For Soaking Semolina
1 ½ cups Semolina, सूजी
1 ½ cups Water, पानी

For Topping
4-5 no. Green chillies (less spicy & finely chopped) हरी मिर्च
2 sprig Curry leaves, chopped, करी पत्ते
3-4 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
2 no. medium Carrots (peeled & grated) गाजर

For Thick Batter
1 ¼ cup Soaked semolina, भीगी हुई सूजी
1 tbsp Green chillies (less spicy & finely chopped) हरी मिर्च
1 tbsp Curry leaves, chopped, करी पत्ते
1 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
¼ cup Carrot (peeled & grated) गाजर
2 heaped tbsp Yellow moong dal, soaked, भीगी हुई मूंग दाल
Salt to taste, नमक स्वादअनुसार
½ inch Ginger (peeled & grated) अदरक
½ cup Curd, beaten, दही
3-4 tbsp Semolina, सूजी
1 tsp Oil, तेल
¼ tsp Baking soda, बेकिंग सोडा

For Sooji Ka Dhokla
1 tsp Ghee (for greasing) घी
Prepared Thick Batter, तयार किया हुआ मिश्रण

For Gul Gule Mixture
⅓ cup Semolina, सूजी
½ cup Prepared Thick Batter, तयार किया हुआ मिश्रण
1 tbsp Oil (for greasing) तेल

For Sooji Ke Gul Gule
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
1 tbsp Oil, तेल

For Gul Gule Tadka
1 tbsp Oil, तेल
1 tsp Ghee, घी
¼ tsp small Mustard seeds, बारीक राई
½ tsp Cumin seeds, जीरा
2-3 tbsp Peanuts, मूंगफली
1 tsp Chana dal, चना दाल
1 tsp Urad dal, उड़द की दाल
1 sprig Curry leaves, करी पत्ते
A pinch of Asafoetida, हींग
A pinch of Turmeric powder, हल्दी पाउडर
Cooked Gul gule, cut into half, पके हुए गुल गुले
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
1 tsp Lemon juice, नींबू का रस

For Garnish
Coriander sprig, धनिया पत्ता

For Thin Batter

AFGHANI EGG CURRY

Preparation time 10 minutes

Ingredients
For Paste
2 tbsp Oil, तेल
2 tbsp Ghee, घी
2 no. large Onions, roughly sliced, प्याज
1 ½ inch Ginger (peeled & sliced) अदरक
7-8 no. Garlic cloves, लहसुन
4-5 no. Green chillies (less spicy & roughly torn) हरी मिर्च
3 no. Green cardamom, हरी इलायची
1 tbsp Black peppercorns, काली मिर्च के दाने
1 tbsp Tender Coriander stems, roughly torn, धनिये के डंठल
½ cup fresh Mint leaves, पुदीना पत्ता
1 cup fresh Coriander leaves, धनिया पत्ता
1 tbsp Coriander powder, धनिया पाउडर
1 tsp Turmeric powder, हल्दी पाउडर
1 ½ cups Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार

For Afghani Egg Curry
2 tbsp Ghee, घी
1 no. Bay leaf, तेज पत्ता
5 no. Black peppercorns, काली मिर्च के दाने
¼ inch Cinnamon stick, दालचीनी
Prepared Paste, तयार की हुई पेस्ट
1 ½ cups Water, पानी

For Sauteing Eggs
2-3 tbsp Oil, तेल
3-4 no. Garlic cloves, roughly sliced, लहसुन
6 no. Boiled Eggs, उबले हुए अंडे
½ tbsp dry Fenugreek leaves, कसूरी मेथी
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 no. large Tomato, roughly diced, टमाटर
¼ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Paste
In a kadai, add oil, ghee, once it’s hot, add onions, ginger, garlic, green chillies and saute it for 2-3 minutes until translucent.
Add green cardamom, black peppercorns, tender coriander stems and cook it for a minute.
Add mint leaves, fresh coriander leaves, coriander powder, turmeric powder, curd and salt to taste.
Transfer it to a mixer grinder jar and make a smooth paste.
Keep it aside for further use.

For Afghani Egg Curry
In a handi, add ghee, once it's hot, add bay leaf, black peppercorn, cinnamon stick and let it splutter.
Add prepared paste and cook it well for a while until thick.
Add water and get a quick boil.
Transfer it to a serving dish, place sauteed eggs and garnish it with coriander sprig.
Serve hot with roti.

For Sauteing Eggs
In a pan, add oil, once it's hot, garlic, boiled eggs, dry fenugreek leaves, degi red chili powder, tomato and saute it for 2-3 minutes.
Add crushed black peppercorns and keep it aside for further use.

GUJIYA & THANDAI
Preparation time 15 minutes
Cooking time 25-30 minutes
Serve 4-8

For Gujiya Dough
2 cup Refined flour, मैदा
¼ cup Semolina, सूजी
A pinch of salt, नमक
½ tsp Cardamom powder, इलाइची पाउडर
1 tsp Ghee, घी
Water as required, पानी

For Filling
½ tbsp Ghee, घी
⅓ cup Semolina, सूजी
250 gms Mawa, मावा
5 heaped tbsp Thandai Mixture, ठंडाई का मिश्रण
1 heaped tbsp Sugar, चीनी
12-15 no. Raisins, chopped, किशमिश

Other Ingredients
Oil for frying, तेल तलने के लिए

For Garnish
fresh Rose petals, गुलाब की पंखुड़ियाँ
Almonds, sliver, बादाम
Thandai Mixture, ठंडाई का मिश्रण

Process
For Thandai Mixture
In a bowl, add fennel seeds, black peppercorns, green cardamom, poppy seeds, fennel seeds, sugar, a pinch of salt, melon seeds, Tata Sampann almonds, Tata Sampann cashew and saffron strands.
Transfer it to a mixture grinder jar and grind it coarsely.
Keep it aside for further use.

