I don't know exactly why I kept referring to these links as "brats"... My mistake. "Beachy Peachy" BBQ sauce from the Spicy Tavern in Phoenix, Az was a good base for this sauce, IMO. We're rocking some Tango Spice Cajun Rub (last of it's kind, I'm told) all over these "tails". They were outstandingly delicious and, of course, they vanished in a matter of minutes after they hit the plate.

Afterward, they were seared over extremely high heat & flame for that one of a kind flavor that can only be achieved with a cut containing a high fat content. These 2 Ribeye steaks certainly fit THAT criteria. They aren't Wagyu, but they were almost as close as you can get to Wagyu.

I was surprised that, despite seeing that just about everything else (in the meat isle at the store) had vanished, there sat 3 or 4 Picanhas just waiting to be bought. Sort of like finding buried treasure during these lean times. Some compare Pacanha to Ribeye in terms of flavor and tenderness, and for good reason. If prepared correctly, Picanha is at least, just as good as Ribeye. Leave that fat cap on and give it a good, flamin' hot sear after a low n slow. You won't be disappointed!
