OLD BAY HOT SAUCE Oven Baked BBQ Chicken Thighs Recipe

INGREDIENTS:
6-8 bone in skin on chicken thighs - cleaned and trimmed
1-2 tbsp. old bay seasoning to season chicken thighs
Sauce:
1/2 cup Old Bay Hot Sauce
1/4 cup melted butter
*Mix well
Preheat oven to 400 degrees
30 minutes - 400d flip chicken
15 minutes - 400d drain juices, place skin side down and baste with sauce
10 minutes - 400d drain juices, flip chicken, baste with sauce
10 minutes - 425d baste with sauce
2 minutes - put under broiler to caramelize
10 minutes - let chicken rest before serving.
Enjoy.

INGREDIENTS:
6 bone in skin on chicken thighs - cleaned and trimmed
season both sides with salt and pepper
1/4 cup oil - for frying chicken
*In medium high skillet add oil and place chicken thighs skin side down.
Let cook for 3-4 minutes or each side and remove from pan
1 cup diced onion
1 large diced carrot
1 package sliced mushrooms
3-4 cloves minced garlic
1/2 cup white wine or white cooking wine - optional
1 1/4 cup chicken broth
1 tsp. thyme
1/2 tsp. rosemary
2 tsp. parsley
1 - 40oz can drained butter beans
In same skillet on medium heat and about 2 Tbsp. of leftover oil, add
onions and carrots.
Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for 3-4 minutes.
Add garlic, salt and pepper. Cook and stir for another minute.
Add wine, deglaze pan and let cook for one minute to cook off alcohol. This is optional.
Add chicken broth. Turn heat up to bring to simmer.
Add spices, stir, bring to simmer and let cook one minute.
Turn off heat.
Add butter beans. Stir.
Place chicken skin side up in pan.
Bake at 400 degrees Farenheit for 30 minutes or until done.
Remove chicken, cover and let rest 10 minutes.
Serve with rice or a good homemade slice of bread OR corn muffin.
Enjoy.

Chicken Skillet Sauerkraut Pierogi Recipe | It's a Pennsylvania Thing
INGREDIENTS:
5-6 bone in chicken thighs - seasoned with salt and black pepper
16 oz. jar/can of sauerkraut - rinse if too salty
12 frozen pierogi
1 cup diced onion
1 tsp. minced garlic
1/2 cup chicken broth
salt and black pepper
4 Tbsp. vegetable oil
In a skillet on medium high heat add oil and place chicken skin side down.
Let cook untouched for 3-5 minutes or until a golden crust forms.
Flip chicken over, cook for an additional 2 minutes and remove from pan.
In same skillet on medium heat add onions. Cook and stir for 3 minutes.
Add minced garlic, stir and cook for 30 seconds.
Add sauerkraut, black pepper to taste and chicken broth. Stir to incorporate.
Place chicken skin side up in pan.
Bring to light simmer, cover and cook for 10 minutes.
Place pierogi on top and along the side.
Cover and cook an additional 15-20 minutes or until chicken is done.
Serve and enjoy.

INGREDIENTS:
1 1/2 - 2 pounds 1" cubed boneless chicken breasts
5 medium bite size diced potatoes
1 packet of Ranch seasoning
salt to taste
1/4 tsp. black pepper
1 tsp. garlic powder
2 tsp. paprika
1 tsp. Nashville chicken seasoning OR seasoning of your choice
3 Tbsp. extra virgin olive oil
1/2 to 3/4 cup cooked crumbled bacon
1/2 to 3/4 cup chopped garden onions
1 to 1 1/2 cup grated cheddar cheese
In a bowl add chicken, potatoes and olive oil. Stir to coat.
Add seasonings and mix thoroughly.
Pour in greased baking dish.
Bake at 400 degrees uncovered for 40 minutes.
Top with bacon, onions and cheese. Bake for an additional 5 minutes or just until cheese
is melted.
Serve and enjoy.

