Love to BBQ so I hope to regale you with a few recipes this summer so be on the look out.
Marinate: 1/4 cup Balsamic Vinegar 1/4 cup Soy Sauce 2 tablespoons Worcestershire Sauce 1/4 cup Olive Oil 2 Garlic cloves crushed 1 teaspoon Rosemary 1/4 teaspoon freshly ground Black Pepper
Mix all ingredients, one back will marinate 2 pounds of London Broil.
1) Lightly score meat on both sides 2) Place meat and Marinate in resealable bag, squishing lightly. 3) Refrigerate minimum 4 hours and up to 24 hours. 4) Take meat out or the fridge 20-30 minutes before cooking to bring up to room temperature. 5) Cook with indirect heat 7-9 minutes per side. check with a meat thermometer. 125-135 degrees internal temp will give you a medium rare, 145-155 for medium. 6) You can let the steak rest for 5 minutes before cutting. Or just go to town!
Potatos: 1 hour Russet Potatoes are best for this! 1) Poke holes in each potato with a fork. 2) Run down with Olive Oil 3) Coat with kosher salt or sea salt 4) Wrap in aluminum foil 5) Place on 375-400 degree grill for an hour, turning every 15-30 minutes
Corn on the cob: Grill until done Soak in sink for 20-30 minutes Place on grill, rotating every 10-15 minutes. Done when your finger can pop a corn kernel.

Putting the pick up on the metal of the tin made a very large ground plane. this caused the pickup to ground to my thumb every time I toughed the metal. Moving it to the neck fixed this and you still get good tone and a nice sound.

She's fine, so don't panic! She will be back on the next show and we will be back to our culinary Tour of Equestria.
But here we go, Prench Dip Sandwiches! I got this recipe from Gilda so make of that as you will. Enjoy!

Ingredients: 3 lbs of Beef Chuck Roast (Not Pony) 1/3rd cup low sodium Soy Sauce 1 cup Coca Cola or your favorite Cola product 2 10.5oz cans of Beef Consomme 1/4 cup Minced Dry Onions 1 Tablespoon Beef Paste 1 teaspoon Garlic Powder 1/2 Teaspoon Onion Powder 1/2 Teaspoon Salt (You can leave this out of you wish) 1/4 teaspoon Black Pepper 1/4 teaspoon Dry Thyme 1 Bay Leaf
1) Dry beef with paper towels and make sure the meat is as dry as you can get it. 2) Trim excess fat and silver skin from meat. 3) Salt and pepper the beef heavily 4) In a scorching hot pan, put a little olive oil and place meat into pan. DO NOT MOVE for 2 to 3 minutes. Flip, again leave for 2-3 minutes, then sear each side. 5) place meat into slow cooker, and add all the other ingredients. 6) Place cooker on high and go away for 4 to 5 hours 7) pull out meat and slice or pull apart.. place meat on hoagie rolls 8) place cheese on sandwiches, then put into oven at 225 degrees to melt the cheese. 9) Once melted serve sandwiches with a cup of the juices left in the slow cooker (Au-jus) and your favorite side dish.