For Thandai
In a pot, add milk, water, saffron strands and get a quick boil.
Add thandai mixture and give it a good boil.
Transfer it to a bowl and keep it aside to cool down at room temperature.
Transfer it to a serving glass, garnish it with rose petals, almond slivers and mint sprigs.
Serve chilled with gujiyas.

For Gujiya Dough
In a parat, add refined flour, semolina, a pinch of salt, cardamom powder, ghee, water and knead a tight dough.
Roll out the dough and cut out the roundels with the help of a steel bowl or a cutter.
Add the prepared filling, close the edges and pinch in with the help of your thumb or give it any desired shape.
In a kadai, add oil, once it's medium hot, add gujiyas and fry it on low flames until golden in color.
Transfer it to a serving dish and garnish it with rose petals.
Serve hot with thandai.

For Filling
In a pan, add ghee, once it’s hot, add semolina and saute it for a minute.
Add mawa and cook it until golden in color.
Add thandai powder and mix it well.
Transfer it to a tray and keep it aside to cool at room temperature.
Add sugar, raisins and mix it well.

For Dough
1 ½ cups Refined flour, मैदा
2-3 heaped tbsp Ghee, घी
A pinch of salt, नमक
½ tsp Baking soda, बेकिंग सोडा
⅓ cup Curd, beaten, दही
¼ cup Chilled water, ठंडा पानी
¼ cup Refined flour, मैदा
3-4 tbsp soften Butter, cubed, मक्खन
¼ cup Refined flour, मैदा

For Sugar Syrup
2 cups Sugar, चीनी
2 cups Water, पानी
few Saffron strands, केसर
¼ tsp Cardamom powder, इलायची पाउडर
5-6 no. Green cardamom pods, हरी इलायची
1 tsp Lemon juice, नींबू का रस
2 tbsp Saffron water, केसर का पानी

Other Ingredients
Oil for frying, तेल तलने के लिए

For Coating
Icing sugar & Saffron color, चीनी और केसर का रंग
Little Water, पानी

For Garnish
Almonds, sliver, बादाम
Pistachios (blanched & sliver) पिस्ता
Silver wark, चाँदी का वर्क

Process
For Dough
In a parat, add refined flour, ghee and mix it well until it has a crumbly texture.
Add a pinch of salt, a pinch of baking soda, curd, chilled water and knead a semi hard dough.
Add softened butter and knead it in soft dough.
Divide the dough into layers and keep it aside to rest for 15-20 minutes.
Take a lemon size ball, make a cavity and give it a desired shape.
Keep it aside for further use.

For Frying
In a kadai, add oil, once it's medium hot, add balushahi and fry for 10-12 minutes until golden in color.
Transfer it to a prepared sugar syrup and let it soak for a while.
Keep it aside for further use.

For Sugar Syrup
In a kadai or sauce pot, add sugar, water, saffron strands, cardamom powder, green cardamom and cook for 15-20 minutes or until 1 string consistency.
Add saffron water and mix it well.
Keep it aside for further use.

For Coating
In a bowl, add icing sugar, saffron color, water and mix it well.
Sprinkle it on the balushahi and transfer it to a serving dish.
Garnish it with almonds, pistachios and silver vark.

4 cups Sella basmati rice (soaked for 30 minutes) सेला बासमती चावल
1 ½ medium Carrot (peeled & grated) गाजर
1 tbsp Prepared Masala, तैयार किया हुआ मसाला
Remaining Chicken Oil, बचा हुआ चिकन का तेल
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल

For Chicken Marination
800 gms whole Chicken, चिकन
Salt to taste, नमक स्वादअनुसार

For Masala
½ tbsp Black peppercorns, काली मिर्च के दाने
10-12 no. Green cardamom, हरी इलायची
6-7 no. Cloves, लौंग
1 ½ inch Cinnamon stick, दालचीनी
½ inch Mace, जावित्री
2 no. Black cardamom, बड़ी इलायची
Salt to taste, नमक स्वादअनुसार
¼ tsp Saffron strands, केसर

For Chicken Second Marination
1 tbsp Oil, तेल
½ tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
2 tbsp Curd, beaten, दही
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Prepared Masala, तैयार किया हुआ मसाला
Half Cooked Chicken, आधा पका हुआ चिकन
Salt to taste, नमक स्वादअनुसार

For Searing Chicken
2 tbsp Oil, तेल
Marinated Chicken, मैरिनेटेड चिकन

For Assembling
Cooked Rice, पके हुए चावल
Seared Chicken, पका हुआ चिकन
Almonds (blanched & sliver) बादाम

For Garnish
fresh Mint sprig, पुदीना पत्ता

Process
For Chicken Pulao
In a handi, add ghee, oil, once it's hot, add cinnamon stick, bay leaf, black peppercorns and let it splutter.
Add onion and saute it for 3-4 minutes until golden in color.
Add salt to taste, turmeric powder, degi red chili powder, coriander powder, cumin powder and saute it for a minute.
Add tomato puree, salt to taste and cook it well for a while.
Add marinated chicken and mix it well.
Cover it with a lid and cook it for a while until half cooked.
Add water and simmer it well.
Transfer the cooked chicken in a tray and keep it aside for further use.
Add raisins, sella basmati, carrots, prepared masala, cover it with a lid and cook it for a while until cooked well.
Finish it with some remaining chicken oil, tender coriander stems and mix it well.
Transfer it to a serving dish, garnish it with almond slivers and mint sprig.
Serve hot with seared chicken .

