Ingredients:
1 pound (450g) Broccoli, cut into chunks
4 tablespoons (60g) Butter
1 Onion, chopped
2-3 Garlic cloves, crushed
4 tablespoons (30g) Flour
3 cups (720ml) Chicken/vegetable stock
Salt to taste
Pepper to taste
1 teaspoon Paprika
1 Grated carrot, large
2 cups (480ml) Half&half or whole milk
8oz (225g) Cheddar cheese, grated
Directions:
1. In a large pot melt the butter, add chopped onion and sauté for 4-5 minutes, add the garlic and sauté for 1 minute.
2. Add the flour cook, while whisking, for about 1-2 minutes, until turns golden. Pour in the stock. Then add the chopped broccoli, grated carrot, salt, pepper and paprika.
3. Bring to a boil, then reduce the heat to low and simmer for 15 minutes.
4. Add the cream, cheddar cheese and stir. Cook for 1-2 minutes.
5. Serve!

3 cups (675g) Cream cheese
2¼ (675g) Dulce de leche
Coffee/milk or coffe+milk
Chocolate shavings (optional)
Directions:
1. In a large bowl mix dulce de leche with cream cheese.
2. I a bowl prepare some milk or coffee or coffee mixed with milk (for dipping the biscuits).
3. Dip each biscuit into the liquid for 1 second. Arrange a layer of dipped biscuits in the bottom of a 8-inch (20X20cm) square baking pan. Then spread a layer of cream. Repeat 4 more times (5 total layers). The last layer should be biscuit layer.
4. Cover and refrigerate for 6 hours or overnight. Reserve some cream for decoration.
5. Take the cake out of the fridge, release from the pan and invert into a serving dish, spread a layer of cream. Decorate the cake as desired with the leftover cream. Sprinkle some chocolate shaving in the middle of the cake (optional).
6. Serve!

Ingredients:
4 cups (500g) all-purpose Flour
1 tablespoon (10g) Instant dry yeast
1/4 cup (60ml) Vegetable oil
1 egg
1/4 cup (50g) Sugar
1 teaspoon (6g) salt
1 medium-large Beetroot (200-250g)
1/2 cup (120ml) water
1 Egg + 1 tbsp oil for brushing
Sesame seeds
Directions:
1. Peel beets and place in the food processor or blender, add 1/2 cup water and process until smooth. Set aside.
2. In a bowl of a stand mixer or in a large bowl, place flour, yeast, sugar, salt and mix. Make a well in the center and add egg, oil and beet puree. Knead the dough on low speed. If the dough too dry and 1-2 tablespoons water, if the dough too sticky, add 1-2 tablespoons flour. knead the dough for 6-8 minutes. The dough should be soft and smooth.
3. Place the dough in an oiled bowl, cover with plastic wrap, place in a warm place and let rise for 1 hour. Until doubled in size.
4. Divide the dough into 4 equal pieces. Roll each piece of dough into a long rope roughly 1-inch thick. If the ropes shrink as you try to roll them, let them rest for 5 minutes to relax the gluten and then try again.
5. Braid the challah as described in the video. Place braid challah on a baking tray lined with parchment paper. Cover and let rise for 40-60 minutes
6. Preheat oven to 360F (180C).
7. Gently brush with beaten egg and oil. Sprinkle sesame seeds (optional).
8.Bake for 25-30 minutes, until golden brown on the edges. Let cool for at least 30 minutes.

For the salad:
8 ounce (225g) Halloumi cheese
50-60g Baby spinach leaves
10 Cherry tomatoes, halved
1 cucumber, sliced
1/2 Red onion, sliced
1 avocado, cut into wedges (optional)
Pomegranate seeds (optional)
2-3 tablespoons Sliced almonds
For the dressing:
3 tablespoons Olive oil
1 tablespoon Lemon juice
2 tablespoons Balsamic vinegar
1 teaspoon Honey
Salt to taste
Pepper to taste
1 teaspoon Dried oregano
2 tablespoons Mint leaves, chopped
Directions:
1. Prepare the veggies: chop and slice all the veggies and place in a large bowl.
2. Prepare the dressing: place all dressing ingredients in a jar, seal and shake until combined.
3. Pour the dressing over the salad and mix until combined.
4. Grill the cheese: slice the halloumi into 1/2 cm thick slices. Heat a pan with 1 tablespoon of olive oil and sear the cheese for 1 minute on each side or until golden.
5. Add seared halloumi to the salad, add some pomegranate seeds and serve.

