors, check internal temperature. • If the pig is golden brown & the internal temperature has reached 160 degrees F in the thickest portion of the meat, it is done. • Close lid of the grill, leave burners off & let pig rest for 30 minutes before plating.

For Glaze: Unsalted Butter ¾ Stick Cane Syrup ½ Cup Jack Daniels 1 ¼ Cup
For Drip Pan: Water Remainder Oranges 3 EA Whiskey ½ Cup
Procedure: • In a mixing bowl combine all dry rub ingredients, mix well • Remove membrane from rib racks • Coat liberally in seasoning blend • Add whiskey, oranges, rosemary to water pan, fill remainder of the way with water • Fill Blaze Kamado with charcoal up to the middle grate, add 5 chunks of cherry wood • Light 2 handfulls of coal in a chimney starter until glowing red, pour over unlit charcoal in kamado. • Place in middle grate, heat deflector stone, and put water pan on top of heat deflector • Place in top cooking grate • Put ribs in standing rib rack, leaving room in between the racks to allow for space for the smoke to pass through, and make it easier to glaze later. • Allow Blaze Kamado to preheat and stabalize at 225 degrees F • While ribs smoke for 3.5 hours, it is a good time to prep the glaze • In a sauce pan over medium heat, reduce whiskey by half • Whisk in cane syrup until incorporated • Add diced butter, remove glaze from heat when butter is almost completely melted, keep whisking to incorporate. • After ribs have smoked for 3.5 hours, baste well with glaze, close the lid and let them go for another 30 minutes. • At 4 hours, baste a second time, close lid, raise kamado’s heat to 325 to carmelize glaze. • At 4.5 hours, check on your ribs, if they are tender, they are ready! • Remove from grill, tent with foil, and allow to rest for 5 minutes. • Slice, serve, and enjoy!

Servings: 8 Each (5 inch pancakes) Ingredients - Dry Ingredients All Purpose Flour 1 ¼ Cups Coarse Salt ½ tsp or (¼ tsp of table salt) Baking Soda ½ tsp Baking Powder 2 tsp Granulated Sugar 2 TB Wet Ingredients Buttermilk 1 ½ Cups Butter, Melted & Cooled 2 TB Vanilla Extract 1 ½ tsp Egg yolks 2 Each Egg Whites (Whipped, optional) 2 Each Honey 2 TB
Procedure - - Begin by adding the all purpose flour to a large mixing bowl. - To the flour, add the salt, baking soda, baking powder, and granulated sugar, then whisk to evenly blend. - In a separate bowl, blend together the buttermilk, melted butter, vanilla extract, egg yolks, and honey. Pour into the dry ingredients and whisk until just barely blended together (don't overwork the batter). - For the lightest and fluffiest pancakes possible, separately whip the egg whites until they are thick and airy and lightly fold them into the batter. - Preheat your griddle or a large cast iron skillet, melt a little butter on the surface to prevent sticking and pour out about ¾ cup of batter per pancake. - Cook until the edges begin to dry slightly and the center has plenty of popped air bubbles, then turn each pancake to the second side and allow them to brown. - While the second side browns, I like to place a pat of butter on top of each pancake.