For Chicken Marination
In a tray, place chicken, add salt to taste and marinate it well.
Keep it aside to marinate for a while.

For Masala
In a pan, add salt taste, black peppercorns, green cardamom, cloves, cinnamon stick, mace, black cardamom and dry roast it for a minute.
Add saffron strands and transfer it to a mixer grinder jar.
Grind into fine powder and keep it aside for further use.

For Chicken Second Marination
In a bowl, add oil, ginger garlic paste, curd, degi red chili powder, prepared masala, cooked chicken, salt to taste and mix it well.
Keep it aside to marinate for a while.
In a pan, add oil, once it's hot, add marinated chicken and sear it until golden brown.
Keep it aside for further use.

INSTANT MASALA DOSA
Preparation time 10 minutes

Ingredients
For Dosa Batter
1 ½ cups Semolina, सूजी
1 ½ cups Curd, beaten, दही
1 cup Water, पानी
2 heaped tbsp Poha (soaked) पोहा
1 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Roasted chana dal, भुनी हुई चना दाल
¼ tsp Baking soda or Eno, बेकिंग सोडा
1 tsp Oil, तेल

For Allam Chutney
2-3 tbsp Oil, तेल
2 tbsp Urad dal, उड़द की दाल
2 tbsp Chana dal, चना दाल
1 tbsp Coriander seeds, धनिये के बीज
½ tsp Cumin seeds, जीरा
7-8 no. Kashmiri red chillies, सूखी कश्मीरी लाल मिर्च
2 inch Ginger (peeled & roughly sliced) अदरक
4-5 no. Garlic cloves (roughly crushed) लहसुन
1 sprig Curry leaves, करी पत्ते
¼ cup Jaggery, गुड़
2 tbsp Tamarind, soaked, इमली
Salt to taste, नमक स्वादअनुसार
Prepared Tadka, तयार किया हुआ तड़का

For Tadka
2-3 tbsp Oil, तेल
1 tsp small Mustard seeds, बारीक राई
1 sprig Curry leaves, करी पत्ते
5-6 no. Button chillies, बटन मिर्च

For Aloo Masala
2-3 tbsp Oil, तेल
¼ tsp Urad dal, उड़द की दाल
¼ tsp Chana dal, चना दाल
½ tsp small Mustard seeds, बारीक राई
A pinch of Asafoetida, हींग
1 no. Green chili (less spicy & roughly chopped) हरी मिर्च
1 sprig Curry leaves, करी पत्ते
1 no. large Onion, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
3-4 no. large Potatoes (boiled & mashed) उबले हुए आलू

For Dosa
Prepared Batter, तयार किया हुआ मिश्रण
1-2 tsp Ghee, घी

For Garnish
Coriander sprig, धनिया पत्ता
Butter, cubed, मक्खन

Process
For Dosa Batter
In a bowl, add semolina, curd, water, soaked poha, sugar, salt to taste, roasted chana dal and mix it well.
Transfer it to a mixer grinder jar and grind it until smooth consistency.
Add baking soda or eno, oil and give it a gentle mix.
Keep it aside for further use.

For Allam Chutney
In a pan, add oil, once it's hot, add urad dal, chana dal, coriander seeds, cumin seeds, kashmiri red chillies, ginger, garlic, curry leaves and saute for a while on medium flames.
Transfer it to a bowl, add jaggery, tamarind and salt to taste.
Transfer it to a mixer grinder jar and grind it smoothly.
Transfer it to a serving bowl, add prepared tadka and mix it well.
Keep it aside for further use.

For Tadka
In a pan, add oil, once it's hot, add small mustard seeds, curry leaves and let it splutter.
Add button chillies and saute it well.
Keep it aside for further use.

For Aloo Masala
In a pan, add oil, once it's hot, urad dal, chana dal, small mustard seeds and let it splutter.
Add a pinch of asafoetida, green chillies, curry leaves and saute it well for a minute.
Add onion, salt to taste and cook for 2-3 minutes until translucent on medium flames.
Add turmeric powder, potatoes and cook it for a while.
Keep it aside for further use.

For Dosa
Heat iron tawa or nonstick tawa and season it with oil.
Pour a ladle full of prepared dosa batter and cook it well until soft.
Drizzle some ghee, fold it from the middle and transfer it to a serving dish.
Garnish it with coriander sprig and butter.
Serve hot with prepared allam chutney and aloo masala.

2 cups Powdered Short grain rice, पीसा हुआ चावल
½ cup Jaggery, grated, गुड़
¼ cup Milk powder, मिल्क पाउडर
1-2 tsp Water, पानी

For Coating
2 tbsp White sesame seeds, सफेद तिल
2 tbsp Poppy seeds, खस खस

Other Ingredients
Oil for frying, तेल तलने के लिए

Process
For Washing & Soaking Rice
In a bowl, add short grain rice, water and wash it well.
Add water and keep it aside to soak for 3-4 hours.
Strain the rice and let it dry overnight.
Keep it aside for further use.

For Anarsa
In a mixer grinder jar, add dried short grain rice and grind it smoothly.
Strain the powder and transfer it to a bowl.
Add jaggery, milk powder and crumble it well.
Add water and make it a soft dough.
Keep it aside to ferment for 5-6 hours.
Divide the dough into medium lemon size balls.
Give it a desired shape, coat it well in sesame seeds and poppy seeds mixture.
Drop the balls in the hot oil and fry until golden brown.
Transfer it to a serving platter and Serve hot.