RECIPE
Ingredients:
1 cup (90g) Desiccated coconut
4 tablespoons Maple syrup
Directions:
1. Preheat oven to 350F (180C), grease a muffin tray and set aside.
2. In a large bowl mix desiccated coconut and maple syrup. Mix until well combined.
3. Spoon about 1 tablespoon of the mixture into the bottom of the muffin try. Lightly press to flatten the mixture.
4. Bake for 8-10 minutes or until golden. Allow to cool, then release from the pan.

For the filling:
300g Ground beef/lamb
2 Onions, chopped
1/2 tablespoon Garam masala/Baharat
1/4 cup Ground almonds

Directions:
1. Preheat oven to 180C (350F). Prepare large round baking dish and set aside.
2. Prepare the filling: In a medium sized pan heat olive oil. Add chopped onions and sauté until golden, about 10 minutes.
3. Add the meat and cook on high heat, while breaking it apart for about 5 minutes. Add the spices, almonds, zaatar and mix. Transfer to a bowl and allow to cool.
4. Prepare the figs: cut the top of the figs, then using a spoon, scoop out the flesh of the figs. Place all the flesh in a bowl for later.
5. Take about 2-3 tablespoons of the flesh and add the meat mixture and mix. Fill each fig with the meat mixture.
6. Arrange the figs in the baking pan and cover the fig "lid".
7. Prepare the sauce: place all sauce ingredients in a bowl, add the fig flesh and mix until combined.
8. Pour over the figs.
9. Cover the dish with foil and bake for 30 minutes. After 30 minutes remove the foil and bake for another 15 minutes.

Makes 4 large glasses or 6 medium size glasses
Ingredients:
For the vanilla panna cotta:
6g Gelatin powder
30ml Water/milk
1 cup (240ml) Milk
1 cup (240ml) Heavy cream
50g Sugar
1 teaspoon Vanilla bean paste
For the mango panna cotta:
4 Mangos, large (about 650-700g mango puree)
5g Gelatin powder
25ml Water/milk
Directions:
1. Make vanilla panna cotta: in a small bowl whisk gelatin and water. Set aside for 10-15 minutes.
2. In a medium saucepan, heat the heavy cream, milk, and sugar over medium-low heat, until sugar has dissolved, (Do not boil). Remove from heat, add vanilla bean paste and stir. Stir in gelatin and immediately whisk until smooth and dissolved. Pass through a sieve.
3. Set the glasses on an angle in a small container or a muffin tin. If the glasses slide, place a small towel underneath to help stabilize. Pour the mixture. Refrigerate for at least 4 hours.
4. Make mango panna cotta: in a small bowl whisk gelatin and water. Set aside for 10-15 minutes.
5. Dice the mango, place in a food processor and process until smooth.
6. Melt the gelatin for 15 seconds in the microwave. Then, take 1 tablespoon of the mango puree, add to melted gelatin and stir until combined. Pour back into the mango puree and mix well.
7. Pour the mango mixture into the glasses.
8. Cover and refrigerate for at least 3 hours.
Notes:
• If you prefer a less jelly-like result, add less gelatin to the mango puree

Directions:
1. Preheat oven to 350F (180C). Line a baking tray with parchment paper and set aside.
2. Place all ingredients in a mixing bowl and mix until well combined.
3. Using a cookie cutter or a small cake ring shape the cookies: place the ring on the tray, then spoon into the ring 2-3 tablespoons of the granola mixture. Press the mixture with the back of the spoon.
4. Bake for 20-25 minutes or until golden. Note: keep an eye while baking, the baking time may change from oven to oven.
Note 2: With this method, the cookies may spread, so you can use the following method:
5. Other way to shape the cookies: spoon 2-3 tablespoons of the granola mixture on the baking tray, then cover the batter with aluminum muffin cups or any other tool. This will help prevent the cookies from spreading. Note: bake for 20-25 minutes, until golden. At the last 5 minutes, remove muffin cups and keep baking until golden.