INGREDIENTS:
3-4 lbs. Roma tomatoes - cleaned, halved and cored
1/2 medium onion
3-4 large cloves garlic
1/4 tsp. each salt/black pepper
2-3 Tbsp. olive oil
*Mix together in bowl
1 quart chicken broth
1/4 cup packed fresh basil leaves - divided
2-3 fresh sprigs oregano - divided
1/4 tsp. garlic powder
salt and pepper to taste
1 tsp. sugar
croutons
grated cheddar cheese
In a large bowl place tomatoes, onions, garlic, salt, black pepper and extra virgin olive oil.
Toss until coated.
Place on parchment lined baking sheet single layer cut side up.
Bake at 400 degrees for 45min to 1 hour until tomatoes are soft and slightly charred or edges.
Place tomatoes/onions/garlic in soup pot on medium heat.
Add broth, bouillon and tomato paste.
Bring up to simmer and cook for 5 minutes.
Add half of fresh herbs and blend until smooth.
Add seasonings and cook for 2 minutes.
Add second half of fresh herbs, stir and cook for another 2 minutes. Remove from heat.
Ladle tomato soup into oven proof soup bowls.
Top with croutons and a nice layer of cheddar cheese.
Bake in 375 degree oven for a minute or two or until cheese is melted and bubbly.

Croutons:
Cubed bread
olive oil

*Bake at 350 degree oven for 20-25 minutes or until dry and golden brown.
In a soup pot on medium heat add oil, butter and onions.
Cook and stir for 10 minutes.
Add 1/4 tsp. sugar. Stir and cook for an additional 15-20 minutes or until the onions
have caramelized. Gradually decrease temp to a low medium.
Add minced garlic and stir for another minute.

Homemade Cream of Mushroom Soup Recipe
INGREDIENTS:
4 cups sliced mushrooms - Cremini or Button
1 medium diced onion
2 stalks diced celery
6 cups vegetable or chicken broth
1 cup heavy cream
2-3 cloves minced garlic
sprigs of thyme or 1/4 tsp dried thyme
salt and black pepper to taste
2 tbsp. flour
1 tbsp. butter
1 tbsp. olive oil
In a large pan on medium heat add butter and olive oil. Let butter melt.
Add onions and celery. Cook and stir for 3-4 minutes.
Add mushrooms and garlic. Cook and stir for 10-15 minutes. Let a little liquid on the bottom.
Add flour, cook and stir for 1 minute.
Add broth a little at a time. Turn heat up to medium high and bring soup up to a simmer. Add thyme, salt and black pepper to taste. Simmer for 15-20 minutes.
Take out half or 3/4 of soup and blend until smooth. Add back into pan.
Add cream and cook for 3-5 more minutes.

Asian Cabbage Spring Rolls Recipe
INGREDIENTS:
Napa cabbage leaves - blanched and cooled
1 pound ground chicken
1/4 cup sesame oil
2-3 tbsp. hoison sauce
6-8 cloves minced garlic
1 tbsp. minced ginger
1 cup diced onions
3-4 chopped red chilies - optional
cold cooked vermicelli noodles
carrots
green onions
cucumbers
snow peas
In a pan on med high heat add sesame oil, minced garlic and ginger.
Cook and stir for 20 seconds and then add in ground chicken.
Cook and stir for 4-5 minutes or until the chicken in no longer pink.
Add in minced onions and red chilie peppers (optional).
Cook and stir for 2-3 minutes.
Add in hoison sauce. Cook and stir for a couple minutes and then
remove from heat, let completely cool and refrigerate.
This chicken mixture also freezes well.
Spicy Garlic Sauce:
1/4 cup water
2 tbsp. soy sauce
1 tbsp. shaoxing wine
1 tsp. minced garlic
1 tsp. minced ginger
1 tbsp. honey
1/2 tsp. sesame oil
green onions
red chilies
*Mix above ingredients
Asian Peanut Sauce:
1/4 cup creamy peanut butter
2-3 tbsp. soy sauce
1 tbsp. honey
1/2 tsp. sesame oil
*Mix above ingredients until smooth
Have all of your ingredients prepped, cold and ready.
Spoon on some of the chicken mixture, then vermicelli and then top with vegetables of your choice. Roll in cabbage leaf. Tuck in the sides if you can.
Cut and serve with side sauces.