Ingredients
For Cooking Dal
3-4 cups Water, पानी
2 cups Yellow moong dal (soaked for 30-40 minutes) मूंग की दाल
Salt to taste, नमक स्वादअनुसार
A pinch of asafoetida, हींग
A pinch of Turmeric powder, हल्दी पाउडर
3-4 tbsp Butter, cubed, मक्खन

For Topping
2-3 no. Green chillies, finely chopped, हरी मिर्च
1 no. large Onion, finely chopped, प्याज

For Masala
Salt to taste, नमक स्वादअनुसार
1 heaped tbsp Cumin seeds, जीरा
1 ½ tbsp Black peppercorns, काली मिर्च के दाने
1 no. Black cardamom, बड़ी इलायची

For Tadka
2-3 tbsp Oil, तेल
2-3 tbsp Ghee, घी
5-6 no. dry Red chillies, broken into half, सूखी लाल मिर्च
A pinch of Asafoetida, हींग
A pinch of Degi red chili powder, देगी लाल मिर्च पाउडर

For Dal Muradabadi
½ cup Water, पानी
3-4 tbsp Butter, cubed, मक्खन
Cooked dal, पकी हुई दाल

For Assembling
Cooked dal, पकी हुई दाल
Butter, cubed, मक्खन
Lemon juice, नींबू का रस
Prepared Tadka, तयार किया हुआ तड़का
A pinch of Chaat masala, चाट मसाला
Onion, finely chopped (optional) प्याज
Green chillies, finely chopped (optional) हरी मिर्च
Prepared Masala, तयार किया हुआ मसाला
Papdi, crushed, पापड़ी
Green chutney (optional) हरी चटनी
A pinch of degi red chili powder (optional) देगी लाल मिर्च पाउडर

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Cooking Dal
In a pressure cooker, add water, yellow moong dal, salt to taste, a pinch of asafoetida, turmeric powder, butter, close it with a lid and cook it for 3-4 whistles until cooked well.
Mash it well with the help of masher and Keep it aside for further use.

For Masala
In a pan, add salt to taste, cumin seeds, black peppercorns, black cardamom and dry roast it on medium flames for 2-3 minutes until aromatic.
Transfer it to a mixer grinder jar and grind it to a fine powder.
Keep it aside for further use.

For Tadka
In a pan, add oil, ghee, once it's hot, add dry red chillies, asafoetida and toss it for a minute.
Add degi red chili powder and mix it well.
Transfer it to a bowl and keep it aside for further use.

For Dal Muradabadi
In a kadai, add water, butter and get a quick boil.
Add cooked dal and let it cook for a while on low flames until thick.
Transfer it to a serving bowl, add butter, lemon juice, prepared tadka, a pinch of chaat masala, green chillies, onions, prepared masala, papdi, green chutney and a pinch of degi red chili powder.
Garnish it with coriander sprig and serve hot.

¼ cup dry Fenugreek leaves, कसूरी मेथी
1 ½ cup Water, पानी

For Jowar Khichdi
2-3 heaped tbsp Ghee, घी
A pinch of small Mustard seeds, छोटी राई
½ tsp Fennel seeds, सौंफ
½ tsp Cumin seeds, जीरा
Prepared Jowar powder, तयार किया हुआ ज्वार का पाउडर
2-3 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
2 cups Water, पानी

For Frying Chillies
2 heaped tbsp Ghee, घी
5-6 no. dry Red chillies, सूखी लाल मिर्च
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर

For Garnish
Fried chili, तली हुई मिर्च
Ghee, घी
Coriander sprig, धनिया पत्ता

Process
For Washing & Soaking Jowar
In a bowl, add jowar, water and wash it well.
Add water and keep it aside to soak for 10-15 minutes.
Strain the jowar, transfer it to a mixer grinder jar and grind it coarsely.
Keep it aside for further use.

For Soaking & Cooking Dal
In a bowl, add Akkha masoor, toor dal, water and wash it well.
Add water and keep it aside to soak for 5-10 minutes.
In a pressure cooker, add soaked dal, water, salt to taste, cover it with a lid and cook it until 2-3 whistles.
Keep it aside to cool down at room temperature.

For Nagori Dal
In an earthen pot or handi, add oil, ghee, once it's hot, add dry red chillies, asafoetida, ginger, garlic, onion and saute it well until translucent.
Add green chillies, tender coriander stems and saute for a minute.
Add turmeric powder, degi red chili powder, tomatoes, soaked dry fenugreek leaves and cook for a while on medium flame.
Add water, cook dal and let it simmer for 15-20 minutes on low flames.
Add jaggery, salt to taste and give it a quick boil.
Transfer it to a serving bowl or dish, garnish it with fried chili and coriander sprig.
Serve hot with prepared jowar khichdi and fried chili.

For Jowar Khichdi
In a pressure cooker, add ghee, once it's hot, add jowar, salt to taste, water and stir well.
Cover it with a lid and cook it until 2-3 whistles until cooked well.
Transfer it to a serving bowl or dish, garnish it with fried chili and coriander sprig.
Serve hot with prepared dal and fried chili.

For Soaking Fenugreek Leaves
In a bowl, add dry fenugreek leaves, add water and soak it for 10-15 minutes.
Keep it aside for future use.

For Frying Chili
In a pan, add ghee, once it's hot, add dry red chillies and fry it for a minute.
Add degi red chili powder, turn off the flames and mix it well.
Keep it aside for further use.