RECIPE
Ingredients:
For the chicken:
2 tablespoons Oil
1 teaspoon Crushed coriander
2 teaspoons Paprika
Salt to taste

500g Chicken thighs/legs -with skin or without/with bone or without
2 Bay leaves
4 cups (1L) Water – or more, check how much water is needed for the rice
5 Cardamom pods
1/2 tablespoon Turmeric
1 Cinnamon stick
For the vegetables:
2 Eggplants, sliced lengthwise
2 Potatoes, sliced
2 cups (330g) Basmati rice, washed
Chicken stock (from the cooking)
For serving:
Chopped parsley
Toasted almonds
Directions:
1. Make the chicken for the maqluba: In a bowl mix oil and spices. Add chicken and mix until coated.
2. In a pot heat the oil, add chopped onion and cook until translucent. Add the chicken and cook for 2-3 minutes from each side. Note: traditionally Maqluba is made with BONE-IN chicken with skin. I prefer boneless and skinless chicken. If you prefer the traditional way, use bone in chicken thighs and legs and keep the same process.
3. Add bay leaves, water, turmeric, cinnamon stick, cardamom pods and cook for 15 minutes. Note: If you are using Bone-in chicken, cook for 20-25 minutes.
4. Meanwhile prepare the vegetables: deep fry the potatoes, then deep fry the eggplants. Drian on paper towels.
5. Assembly the maqluba: brush a bit oil at the bottom of a large and wide pot, layer eggplant slices and potatoes as shown in the video (make sure layer them at the bottom and the side of the pot). Note: you also can use other vegetables to make maqluba, such as: carrots, cauliflower and more. Then place the chicken, then spread evenly the rice.
6. Pour in the stock. Bring to a boil, then reduce the heat to low, cover and cook for 20-25 minutes.
7. Once cooked, turn the heat off and allow to cool slightly. Then, place a very large serving dish or a plate on top of the pot, then, carefully invert the pot onto the dish in one smooth motion. Tap the bottom of the pot to make sure that everything is separated.
8. Chop some parsley and fry the nuts and sprinkle them over the maqluba.

3/4 cup (180g) Mascarpone
1 can (400g/14oz) Sweetened condensed milk
1 teaspoon Vanilla bean paste/extract
6-8 Lady fingers
1-2 tablespoons Instant coffee
1 cup (240ml) hot water/milk
Cocoa powder for serving
Directions:
1. In a bowl, place instant coffee, add hot water/milk and mix. Set aside to cool.
2. Place heavy cream and mascarpone cheese in a bowl, whip to stiff peaks. Add condensed milk, vanilla bean paste and mix until combined.
3. Break each lady finger into 3-4 pieces and dip in the coffee.
4. Place soaked biscuits to the ice cream batter and gently fold.
5. Transfer the batter into a freezer safe dish and freeze for at least 6 hours or overnight.
6. Before serving allow to sit in room temperature for about 5-10 minutes.