Dough: 2 3/4 cups Unbleached All-Purpose Flour or Measure for Measure Gluten-Free Flour 1/3 cup sugar 3/4 teaspoon salt 2 tablespoons baking powder 1/2 cup cold butter 1 cup to 2 cups chopped dried fruit, chocolate or other flavored chips, nuts, or a combination, optional 2 large eggs 2 teaspoons vanilla extract or the flavoring of your choice 3/4 cup half and half or milk Topping Egg Wash
Directions: In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.
Work in the butter just until the mixture is unevenly crumbly; it's OK for some larger chunks of butter to remain unincorporated.
Stir in the fruit, chips, and/or nuts, if you're using them.
In a separate mixing bowl, whisk together the eggs, vanilla or other flavor, and half and half or milk.
Add the liquid ingredients to the dry ingredients and stir until all is moistened and holds together.
Line a baking sheet with parchment; if you don't have parchment, just use it without greasing it. Sprinkle a bit of flour atop the parchment or pan.
Scrape the dough onto the floured parchment or pan, The circle should be about 3/4" thick. Using a knife or bench knife that you've run under cold water, slice each circle into 6 wedges. Carefully pull the wedges away from the center to separate them just a bit; there should be about 1/2" space between them, at their outer edges. Or you can use a circle cutter and make rounds.
For best texture and highest rise, place the pan of scones in the freezer for 30 minutes, uncovered. While the scones are chilling, preheat the oven to 375°F.
Bake the scones for 20 to 25 minutes, or until they're golden brown. When you pull one away from the others, it should look baked all the way through; the edge shouldn't look wet or unbaked.
Remove the scones from the oven, and cool briefly on the pan. Serve warm. When they're completely cool, wrap in plastic and store at room temperature for up to several days. Tips: For a less traditional, slightly sweeter scone, increase the sugar in the dough to 1/2 cup (3 1/2 ounces).
Scones are best served warm. They're delicious as is, but add butter and/or jam, if you like. To reheat room-temperature scones, place on a baking sheet, tent lightly with foil, and warm in a preheated 350°F oven for about 10 minutes.
Why freeze the scones before baking? Because 30 minutes in the freezer relaxes the gluten in the flour, which makes the scones more tender and allows them to rise higher. It also chills the fat, which will make the scones a bit flakier.
These simple scones are a wonderful blank canvas, awaiting your palette of chips, nuts, or fruit. Some of our favorite combinations are butterscotch chips and pecans; chocolate chips and dried cherries; and diced crystallized ginger and diced dried peaches.
Flour is like a sponge; it absorbs liquid during humid weather, and dries out in dry weather. In summer or when it's hot and humid, use the lesser amount of milk or half and half in this recipe; during winter, or when it's very dry, use the greater amount. Either way, start with the smaller amount, and drizzle it in till the dough is the correct consistency.
Want to make scones well ahead of time? Simple. After the unbaked scones' 30 minutes in the freezer (or whenever they're frozen solid), place them in a zip-top plastic bag. Return to the freezer, and store for up to a month. Pumpkin Bread Recipe
4 Tablespoons butter (for lubing of baking pans) 1 3/4 cups All Purpose Flour 1/2 Teaspoon of salt (Koser, please!) 1 Teaspoon Baking Soda 1/2 Teaspoon Baking Powder 1 Teaspoon Cinnamon 1/2 Teaspoon Nutmeg 1/4 Teaspoon Allspice 1/4 Teaspoon Cloves 1 1/2 cups Sugar (less refined the better) 1 cup Pumpkin (Processed or canned) 2 eggs
1) Mix all dry goods as well as Pumpkin in a large mixing bowl. Fold with a spatula, do not over mix!
2) Add eggs and fold in with spatula, mix until just brought together.
3) Butter bread tins with thick coating and pour mixture into pans. fill until just above half way.
4) Place in 375 degree oven for 30 minutes. Test for doneness with a toothpick. If toothpick comes out dry, you are done baking!
5) Let breads rest for 10 to 15 minutes, then pop out of the trays. ENJOY!
Pumpkin Syrup Recipe
1) Take all left over juices from pumpkin roasting and liquid squeezed out of your pumpkin puree and place it into a medium sized sauce pan and place in a cinnamon stick
2) Boil the liquid at a medium simmer until it reduces by 1/2 volume.
3) Remove cinnamon stick and add ground clove, ground ginger and brown sugar to taste. You will have to play with the measurements here. Start with a little and add as you go.
4) Take 1/4 cup of Tapioca Starch and add to a cup of water and mix together. Slowly add the Tapioca water to the pan and watch the syrup thicken. When you get the consistency you wish, stop!
5) Turn off the heat and chill mixture. Transfer to a squeeze bottle and refrigerate until use. you can warm it up in the microwave, or in a pan of hot water.
Pumpkin Seeds!
1) Remove all pumpkin seeds from stringy mess you pulled out of your pumpkin. Rinse!
2) Put seeds on a paper plate and let them fully dry for at least 24 hours.
3) Coat seeds with a light oil and arrange on a cookie sheet. dust lightly with kosher salt.
4) Place in 375 degree oven for 5 to 10 minutes. watch them carefully! As soon as they turn golden brown and delicious, remove and let cool! But the song was written by Johnny Marks in 1962 and was released by The Quinto Sisters on their album "Holly jolly Christmas"
The version we all know is a slowed down version from the Rankin Bass recording and recorded in 1965 for Burl Ives Christmas album "Have a Holly jolly Christmas" and it's the version Keyframe and I have covered here.