Prepared Ginger garlic paste, अदरक लहसुन का पेस्ट
2 tsp Turmeric powder, हल्दी पाउडर
1 ½ tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Cumin powder, जीरा पाउडर
1 heaped tbsp Coriander powder, धनिया पाउडर
Little water, पानी
Cooked chicken (80% cooked chicken) पका हुआ चिकन
1 tbsp Tender coriander stems, finely chopped, धनिये के डंठल
1-2 cups Water, पानी
1 tbsp Prepared Garam Masala, तयार किया हुआ गरम मसाला

For Garam Masala
1 heaped tbsp Black peppercorns, काली मिर्च के दाने
1 no. Mace, जावित्री
7-8 no. Green cardamom, हरी इलायची
1 tsp Cumin seeds, जीरा
½ tsp small Mustard seeds, बारीक राई
5 no. Black cardamom, बड़ी इलायची
½ tbsp Coriander seeds, धनिये के बीज
4-5 no. Cloves, लौंग
Salt to taste, नमक स्वादअनुसार

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Chicken Marination
In a large bowl, add chicken legs, turmeric powder, salt to taste, degi red chili powder, mustard oil and mix it well.
Keep it aside to marinate well.

For Ginger Garlic Paste
In a mortar pestle, add garlic cloves, green chillies, ginger and coarsely paste.
Keep it aside for further use.

For Cooking Chicken
In a handi or kadai, add mustard oil, once it's hot, add marinated chicken and cook for 7-8 minutes on both sides until golden in color..
Transfer it to a tray and keep it aside for further use.

For Bihari Chicken Curry
In the same handi, add mustard oil, once it's hot, add dry red chillies, bay leaf, cinnamon stick, black cardamom, cloves and let it splutter well.
Add onions and saute it for 2-3 minutes until translucent.
Add salt to taste, whole garlic and saute it for a minute.
Cover it with a lid and cook for 5-6 minutes on medium flames.
Add prepared ginger garlic paste and mix it well.
Add turmeric powder, degi red chili powder, cumin powder, coriander powder and cook it well.
Add little water, cooked chicken, tender coriander stems and give it a good mix.
Add water, prepare masala and let it simmer.
Cover it with a lid and cook it for a while until cooked well.
Transfer it to a serving dish or bowl and garnish it with coriander sprig.
Serve hot with roti or rice.

For Garam Masala
In a pan, add black peppercorns, mace, green cardamom, cumin seeds, and small mustard seeds, black cardamom, coriander seeds, cloves, salt to taste and dry roast it on medium flames for 2-3 minutes until aromatic.
Transfer it to a mixer grinder jar and grind it to a fine powder.
Keep it aside for further use.

BHINDI BUTTER MASALA

Ingredients
For Bhindi Butter Masala
1 tbsp Oil, तेल
2-3 tbsp Butter, cubed, मक्खन
Prepared Ginger Garlic paste, अदरक लहसुन का पेस्ट
1 large Onions, chopped, प्याज
2 no. Bay leaf, तेज पत्ता
2 tsp Turmeric powder, हल्दी पाउडर
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
2 tsp Coriander powder, धनिया पाउडर
2-3 tbsp Curd, beaten, दही
½ cup fresh Tomato puree, ताजे टमाटर की प्यूरी
Salt to taste, नमक स्वादअनुसार
2-3 tbsp Butter, cubed, मक्खन
1 tbsp Tender Coriander stems, finely chopped, धनिये के डंठल
½ cup Water, पानी
¼ cup Fresh cream, optional, ताज़ा मलाई
Sauteed Lady finger, सौतेद भिंडी
2 tbsp Coriander leaves, chopped, धनिया पत्ता
2 tbsp Butter, cubed, मक्खन
½ tsp Dry fenugreek leaves, crushed, कसूरी मेथी

For Sauteing Bhindi
2-3 tbsp Mustard oil, सरसों का तेल
1 tsp Cumin seeds, जीरा
2 medium Onions, sliced, प्याज
1 kg Lady finger (trim the head & tale) भिन्डी
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
2-3 medium Tomatoes, diced, टमाटर

For Ginger Garlic Paste
2-3 no. Green chillies (less spicy & broken) हरी मिर्च
5-6 no. Garlic cloves, लहसुन
1 ½ inch Ginger (peeled & roughly chopped) अदरक

For Garnish
Coriander sprig, धनिया पत्ता
Butter, cubed, मक्खन
Ginger, Julienned, अदरक

Process
For Bhindi Butter Masala
In a kadai, add oil, butter, once it's hot, add prepared ginger garlic paste and saute it for a minute.
Add onions, bay leaf and saute it until golden in color.
Add turmeric powder, degi red chili powder, coriander powder and cook it for a minute.
Add curd and mix it well, add tomato puree, salt to taste and saute it well until cooked well.
Add butter, tender coriander stems and cook it well.
Add water, fresh cream and cook for 3-4 minutes until thickens.
Add sauteed bhindi, coriander leaves, and cook it well.
Finish it with butter, dry fenugreek leaves and mix it well.
Transfer it to a serving dish, garnish it with coriander sprig, butter and ginger juliennes.
Serve hot with roti.

For Sauteing Bhindi
In a pan, add mustard oil, once it's smoky hot, add cumin seeds and let it splutter.
Add onion, bhindi, salt to taste, turmeric powder, degi red chili powder and cook it for 5-6 minutes until golden in color on low flames.
Add tomato and mix it well.
Keep it aside for further use.

For Ginger Garlic Paste
In a mortar pestle, add green chilies, garlic cloves, ginger and grind it coarsely.
Keep it aside for further use.