Cabbage Rolls Recipe ~ Easy Stuffed Cabbage Roll
INGREDIENTS:
1 head of cabbage - you want 8-12 cabbage leaves - blanched
1-2 pounds ground beef
3/4 cup finely diced onions
1/2 cup finely diced bell peppers
1/4 cup chopped fresh parsley or 2 tsp. dried parsley
1/2 tsp. garlic powder
salt and black pepper
1/2 cup bread or panko crumbs mixed with 1-2 tbsp. milk - let rest for 5 minutes
1 egg
1 cup cooked rice
EVOO for cooking onions and bell peppers
*Saute onions, bell peppers, salt and pepper until soft, remove from heat and cool.
In a large bowl mix ground beef, cooked vegetable mixture, panko crumb/milk mixture, cooked rice, egg, parsley, salt, black pepper and garlic powder.
Sauce:
1 - 28oz can tomato sauce
2 tbsp. brown sugar
3 tbsp. red wine vinegar
1 tbsp. Worcestershire sauce
Remove rib from blanched cabbage leaves. Spoon a couple tablespoons or so of meat mixture
on the rib end of the cabbage leaf. Roll, tuck in sides and continue to roll to end.
Place a little of the sauce on bottom of baking dish.
Place cabbage rolls seam side down.
Pour remaining sauce on top of the cabbage rolls.
Cover with foil and bake at 350 degrees F for one hour.
Enjoy.

1 tsp. chili powder
1 tsp. smoked paprika
1 tsp. cumin
1 cup corn
1 cup rinsed and drained black beans
1 cup grated cheese - cheddar or mix
chopped green onions
1 box corn muffin mix
1 egg
1/3 cup milk
1/4 cup corn
1/4 cup grated cheddar cheese
*Mix above ingredients. Do not over mix
Preheat oven to 400 degrees Farenheit
In a pan on medium high heat add a little oil and chicken.
Cook and stir for 2-3 minutes or no longer pink.
Add diced onions, bell peppers and a little salt.
Cook and stir for another 2 minutes.
Add minced garlic and stir.
Add seasonings. Stir and cook for another minute.
Add tomato sauce and stir.
Add salsa, green chilies, corn and black beans.
Stir, bring up to a simmer and cook for 2-3 minutes.
Turn off heat.
Add a little grated cheese on top of beef mixture.
Add corn muffin mix by spoonfuls on top of mixture and spread out
as best as you can.
Bake at 400 degrees farenheit for 25 to 30 minutes.
Remove from oven and top with more grated cheese and chopped onions.
Let cool for 10-15 minutes before serving.
Enjoy.

INGREDIENTS:
4 cups cooked chicken
2 cups chicken broth
1 1/2 cups milk
1 cup diced onion
1 cup diced bell peppers
8oz sliced mushrooms
1/2 cup butter
1/2 cup flour
1/3 cup heavy cream
2 cloves minced garlic
1 tsp. better than bouillon roasted chicken
2 egg yolks
1 cup frozen peas
1 cup chopped pimentos
1/4 tsp. plus to taste of salt
1/4 tsp. black pepper
In a pan on medium heat add butter, onions and bell peppers.
Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for 5-7 minutes.
Add minced garlic, salt and black pepper. Cook and stir for 30 seconds.
Add flour. Cook and stir for one minute or until incorporated.
Slowly add chicken broth and milk. Turn heat up to bring to simmer.
Add better than bouillon and any other seasonings.
Cook and stir for a couple minutes or until thickens.
Temper eggs into sauce. Cook and stir for a couple minutes.
Add frozen peas and pimentos. Cook and stir until combined.
Add cooked chicken. Cook and stir for a couple minutes until chicken heated through.
Serve and Enjoy.

In a skillet on medium heat add butter, minced garlic, onions, bell peppers and salt.
Cook and stir for 3-4 minutes and remove from heat.
Cook spaghetti for 7 minutes or just shy of being done. Break in half before cooking.
In a large bowl add cream of mushroom soup, chicken broth and stir.
Add sauted vegetables, pimentos, black pepper and oregano. Stir.
Add cheese and stir. Add cooked chicken and stir.
Place in greased 9 x 13 baking dish and level out.
Bake at 350 degrees Farenheit covered for 30 minutes.
Uncover. Sprinkle with cheese and bake uncovered for an additional 10 minutes.