Opened in April of 1955 and Liberace himself was the first featured entertainer. Elvis played there as well as the Rat Pack. Many movies were filmed there. Sure, it had it's problems but the ghosts of Las Vegas past will all go into the night if they are not remembered.
As a building, I loved the place. Don't kick a poor old showgirl when she's down.

Brony Chef’s “Maryke Hendrike’s” Taco Recipe
Guacamole
1- Serrano chili Yellow 1- Serrano Chili Green small (hot) 1- Tomatillo 1/2 White Onion 1- Medium Tomatoe 2- Avocados Coreander 1 Mango Sour Creme Salt and Pepper to taste
Chop 1/2 of the small green chili until fine using the seeds, add to mixing bowl Chop the white chili fine, remove seeds, add to mixing bowl Dice 1/2 of the onion, add to mixing bowl Dice Tomato, add to mixing bowl Slice Tomatillo into thin rounds, Add to mixing bowl Skin and cube Mango, Add to mixing bowl Split, core and scoop 2 Avocado, add to mixing bowl
Mash ingredients together, Add salt and pepper to taste Add enough sour creme to make a nice creamy mixture. Add chopped coriander for garnish
Taco filling
1/2 onion, diced 1 Serrano Chili, diced 1 red peper, diced 1 Zucchini, cubed 1 medium tomato, diced Chili powder Sour Creme Mexican blend Cheese
Heat a skillet on high heat with Peanut oil, enough to sauté
Add onion to hot oil and cook until just turing translucent Add red pepper, sauté until warm Add Chili, sauté Add Tomato, saute Add Zucchini, sauté
Add chili powder, sauté
Add sour creme, enough to bring together to a sauce Add Cheese, enough to make it a nice cheesy, yummy awesomeness
To a taco shell add the cheese mixture, followed by the avocado mixture. Dress with sliced Tomatillo and a wedge of line.
You can add diced chicken for a kick of protein and flavor!

We make a wonderful dish called Roasting Pan Chili and it's full of flavor and protein and all kinds of good stuff! It can be used as a base for so many different dishes, I'll just let you watch the video. I bet it makes you hungry though!
Recipe :
3 - 28 oz. cans of diced tomatoes 2 - 28 oz. cans of red kidney beans 2 - 28 oz. cans of black beans 2 - 12 oz. cans of corn niblets 1 1/2 c. short grain white or brown rice 2 tbsp. chili powder 1 tsp. red pepper flakes 2/3rd c. grape seed oil Chopped cilantro, for garnish Sour cream mixed with plain yogurt, for garnish
Empty cans of corn and tomatoes with their voices into a large roasting pan. Put contents of bean cans into a large colander and run cold water over the beans while carefully fingering through the beans to remove thick liquid. Once thoroughly rinsed, add to roasting pan.
In a small bowl, since rice well. Add rice, but not the rinse water, to the pan. Pour in oil, add spices and gently stir until evenly mixed.
Bake at 350 degrees, covered, for about 2 1/2 hours. At around the 90 min mark, take out and stir. The rice will still be a little hard. Break up any clumps to distribute the rice throughout. Continue to roast until rice is cooked through. It will thicken as it roasts, but you can thicken it further by mashing a portion of the chili, or by adding dehydrated black beans, or a can of refried beans.
Eat chili as is, or roll into tortillas and top with grated cheddar. Bake at 350 degrees for 30 to 45 minutes or u until cheese melts and browns. Top with Salsa.