ASSAMESE STYLE FISH CURRY

Ingredients
For Fish Marination
1kg Carp fish (Rohu), cut into darne, रोहू मछली
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर

For Shallow Frying Fish & Potatoes
3-4 tbsp Mustard oil, सरसों का तेल
Marinated Fish, मैरीनेटेड मछली
3-4 no. large Potatoes, cut into wedges, आलू

For Assamese Style Fish Curry
2-3 tbsp Mustard oil, सरसों का तेल
¼ tsp dry Fenugreek seeds, मेथी दाना
¼ tsp small Mustard seeds, छोटी राई
¼ tsp Onion seeds, कलौंजी
2 no. dry Red chili, सूखी लाल मिर्च
2-3 no. Green chillies (less spicy & slit into middle) हरी मिर्च
4-5 no. medium Tomatoes, cut into diced, टमाटर
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
Fried potatoes, तले हुए आलू
2-3 cups Water, पानी
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
Fried fish, तली हुई मछली
2 tsp Lemon juice, नींबू का रस

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Fish Marination
In a bowl or tray, add fish, salt to taste, turmeric powder and coat it well.
Keep it aside to marinate for 5-10 minutes.

For Shallow Frying Fish & Potatoes
In a pan, add mustard oil, once it's hot, add marinated fish and fry it for 2-3 minutes.
Flip it and cook it well, transfer it to a plate or tray and keep it aside for further use.
Add potatoes in the same pan and fry until golden in color or half cooked.
Transfer it to a plate or tray and keep it aside for further use.

For Assamese Style Fish Curry
In a kadai or handi, add mustard oil, once it's hot, add dry fenugreek seeds, small mustard seeds, onion seeds, dry red chillies and let it splutter well.
Add green chillies, tomatoes, salt to taste and cook it for 5-6 minutes until mushy.
Add turmeric powder, degi red chili powder, fried potatoes and cook for a while until cooked well.
Add water and get a quick boil.
Add coriander leaves, fried fish and cook for 5-6 minutes on low flame.
Finish it with some lemon juice and mix it gently.
Transfer it into the serving bowl or dish and garnish it with coriander sprig.
Serve hot with rice.

1 cup Curd, beaten, दही
1 tbsp Tamarind paste, इमली का पेस्ट
1 tbsp Degi red chili powder, देगी लाल मिर्च पाउडर
Salt to taste, नमक स्वादअनुसार
½ cup Curd, beaten, दही
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल
1 inch Ginger (peeled & julienned) अदरक
2-3 Green chillies (less spicy & slit into half) हरी मिर्च
2 tbsp Coriander leaves, chopped, धनिया पत्ता
1 ½ cup Water, पानी
Little water, पानी

For Masala
2 tbsp White Sesame seeds, सफेद तिल
10-12 no. Cashewnut, काजू
1 tsp Black peppercorns, काली मिर्च के दाने
2 tsp Coriander seeds, धनिये के बीज
½ tsp Cumin seeds, जीरा
5-6 no. Cloves, लौंग
1 no. Black cardamom, बड़ी इलायची
5 no. Green cardamom, हरी इलायची
1 no. Mace, जावित्री
4-5 no. Bedgi red chillies, बेड़गी लाल मिर्च

For Tadka
2-3 tbsp Oil, तेल
2-3 no. Dry red chillies, सूखी लाल मिर्च

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Frying Potatoes
In a handi or kadai, add oil, ghee, once it's hot, add potatoes and fry until half cooked.
Add onions, salt to taste and cook it for 7-8 minutes until golden in color on medium flames.
Transfer it to a bowl and keep it aside for further use.

For Hyderabadi Dum Aloo
In the same bowl, add prepared masala, curd, tamarind paste, degi red chili powder, salt to taste, curd, tender coriander stems, ginger, green chillies, coriander leaves, water and mix it well.
Transfer it to the same handi and add water to adjust the consistency.
Cover it with the lid and cook it for 15-20 minutes on low to medium flames until cooked well.
Add water and give it a quick boil.
Transfer it to a serving dish or bowl and add prepared tadka.
Garnish it with coriander sprig.
Serve hot with roti.

For Masala
In a pan, add white sesame seeds, cashew nuts, black peppercorns, coriander seeds, cumin seeds, cloves, black cardamom, green cardamom, mace, bedgi red chillies and dry roast it on medium flames for 2-3 minutes until aromatic.
Transfer it to a mixer grinder jar and grind it into fine powder.
Keep it aside for further use.

For Tadka
In a pan, add oil, once it's hot, add dry red chillies and roast for a minute until crispy.
Keep it aside for further use.

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Chicken Marination
In a bowl, add chicken, curd, degi red chili powder, turmeric powder, coriander powder, garam masala powder, cumin powder, salt to taste, lemon juice, fried onions and mix it well.
Keep it aside to marinate for 30-40 minutes.

For Cooker Wala Chicken
In a cooker, add mustard oil, oil, once it’s hot, add black cardamom, green cardamom, bay leaf, cinnamon stick and let it splutter.
Add garlic cloves, onion and saute it until golden in color.
Add turmeric powder, degi red chili powder, coriander powder and mix it well.
Add ginger, tender coriander stems and saute it for a minute.
Add tomato, cover it with a lid and cook it for 2-3 whistles until cooked well.
Mash it with the help of a masher and cook it for a while.
Add marinated chicken, water and get a quick boil.
Add salt to taste, ghee, prepared masala, coriander leaves and green chili.
Cover it with a lid and cook it for 4-5 whistles until cooked well.
Transfer it to a serving dish and garnish it with coriander sprig.
Serve hot with roti.

For Masala
In a bowl, add black pepper, cloves, black cardamom and salt to taste.