Chicken Marinade:
2 tbsp. Lawry's seasoning

1 tsp. poultry seasoning

5-8 bone in skin on chicken thighs
salt and black pepper
avocado oil
butter
thyme
garlic powder
8 cloves minced garlic
1/3 cup brown sugar

1/2 to 3/4 cup chicken broth
1/4 cup soy sauce
2 Tbsp. honey
slurry: 2 tbsp cornstarch with 3-4 tbsp. water
Clean, trim and pat dry chicken thighs. Season both sides with salt and black pepper.
Add 3 tbsp. avocado oil and 2 tbsp. butter in med high skillet.
Place chicken skin side down and cook for 3-4 minutes or until crust forms.
Flip and cook another 2 minutes and remove from pan.
Keep a couple tbsp. of fat in pan and add 2 tbsp. butter.
On medium heat add minced garlic and red pepper flakes. Cook and stir for 30 seconds.
Add brown sugar and stir until it is absorbed by fat.
Add chicken broth, soy sauce, honey and thyme. Bring up to a simmer.
Add slurry and stir until thick. Turn off heat.
Add chicken and turn in sauce until coated. Add chicken juices.
Sprinkle with thyme and garlic powder.
Bake 400 degrees Farenheit for 30-40 minutes. Internal temp for fall apart
chicken is 190 to 200 degrees.
Remove from oven and baste with sauce. Let rest for 10 minutes before serving.

2 pounds of cubed cod fish fillets
Oil for frying
TARTAR SAUCE:
1 cup mayonnaise
2 Tbsp. sweet relish
1 tsp. Dijon mustard
1 Tbsp. lemon juice
1 tsp. Worcestershire sauce
1 Tbsp. chopped capers - optional
salt and 1/8 tsp. white or black pepper
1/2 tsp. sugar
*Mix well and refrigerate for at least one hour before serving
FLOUR MIXTURE:
1 cup self rising flour
1 Tbsp. Old Bay seasoning
1/4 tsp. white or black pepper
salt to taste
*Mix above ingredients well in a dish
BEER BATTER:
1 cup self rising flour
2 Tbsp. cornstarch
1 tsp. baking powder
1+ cup of beer
*Mix well and refrigerate for 30 minutes before using
Season fish each side with salt, white pepper and Old Bay seasoning.
Dredge fish in flour mixture, then into beer batter.
Shake off excess and place in 375 degree oil.
Fry for 4-5 turning occasionally. This depends on the size and thickness
of the fish.
Place on wire rack to drain.
Serve with tartar sauce.

1 28 oz can diced tomatoes
1 cup diced onions
1 small diced bell pepper

12-15 capers - drained
1/2 cup sliced olives - I used Spanish and Kalamata
salt and black pepper

In a pan on medium heat add oil, diced onions, bell peppers, minced garlic, salt and black pepper.
Cook and stir for 2-3 minutes.
Add capers, cook and stir for an additional minute.
Add diced tomatoes and juice and basil pesto. Stir.
Add bay leaves, bring up to a simmer and cook for 5 minutes.
Transfer sauce to baking dish. Add olives and place fish on top.
Season fish with salt and pepper.
Bake at 400 degrees for 15 to 20 minutes or until flaky and done.
Serve with pasta or rice.

1 cup finely diced onion

4 chopped red chilies
1 cup fresh thai basil
oil
Garnish: lime, crispy fried egg
In same skillet as you cooked the shrimp (should have 2-3 tbsp. oil on bottom),
add minced garlic, ginger and red chilies.
Cook and stir for 30 seconds.
Add diced onions and cabbage.
Cook and stir for 5-8 minutes or until tender.
Add cooked rice, shrimp and juices back into pan. Pour over sauce.
Cook and stir until incorporated. This will take a couple minutes.
At end add fresh Thai basil and any other spices that you like.
Stir one more time and serve.