Ingredients:
For the crust:
200g Graham crackers/biscuits
6 tablespoons (90g) Malted butter
1 tablespoon Milk
For the cheesecake:
3½ cups (800g) Cream cheese
1 cup (200g) Sugar
3/4 cup (180g) Mango Puree
4 Eggs
1 teaspoon Vanilla extract
1/4 cup (60ml) Heavy cream
1/2 cup (115g) Sour cream
Orange/lemon zest
1½ tablespoons Cornstarch
For topping:
2 Mangos, cubed
1 tablespoon Sugar
1½ tablespoons Cornstarch
1/4 cup (60ml) Water
Directions:
1. Make the crust: Preheat oven to 325°F (160°C).
2. In a food processor crush cookies into fine crumbs. Add melted butter, milk and pulse until combined. Press into bottom of 9-inch (23cm) springform pan. Bake for 7-8 minutes. Set aside while making the filling.
3. Make the filling: In a large bowl beat cream cheese and sugar until smooth. Add mango puree and whisk until smooth. Add eggs, one at the time, beating to combine after each addition. Do not over beat. Add vanilla extract, sour cream, heavy cream, salt and beat until smooth. Add cornstarch and beat until incorporated. Do not over beat.
4. Bake the cheesecake: Place the pan on a large piece of foil, and fold the foil up the sides of the pan. Pour the filling over the crust, place the pan inside a roasting pan. Fill the roasting pan with enough hot water to go halfway up the sides of the springform pan. Bake for 45-55 minutes or until the edge is set but the center jiggles slightly. Turn off the heat and leave it another hour in the oven. Let cool to room temperature for one hour, then refrigerate for at least 4 hours or overnight.
5. Make the topping: place all ingredients into a saucepan and cook until thickens, about 4-5 minutes. Turn the heat off and allow to cool.
6. Spread the topping over the cheesecake. Refrigerate until ready to serve.

For the hazelnut butter:
400g Hazelnuts, raw
For the ice cream:
2 cups (480ml) Heavy cream, cold
1 can (400g) Sweetened condensed milk
240g Hazelnut butter
1/2 cup (60g) Cocoa powder
Directions:
1. Make hazelnut butter: Preheat oven to 350F (175C).
2. Spread hazelnuts on a baking tray and roast for 8-10 minutes. Until slightly browned and the skins are blistered a little.
3. Allow to cool for 3-4 minutes on the tray. Wrap the hazelnuts in a kitchen towel and rub vigorously to remove as much loose skin as possible. Remove skinned hazelnuts and repeat the process with unskinned hazelnuts. Note: it's pretty hard to remove all the skin, try to remove as much as possible but it's fine if you left with some skin on. Let cool completely.
4. Place hazelnuts into the blender, add salt (optional) and blend until smooth and creamy, pausing to scrape down the sides as necessary. Note: At the beginning it seems like it’s not blending well, but you have to be patient. First it will be crumbly, then it will form a paste, then it will be smooth and creamy. All the process takes about 5-15 minutes (depending on your blender/food processor).
5. Make the ice cream: In a large bowl, place cold heavy cream. Whip to stiff peaks. Add sweetened condensed milk, 1 cup (240g) hazelnut butter/paste and whisk on low speed until incorporated. Chop 1/4 of roasted hazelnuts and add to the ice cream, gently fold. This step is optional.
6. Transfer into a freezer-safe container and freeze for at least 6 hours or overnight.

3 Ripe Bananas (~300g)
200g Plain Yoghurt (coconut for vegan)
1/4 cup + 2 tablespoons (75g) Sugar
2/3 cup (60g) Rolled oats *or oat flour
1/2 cup (60g) Cocoa Powder
60g Dark Chocolate + 20g for topping
40g Walnuts + 20g for topping
Directions:
1. Preheat your oven to 180°C (350°F) and line a baking tin (20cm x 20cm) with parchment paper.
2. Mash your bananas with a fork then add in your yoghurt and sugar. Mix until combined.
3. Add in your oat flour and cocoa powder and mix until combined. Fold in your chopped chocolate and walnuts.
4. Transfer the brownie batter into your baking tin and add the rest of your chocolate and walnuts.
5. Bake for 30 minutes. Allow to cool in the pan for 5 minutes, then release from the pan and allow brownies to cool completely.