MUSHROOM CHILLI
Preparation time 5-10 minutes
Cooking time 20-25 minutes

Ingredients
For Boiling Mushroom
Water as required, पानी
Salt to taste, नमक स्वादअनुसार
1 tbsp Vinegar, सिरका
400 grams Button Mushroom, मशरूम

For Stock
2-3 cups Water, पानी
Mushroom stems, मशरूम की डंडिया

For Mushroom Chilli
1 tbsp Oil, तेल
3-4 no. dry Red chillies, roughly chopped, सूखी लाल मिर्च
1 inch Ginger (peeled & finely chopped) अदरक
2-3 no. Garlic cloves, roughly chopped, लहसुन
¼ inch Ginger (peeled & sliced) अदरक
2 no. Green chillies (less spicy & roughly chopped) हरी मिर्च
⅓ cup Spring Onion bulbs, roughly diced, प्याज़ पत्ता
1 large Onion, diced, प्याज
1 large Red bell pepper, diced, लाल शिमला मिर्च
1 large Green bell pepper, diced, ग्रीन बेल पेपर
Salt to taste, नमक स्वादअनुसार
¼ cup Prepared Mushroom stock, तयार किया हुआ मशरूम स्टॉक
Prepared Sauce Mixture, तयार किया हुआ सॉस का मिश्रण
2 tsp Light soy sauce, सोया सॉस
1 tbsp Cornstarch slurry, कॉर्नस्टार्च घोल
Fried Mushrooms, तले हुए मशरूम
1 tbsp Tender coriander stems, finely chopped, धनिया के डंठल
¼ cup Spring onion, roughly chopped, हरी प्याज

For Batter
1 tbsp Vinegar, सिरका
½ cup Refined flour, मैदा
½ cup Cornstarch, कॉर्नस्टार्च
Salt to taste, नमक स्वादअनुसार
A pinch of Sugar (optional) चीनी
Water as required, पानी

For Dry Coating
¼ cup Refined flour, मैदा
¼ cup Cornstarch, कॉर्नस्टार्च
½ tsp Black peppercorns, crushed, कुटी हुई काली मिर्च
Salt to taste, नमक स्वादअनुसार

Other Ingredients
Oil for frying, तेल तलने के लिए

For Sauce Mixture
1 tbsp Tomato ketchup, टोमेटो केचप
1 tbsp Red chili sauce, रेड चिली सॉस
½ tbsp Green chili sauce, ग्रीन चिली सॉस
¼ tsp Dark soy sauce, सोया सॉस
1 tsp Light soy sauce, सोया सॉस
2 tbsp Prepared Mushroom stock, तयार किया हुआ मशरूम स्टॉक
1 tsp Vinegar, सिरका

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Boiling Mushroom
In a wok, add water as required, salt to taste, vinegar, button mushrooms and boil it for 4-5 minutes.
Strain the water and keep it aside for further use.

For Stock
In a small saucepan, add water, mushroom stems and boil it for 10-15 minutes on medium flames.
Keep it aside for further use.

For Mushroom Chilli
In a wok, add oil, once it's hot, add dry red chillies, ginger, garlic, ginger, green chillies and saute it for a minute on high flames.
Add spring onion bulb, onion, red bell pepper, green bell pepper, salt to taste and toss it well.
Add prepared mushroom stock, prepared sauce mixture and cook it on high flame for 2-3 minutes.
Add light soy sauce, cornstarch slurry, fried mushrooms, tender coriander stems, spring onion and toss it for a minute until thick.
Transfer it to a serving bowl and garnish it with coriander sprig.
Serve hot.

For Batter
In a bowl, add vinegar, refined flour, cornstarch, salt to taste, a pinch of sugar, water as required and make it a dripping consistency batter.
Add dry coated mushrooms and coat it well.
Drop in hot oil, fry until crispy and golden in color.
Transfer it to an absorbent paper and keep it aside for further use.

For Dry Coating
In a bowl, add refined flour, cornstarch, black peppercorns, salt to taste and mix it well.
Add boiled mushroom and toss it well.
Transfer it to a tray or plate and keep it aside for further use.

For Sauce Mixture
In a bowl, add tomato ketchup, red chili sauce, green chili sauce, dark soy sauce, light soy sauce, prepared mushroom stock, vinegar and mix it well.
Keep it aside for further use.

LAL MIRCH GOSHT
Preparation time 10 minutes
Cooking time 40-45 minutes
Serve 4-5

Ingredients
For Laal Mirch Ka Gosht
1 cup Mustard oil, सरसों का तेल
1 inch Cinnamon stick, दालचीनी
2 no. Bay leaf, तेज पत्ता
1 kg Mutton with bones, मटन
4 large Onions, sliced, प्याज
Salt to taste, नमक स्वादअनुसार
15-20 no. Dry Bedgi red chillies, soaked, सूखी बेड़गी लाल मिर्च
½ tbsp Ghee, घी
2-3 tbsp Coriander seeds, roughly crushed, धनिये के बीज
1 ½ cups Curd, beaten, दही
Salt to taste, नमक स्वादअनुसार
2-3 cups Water, पानी
1 tbsp Tender Coriander stem, finely chopped, धनिये के डंठल

For Smoke
Coal, कोयला
1 no. Dry Bedgi red chilli, broke into half, सूखी बेड़गी लाल मिर्च
2 tsp Ghee, घी

For Garnish
Coriander sprig, धनिया पत्ता

Process
For Laal Mirch Ka Gosht
In a handi, add mustard oil, once it's hot, add cinnamon stick, bay leaf and let it splutter.
Add mutton, onions and cook it for a while until golden in color.
Add salt to taste, soaked dry red chillies, ghee and saute it for a while on medium flames.
Add coriander seeds, curd, salt to taste and cook it for 10-12 minutes until cooked well.
Add water and mix it well, cover it with a lid and cook it for 30-40 minutes on medium flames.
Finish it with tender coriander stems.
Place a small steel bowl in handi, add charred coal, dry red chili, pour some ghee and smoke for 2-3 minutes.
Transfer the mutton in a serving bowl and garnish it with coriander sprig.
Serve hot with roti.