whole pepperoni for the top

1 - 15oz can diced tomatoes
2 tbsp. tomato paste
1 tsp. oregano

1/2 tsp. garlic powder
1/2 tsp. onion powder
salt and black pepper
1/4 cup olive oil
Season chicken fillets with olive oil, salt and black pepper.
In an oven proof skillet on medium high heat add oil and chicken fillets.
Cook and brown for 3-5 minutes on each side until done.
Remove the chicken from the skillet.
In same pan with about 2 tbsp. oil, add onions, bell peppers and mushrooms.
Cook and stir for about 5 minutes or until veggies release moisture and
deglaze the pan.
Add quartered pepperoni. Cook and stir for one minute.
Add roasted red bell peppers and minced garlic.
Cook and stir for about 30 seconds and then add tomatoes and tomato paste.
Stir to combine.
Add spices, stir, bring up to simmer and cook for 5 minutes.
Add chicken back into pan and coat with sauce.
Place sliced mozzarella and pepperoni on top.
Place in preheated 425 degree Farenheit oven for 5 minutes and then
place under broiler until cheese is melted and starting to brown.

INGREDIENTS:
2 cups raspberries
3/4 cup orange/apple/berry juice
1 cup flour
2 tsp. baking powder
1/4 cup unsalted butter - room temp
1/2 cup sugar
1/2 cup milk
well buttered baking dish
Preheat oven 350 degrees Farenheit
Cream butter and sugar together.
Add baking powder to flour and mix well.
Add flour mixture to creamed butter/sugar alternating with milk.
Mix in between and mix just to combine. Do not overmix.
Pour batter into well buttered baking dish and level out.
Sprinkle berries on top.
Pour juice on top.
Bake 350 degrees F for 45-50 minutes until firm and golden brown on top.
Let rest for 30 minutes before serving.

1 cup shortening/butter

BLUEBERRY MIX:
1/2 cup sugar
4 tsp. cornstarch
4 cups blueberries
*gently toss to mix
ICING:
1/2 cup confectioners sugar
1 tsp. or a little more of orange juice/milk
*Mix until drizzle consistancy.
Use 9 x 13 greased and parchment lined baking dish
Bake at 375 degrees Farenheit for 45 minutes
Place 1/2 of flour crumb mixture on bottom of pan, spread out evenly and tamp down.
Place blueberries on top of crust and level out.
Sprinkle remaining of flour crumb mixture over the top.
Sprinkle sliced almonds on top.
Bake at 375 for 45 minutes and golden brown on top.
Completely cool before cutting.
Drizzle icing over top.
Enjoy.

Chop and brown until fine and no longer pink.
Add minced garlic, diced onion and bell pepper.
Cook and stir for 2 minutes.
Add spices. Cook and stir for one minute.
Add diced tomatoes and chicken broth.
Turn up heat to bring to simmer. Stir and cook for a couple minutes.
Add pasta and stir. Bring to simmer, cover and cook for 9-12 minutes
or until pasta is tender, stirring occasionally.
Turn off heat.
Add half of shredded cheese and cream cheese. Stir until incorporated.
Sprinkle top with chopped green onions and remaining cheese.
Place under low broiler until cheese is melted.

2 cups shredded cheddar or Monterey Jack cheese - separate 1/2 cup
In a skillet on med high heat add ground beef. Cook and chop until no longer pink.
Drain any excess fat if needed.
Add diced onion. Cook and stir for 2 minutes.
Add diced bell pepper and seeded jalapeno. Cook and stir for 2 minutes.
Add minced garlic and seasonings. Cook and stir on med heat for one minute.

Cover with foil and bake 375 degrees Farenheit for 20 minutes.
Sprinkle with cheese and bake uncovered an additional 5-10 minutes.
Garnish. Let rest for 10 minutes before serving.

1 cup sliced beef

12-18 shrimp - cleaned
2 eggs whites whisked (save yolks)

*Divide egg whites evenly between meats. Add 1 tsp. cornstarch to
each meat. Mix each one well and let rest for 10 minutes.
Cook meats individually.
On high heat add oil to pan. Add meat and let set for 10-15 seconds
before stirring. Cook and stir for 2-3 minutes until meat is done.
Remove from pan and set to the side.
*2 egg yolks plus 1 large egg - add oil to medium heat pan.
Add eggs, cook and chop into little pieces. Remove from pan.
4 cups cooked jasmine rice
4-5 cloves minced garlic
4-5 garden onions - whites and greens separated
1/4 cup diced carrots
1/4 cup diced bell pepper
1/2 cup peas
1-2 chopped red chilies - optional
1 tsp. mushroom dark soy sauce - I use Pearl River
1-2 tbsp. oyster sauce
oil - I use avocado oil
In medium high heat pan add minced garlic and whites of garden onions.
Cook and stir for 15 seconds.
Add diced carrots and bell peppers. Cook and stir for 2 minutes.
Add red chilies - optional.
Add rice, meats, eggs, oyster sauce and dark soy sauce.
Cook and stir to combine.
Add in chopped green onions. Give final stir and serve.