1/2 cup (120ml) Milk of choice

1 tablespoon Maple syrup or any other sweetener (optional)
Directions:

Ingredients:
500g hazelnuts, raw
Directions:
1. Preheat oven to 350F (175C).
2. Spread hazelnuts on a baking tray and roast for 8-10 minutes. Until slightly browned and the skins are blistered a little.
3. Allow to cool for 3-4 minutes on the tray. Wrap the hazelnuts in a kitchen towel and rub vigorously to remove as much loose skin as possible. Remove skinned hazelnuts and repeat the process with unskinned hazelnuts. Note: it's pretty hard to remove all the skin, try to remove as much as possible but it's fine if you left with some skin on. Let cool completely.
4. Place hazelnuts into the blender, add salt (optional) and blend until smooth and creamy, pausing to scrape down the sides as necessary. Note: At the beginning it seems like it’s not blending well, but you have to be patient. First it will be crumbly, then it will form a paste, then it will be smooth and creamy. All the process takes about 5-15 minutes (depending on your blender/food processor).
5. Transfer the peanut butter to an airtight container or to a mason jar and store in the refrigerator.

2 Ripe bananas
1 cup (240g) Natural peanut butter
1/4 cup (23g) Ground almonds
1/3 cup (80ml) Maple syrup
1 Egg
1/2 teaspoon Cinnamon

Directions:
1. Prepare the pan: line a 8-inch (20cm) square baking pan with parchment paper and set aside.
2. Preheat oven to 325F (160c).
3. Peel the bananas, place them in a large bowl, then, mash them using a fork. Add egg and whisk until combined. Add peanut butter, ground almonds, maple syrup, cinnamon (optional), baking soda and salt. Miz until combined.
4. Pour the batter into prepared pan.
5. Bake for 25-30 minutes or until toothpick comes out clean.
6. Allow to cool for 5-10 minutes in the pan, the release from the pan and allow to cool completely.
7. Cut into bars and serve.

For the cookie dough:
1/4 cup (60g) Pistachio paste
3/4 cup (175g) Softened Butter, unsalted
2 eggs
3/4 cup (150g) Brown sugar
1/4 cup (50g) white sugar

2¾ cups (340g) Flour

For the filling:

180g White chocolate

Directions:
1. Make the filling: chop white chocolate, place in a heatproof bowl, add pistachio paste. Melt and mix until combined and smooth.
2. Place the bowl in the fridge for 30 minutes, them scoop about 1 teaspoon each time and shape a bowl. place on a plate and freeze while making the dough.
3. Make the cookie dough: In a large bowl, beat butter, pistachio paste, brown sugar and white sugar. Beat until creamy, about 2 minutes. Add egg, vanilla extract and beat until combined, scrape the bottom and sides as needed.
4. Sift in flour, baking soda, salt. Mix until combined.
5. At this stage if dough is too soft, cover and refrigerate for 20 minutes.
6. Preheat oven to 350°F (175°C). line two baking trays with parchment paper.
7. Scoop out about 1-2 tablespoons of cookie dough and flatten it, place frozen pistachio filling in the center, roll into a ball.
8. Place rolled balls on a parchment paper with about 2 inches apart. Top each cookie with chopped pistachios (optional).
9. Bake for 10-12 minutes or until lightly browned on the sides.
10. Cool on baking sheets for 10 minutes before transferring to wire racks to cool completely.

Ingredients:
1 cup (90g) Oatmeal
Pinch Salt
1 teaspoon Sugar (optional)
2 Eggs (medium)
1¼ cups (300ml) Milk/water
30-40g Spinach
Directions:
1. Put oats into a powerful blender and blend into flour. Note: you can use store-bought oat flour.
2. Add salt, sugar eggs and milk. Blend until smooth. Add spinach and blend again until smooth.
3. Heat a small non-stick pan over low-medium heat.
4. Pour about 1/4 of the batter to the hot pan. Spread the batter evenly to create a thin crepe. Cook for 1 minute, flip and cook for another 20-30 seconds.
5. Repeat.

