2. In a mixing bowl, combine the grated zucchini, drained ricotta cheese, parmesan cheese, spring onion, all-purpose flour, minced garlic, chopped fresh mint, an egg, spices and 1/4 tsp of salt. Mix until everything is well incorporated.
3. Heat a frying pan over medium heat with some olive oil
4. Oil your hands and take spoonfuls of the zucchini and ricotta mixture and flatten them slightly with your hands. Then drop them into the hot oil. Cook for about 3-4 minutes on each side or until they are golden brown and crispy.
5. Remove the spiced ricotta zucchini fritters from the pan and place them on a dish.

Have you ever tried blending some cooked peas and mix them with flour until you get a dough that you roll into logs and make some gnocchi boil and add to your favorite sauce for a deliciousness
What if I told you that you can turn cooked peas and flour into gnocchi with a little extra protein boost? The dough comes together in just a few minutes. Roll it into logs, cut into small pieces, then boil in salted water for about 3 minutes until they float to the top. Finish with your favorite sauce, lots of Parmigiano, and buon appetito.
Ingredients: 150 g all-purpose flour 330 g green peas Salt 1 tbsp oil
Instructions: 1. In a pan with a tbsp of olive oil, cook the peas for a couple minutes until tender with some salt and the lead on. Optionally, you can also boil the peas. 2. Transfer the peas to a food processor or mixer and blend until smooth. If needed add a tbsp of water. 3. Mix the peas with flour until a soft dough forms. 4. Flatten the dough and cut into pieces. 5. Roll each portion into long ropes, then cut into small gnocchi pieces. 6. Cook the gnocchi in boiling salted water for about 3 minutes, or until they float to the surface. 7. Remove with a slotted spoon and toss with your favorite sauce. 8. Serve immediately and buon appetito! 🍝💚 For the sauce: I fried a clove of garlic in a bit of olive oil then added fresh tomatoes and lastly basil. Recipe: 500 ml water (2 cups + 2 tbsp) 2 ripe peaches 2 tea bags (I used black tea) 3 tbsp sugar (you can add more or less if you like) A few mint leaves Ice
Instructions: 1. Boil some peaches with sugar (or other sweetener of choice) and water for 5 minutes. 2. Remove from heat and steep some tea bags in the mixture for 3-5 minutes. 3. Once cooled down, refrigerate until cold. 4. Filter out the peaches using a strainer and then serve the peach iced tea over ice and enjoy!
Notes: Don't throw away the infused peaches, you can add them to so many treats like smoothie bowls, yogurt, oatmeal or even as they are. Stay tuned and I will show you what I made with the leftover peaches.

Instructions: 1. Prepare coffee (I suggest espresso for stronger flavor) and melt the honey in it. Let the mixture cool down. 2. In a bowl, whisk together the whipping cream until stiff. 3. Add the mascarpone and gradually pour in the cooled coffee until you get a smooth and creamy mixture. 4. Arrange the cookies on a tray or plate lined with parchment paper. 5. Scoop or spoon the cream mixture onto each cookie 6. Freeze for about 2–3 hours, or until firm. 7. Melt the chocolate with the coconut oil until smooth. 8. Dip each frozen bite into the melted chocolate, letting the excess drip off. 9. Place back onto the parchment paper and let the chocolate set. Instructions: 1. In a large bowl, mix the water, yeast, and sugar. Stir briefly until the yeast begins to dissolve. 2. Add the flour and salt, and mix until a dough forms. 3. Drizzle a little olive oil and knead until fully incorporated into the dough. 4. Cover the bowl with plastic wrap and let the dough rest for 30 minutes. 5. Gently fold in the chopped olives. Cover again and let rise until doubled in size, about 1½ hours. 6. Transfer the dough onto a floured surface. I like using durum wheat flour for dusting, as it gives the breadsticks a more rustic texture. If you don't have it, regular flour would work too. Gently stretch the dough with your fingers into a rectangle. 7. Cut the dough into long breadsticks and place them on a lined, lightly oiled baking tray. Brush a bit more olive oil on top, cover and let rest for about another hour. 8. Bake at 480°F (250°C) for 13–15 minutes, or until beautifully golden and crisp on the outside. Instructions: 1. Wash the potatoes and boil them whole, with the skin on, in salted water until fork-tender (about 30 minutes, depending on size). 2. Drain and peel while still warm. 3. On a clean work surface, add the flour and make a well in the center. Rice the potatoes directly into the well. 4. Let the potatoes cool slightly, then add the egg and a pinch of salt. 5. Gently bring everything together until a dough forms and avoid overworking it. 6. Divide the dough into portions and roll into long ropes. 7.