2 tsp. unsalted butter
2-3 tbsp. reserved bacon fat
*Whisk eggs. Add butter to medium heat pan. Scramble eggs until done and then remove from the pan.
*Add bacon to same pan. On medium high heat cook until crispy, remove, drain on paper towel and crumble into pieces. Reserve 2-3 tbsp. of bacon fat.
In same pan on medium to med high heat with bacon fat, add whites of garden onions, bell peppers, salt and black pepper.
Cook and stir for 1-2 minutes.
Add minced garlic, cook and stir for 1 minute.
Add rice, cook and stir until combined.
Add light soy sauce and oyster sauce. Cook and stir to combine.

Chinese Sweet and Sour Chicken Stir Fry Recipe

1 pound cubed boneless chicken breasts or thighs
1 Tbsp. light soy sauce
1/8th tsp. white pepper
1 Tbsp. cornstarch
*Mix above thoroughly
Add 3-4 Tbsp. flour to coat thoroughly
Heat pan with oil to 350 degrees. Fry for 4-5 minutes flipping occasionally
or until golden crust is formed. Fry in 2-3 batches and be careful not
to over crowd the pan. Remove chicken from pan and drain on paper towel or
wire rack.
SAUCE:
1/2 cup water
1/3 cup pineapple juice (can with chunk pineapple)
2 Tbsp. light soy sauce
3 Tbsp. ketchup
1/4 cup brown sugar - you can make sweeter if you wish
3 Tbsp. white vinegar
2 tsp. cornstarch
1/4 tsp. five spice powder - optional but I like it.
*Mix above ingredients thoroughly.
Remember to give one last stir before pouring into pan.
Additional ingredients:
1 cup diced onions
1 cup diced bell peppers
1 pound quartered button mushrooms
4 large cloves minced garlic
1/2 to 1 cup chunk pineapple (same can with pineapple juice)
oil
In skillet or wok on medium heat add oil, minced garlic and diced onions.
Cook and stir for one minute.
Turn heat up to med high and add diced bell peppers.
Cook and stir for 2 minutes.
Add mushrooms, cook and stir for 4-5 minutes.
Add pineapple chunks and pour sauce over top.
Turn heat up to high to bring to simmer.
Cook and stir for 1-2 minutes or until sauce thickens.
Add chicken back into pan.
Cook and stir until all is coated with sauce.
Serve immediately.

1 tbsp. cornstarch
1/2 tsp. sesame oil
*Mix above ingredients well.
In wok or pan on medium to med high heat add oil, minced garlic and ginger,
whites of garden onions and water chestnuts.
Cook and stir for one minute.
Add bell peppers, cook and stir for one minute.
Add snow peas, yellow squash and whole red chilies(optional).
Cook and stir for 3-4 minutes or until veggies start to get tender.
Don't overcook.
Add cooked chicken and juices. Stir to combine.
Add chopped green onions and sauce.
Turn heat up to med high to high.
Cook and stir for one minute and the sauce will thicken.
Serve with steamed jasmine rice and enjoy.

1 1/2 tbsp. baking powder
1 tbsp. sugar

5 tbsp. diced cold unsalted butter
1/2 cup heavy whipping cream
1/2 cup cold milk
1/2 tsp. vanilla extract
Macerated strawberries:
1-2 pounds strawberries cleaned and sliced
1/4 cup sugar
Combine dry ingredients and sift together.
Add cold butter and cut into flour mixture until course crumbs.
Stir together heavy cream, milk and vanilla extract.
Pour into flour mixture and stir together until it starts for form
then turn out onto a well floured surface.
Pat and shape into rectangle. Fold in half and pat into another
rectangle. Fold in half again and shape back into rectangle.
Cover with tea towel and rest 30 minutes at room temperature.
Lightly roll dough to approx. 3/4" thick and cut biscuits.
Transfer to parchment lined baking sheet.
Lightly brush with egg wash and sprinkle with sugar (optional).
Bake at 425 degrees Farenheit for 13-15 minutes or until golden brown.