1 head cauliflower (~800g)
1 onion, chopped
3 garlic cloves, crushed
400 (14oz) Chicken breast, cut into small chunks
Salt
Black pepper
1/2 teaspoon Red chili flakes – optional
250g (9oz) Green beans
3 tablespoons Olive oil
1 tablespoon Sesame oil
2 tablespoons Soy sauce
2 springs Green onion
Directions:
1. Cut the cauliflower into small florets/Chunks. Working in batches, place the cauliflower in a food processor and pulse (in 1-2 second pulses) until the cauliflower has the texture of rice or couscous – don’t over process or it will get mushy. Set aside.
2. Heat olive oil in a large pan, add chopped onion, crushed garlic and sauté for 5-6 minutes. Add chicken breast chunks, season with salt, pepper and chili flakes. Cook for about 4-5 minutes until the chicken cooked through. Add green beans and cook for 2-3 minutes more.
3. Add cauliflower “rice”. Add soy sauce, sesame oil and cook, stirring occasionally, for 3-5 minutes, until the cauliflower has softened. Don’t overcook. Turn the heat off and add chopped green onion.

For the overnight oats:
1/2 cup (45g) Rolled oats
Pinch Salt
1 tablespoon Chia seeds
1/4 cup (70g) Yogurt
1/2 cup (120ml) Milk of your choice

1 teaspoon Toasted peanuts, chopped
For the caramel:
2 Medjool Dates, pitted
Hot water
1 tablespoon Peanut butter
For topping:
2-3 Dark chocolate cubes
1 tablespoon Milk of your choice

Directions:
1. Make the overnight oats: In a bowl or jar mix oats, chia seeds, salt and chopped peanuts.
2. Add milk, yogurt, peanut butter and mix until combined.
3. Transfer to a jar or a glass and refrigerate for one hour.
4. Make the "caramel": place 2 pitted dates into a bowl, cover with hot water and allow to sit for 10 minutes. Then, transfer the dates with one tablespoon of the soaking water into a blender, add 1 tablespoon of peanut butter and blend until smooth and looks like caramel. Note: you can do this process without a blender by mashing the dates with a fork.
5. Spread the "caramel" over the oats.
6. Make the chocolate layer: place the chocolate in a microwave safe bowl. Add 1 tablespoon of milk. Microwave for 15 seconds. Then stir until melted and smooth.
7. Pour over the caramel layer and spread evenly.
8. Refrigerate for 4 hours or overnight.

Directions:
1. Prepare 18cm (7-inch) cake ring. Line the ring with cake collar. Set aside.
2. In a small bowl place gelatin, add milk, mix and allow to bloom for 10-15 minutes.
3. Meanwhile make the cream: in a saucepan, place eggs, cornstarch and 1/4 cup (60ml) milk. Whisk until smooth and no lumps. Add the remaining 1 3/4 cups of milk and mix well.
4. Place the saucepan over the stove and heat over low heat, while constantly whisking until thickens, it takes about 5-7 minutes. When thickens, remove from heat and add honey and vanilla bean paste. Mix until incorporated.
5. Add the cheese and mix until well combined and smooth.
6. Melt the gelatin in the microwave for 15 seconds. Temper the gelatin: Gradually add few tablespoons of the cake mixture into the dissolved gelatin and stir until combined. Pour back to the cake mixture and mix until combined.
7. Pour the mixture into prepared cake ring and refrigerate for at least 6 hours or overnight.
8. Release from the ring/pan and decorate with fresh fruits.

1 pound (450g) raw shrimp, peeled and deveined with tails attached
1 cup (75g) Shredded coconut/coconut flakes
1 egg
100 ml Sparkling water or beer
1 cup (125g) All-purpose flour, divided

Direction:
1. Butterfly the shrimp: insert a knife about three-quarters of the way into the shrimp at the top. Cut a slit down the center of the shrimp's back to the tail. Open the flesh of the shrimp slightly. Season with salt and pepper, set aside.
2. In a large bowl place egg, sparkling water, 1/2 of the flour (65g), salt, garlic powder, chilli flakes and paprika. Whisk until smooth.
3. In a separate bowl, mix shredded coconut and breadcrumbs.
4. In a third bowl place 1/2 cup (65g) all-purpose flour.
5. Coat the shrimp with flour and shake off excess, then dip in the batter and coat with coconut mixture, pressing gently to adhere.