SHAHI MATAR PULAO

Ingredients
For Besan ke Kofte
2-3 no. Green chillies, chopped, हरी मिर्च
1 ½ cups Gram flour, बेसन
3 heaped tbsp Curd, beaten, दही
1 tbsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
50 gms Paneer, crumble, पनीर
Salt to taste, नमक स्वादअनुसार
A pinch of asafoetida, हींग
¼ tsp Turmeric powder, हल्दी पाउडर
¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
1 tsp Ghee, घी

For Shahi Matar Pulav
1 ½ tbsp Oil, तेल
2 tbsp Ghee, घी
1 no. Bay leaf, तेजपत्ता
3 no. Green cardamom, हरी इलायची
1 no. Black cardamom, बड़ी इलायची
1 no. Mace, जावित्री
1 tsp Cumin seeds, जीरा
1 ½ cup fresh Green peas, हरी मटर
⅓ cup Curd, beaten, दही
2-3 tbsp Ghee, घी
Salt to taste, नमक स्वादअनुसार
4 cups Sella basmati rice (soaked for 30 minutes) सेला बासमती चावल
Fried Paneer, तला हुआ पनीर
1 cup fresh Green peas, हरी मटर
2-3 tbsp Fried onion, तला हुआ प्याज
2-3 tbsp Saffron water, केसर का पानी
1 no. Green chili (less spicy & diagonally sliced) हरी मिर्च
6-7 cups Warm Water, गुनगुना पानी
¼ cup fresh Green peas, हरी मटर
Water Mixture, पानी का मिश्रण
Fried Kofta, तले हुए कोफ्ते
2 tbsp Ghee, घी
2 tbsp fresh Coriander leaves, finely chopped, धनिया पत्ता
½ inch Ginger (peeled & finely chopped) अदरक
2-3 tbsp Fried onions, तला हुआ प्याज

For Water Mixture
1 tbsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
2-3 cups Warm water, गुनगुना पानी
2 tbsp Ghee, घी

For Garnish
Fried Cashew Nut, तले हुए काजू
Fried Raisins, तली हुई किशमिश
Pomegranate pearls, अनार के दाने
Silver vark, चांदी का वर्ख
Coriander sprig, धनिया पत्ता

For Matar Ka Raita
1 tbsp Oil, तेल
A pinch of asafoetida
½ tsp Cumin seeds
1 cup fresh Green peas
Salt to taste
½ inch Ginger (peeled & finely chopped)
½ tsp Chilli flakes
2-3 tbsp Water
1 cup Curd, beaten
Salt to taste
1 tsp Sugar
Fried Kofta, chopped

For Garnish
A pinch of roasted cumin powder
A pinch of degi red chili powder
Sauteed Matar
Fried kofta, crushed
Coriander sprig

Other Ingredients
Oil for greasing
Oil for frying
400 gms Paneer, cut into diamond shape

Process
Besan Ke Kofte
In a bowl, add green chillies, gram flour, curd, ginger garlic paste, paneer, salt to taste, a pinch of asafoetida, turmeric powder, degi red chili powder and mix it well.
Add a little oil and make a semi thick dough.
Transfer the mixture into a greased tray and keep it aside for further use.
Apply oil on the palm, take a coin size small ball and give it a desired shape.
Heat oil in a kadai, add prepared balls and fry until golden brown.
Transfer it to an absorbent sheet and keep it aside for further use.
Take the remaining mixture and flatten it like a puri.
Transfer it to the hot oil, fry until golden and crispy.
Transfer it to an absorbent sheet and keep it aside for further use.
In the same hot oil, add paneer and fry until golden brown.
Keep it aside for further use,

For Shahi Matar Pulav
In a handi, add ghee & oil, once it's hot, add bay leaf, green cardamom, black cardamom, mace, cumin seeds and let it splutter.
Add fresh green peas and saute well for 2-3 minutes.
Add curd, ghee, salt to taste and saute it for a while.
Layer it with 1st batch sella basmati rice, fried paneer, fried onion and saffron water.
Add the 2nd batch of sella basmati rice, green chili, warm water, fresh green peas, water mixture, fried kofta and cover it with silver foil.
Cook it on low flames for 10-15 minutes until cooked well.
Finish it with some ghee, coriander leaves, ginger, fried onion and give it a gentle mix.
Transfer it to a serving bowl, garnish it with, fried cashew nuts, fried raisins, pomegranate pearls, silver vark and coriander sprig.
Serve hot with prepared matar ka raita.

For Water Mixture
In a bowl, add salt to taste, sugar, warm water, ghee, and mix it well.
Keep it aside for further use.

For Matar Ka Raita
In a pan, add oil, once it's hot, add asafoetida, cumin seeds and let it splutter well.
Add green peas, salt to taste, ginger, chili flakes and saute it for 2-4 minutes.
Add water and cook it for 2-4 minutes until cooked well.
In a bowl, add curd, salt to taste, sugar and mix it well.
Add fried kofte and mix well.
In a serving bowl, add sweetened curd, Sprinkle a pinch of roasted cumin powder and a pinch of degi red chili powder.
Add prepared matar mixture, fried kofta and garnish it with coriander sprig
