Sometimes it serves as a pre dinner snack when dad comes home and we sit around a bowl of chips and guac together. Other times, it serves as the taco, nacho, rice bowl, or sheet pan dinner topping. You can put guacamole on almost anything in our house. The recipe easily doubles or triples by adding a bit more of everything. Guacamole is forgiving. There are times when I don’t have an onion or tomato, so I throw in a splash of salsa and call it a day. Sometimes I don’t have limes, so I squeeze lemons instead. No one has ever complained! One staple of our guac that we live by is never skimp on the salt and cumin. This is what makes our guacamole distinctly guacamole to us!Serves 43 Avocados¼ onion finely diced1 roma tomato diced2 garlic cloves minced2 limes1/4 cup fresh cilantro finely chopped½ tsp salt plus more salt to taste½ tsp cuminCut the avocados, remove the pit and mash together in a bowl. Add the remaining ingredients and mix together but don’t overmix! A good guac has texture and a few chunky bites of avocado remaining :)Using fresh limes is worth it. Start by prepping your meat sauce. Brown the meat and add in both marinara jars once it’s fully browned. We blend ours so there are no tomato chunks(little eaters). Next, beat one egg into the ricotta cheese-add two pinches of salt, and set aside. Time to layer.On the bottom of a deep baking dish(I use the glass Pyrex), generously coat the bottom of the pan with meat sauce. Add a layer of lasagna noodles. On top of the lasagna noodles, spread 1/3 of your ricotta mixture. Another layer of meat sauce right on top and repeat two more times. Once you’re finished with your layers, add a generous layer of mozzarella cheese and salt to the top. Cover the top of your lasagna, I use an XL cooking sheet so the mozzarella doesn’t stick. You could also use foil(if you use that). Cook covered for 25 minutes and uncovered for 20, or until the noodles are soft. Everyone’s ovens work a little differently! Best served with olive oil, lemon salad, and some fresh bread.

You just need a little bit, but potatoes really make it delicious)Finely chop the veggies; my family likes small veggie bitesSaute the veggies(hold the potatoes) in a bit of ghee, butter, or olive oil for about 5 minutesFill the pot with water, 1 inch above the veggiesAdd potatoesAdd ground beef(I tear it up into pieces)Add 1-2 scoops of perfect supplements bone broth powderAdd 1-2 t Celtic salt(that’s all the flavor, and it extracts the flavor from everything in the pot)Let it come to a boil, then reduce to a simmer. Cook until the potatoes are soft and the meat is cooked!Enjoy with fresh bread, over rice, with a dash of lemon, a dollop of sour cream, or topped with fresh grated parmesan...honestly get creative!! That’s the beauty of this dish!