1 1/4 cup all purpose flour
2 Tbsp. cold unsalted butter cut into small pieces
4 Tbsp. cold vegetable shortening cut into small pieces
1/2 tsp. salt
4-6 Tbsp. cold water
*Add flour, salt, butter and shortening to food processor.
Pulse a couple times. Slowly add water until dough forms and comes together.
Form into ball, wrap in plastic and refrigerate for at least an hour.
Roll the dough into about a 12 inch circle and place it in the pie plate
Trim the extra dough leaving about 1" over hang.
Fold the edges under and crimp the edges.

Pour blackberries into pie shell and slightly level out.
Place 1 tbsp. butter cubed over top.
Place on top crust or lattice and secure with brushed milk.
1 tbsp. cold butter - cubed into 9 pieces
milk for brushing on crust
Brush top with egg wash or cream or milk.
Bake at 425 degrees Farenheit for 20 minutes and then
400 degrees for another 20-30 minutes.
Cover crust if it starts to get too brown.

1 pound thinly sliced 1" boneless skinless chicken thighs
1 Tbsp. soy sauce
1 Tbsp. rice vinegar
pinch of salt
1/8 tsp. white pepper
*Mix above ingredients and marinate for 15 minutes
SAUCE:
1/4 cup water
1 Tbsp. soy sauce
1 1/2 Tbsp. dark mushroom soy sauce
2 Tbsp. oyster sauce
1 tsp. garlic chili sauce
1 light Tbsp. brown sugar
1 tsp. sesame oil
*Mix above ingredients well.
1 pound cooked lo mein noodles
1 cup thinly sliced onions
1 cup thinly sliced bell pepper
1 cup snow peas
1 cup thinly slice bok choy - white and greens separated
1/2 cup chopped green onions
6 red chilies halved and seeded
4-5 cloves minced garlic
oil
In a wok or pan on high heat add oil and chicken.
Spread out, let cook 20 seconds and stir.
Cook and stir for 4-5 minutes until done. Remove and set to side.
In same wok on med high heat add oil, onions and peppers.
Cook and stir one minute.
Add minced garlic. Cook and stir one minute.
Add bok choy and red chilies. Cook and stir one minute.
Add snow peas. Cook and stir one minute.
Add chicken, bok choy greens, cooked lo mein and sauce to vegetables.
Cook and stir to combine and noodles heated through.
Add chopped green onions. Toss a couple more times and serve.
Enjoy.

2 - 40oz cans Great Northern Beans - rinsed and drained
1 cup tomato sauce

1/2 cup brown sugar
1/2 cup molasses
1 tbsp. Worcestershire sauce
2 tbsp. apple cider vinegar

1/4 tsp. onion powder
Cook bacon and onions on medium heat until bacon edges are crispy and onions are tender.
Add mixture in with beans.
Add remaining ingredients and stir to combine.
Bake at 350 degrees Farenheit covered for 1 hr. 15 minutes to 1 hr. 30 minutes.
Stir every 30 minutes and add water if/as needed.

Dressing:
2 eggs
3/4 cup white sugar

3 tbsp. butter
*Place above ingredients in medium saucepan and whisk together.
Bring to a boil on medium heat stirring constantly. This will take about 10-15 minutes.
Once thickened, remove from heat, cool to room temp then refrigerate until cold.
Once cold, add mayonnaise and stir and add to potato salad.
Stir all ingredients together and refrigerate for at least 4-6 hours, overnight is better!

INGREDIENTS:
4-6 links of hot Italian sausage
1 large finely diced onion
1 finely diced bell pepper
8oz finely diced mushrooms
4-5 cloves minced garlic
1 - 28oz can tomato sauce
1 - 28oz can crushed tomatoes
1 small can tomato paste
1 tsp. plus 1 tsp. Italian seasonings
1 tsp. oregano plus
1 tsp. basil
1 tsp. garlic
1 Tbsp. sugar
1/2 cup grated parmesan cheese
red pepper flakes - add if you want more spicy
olive oil
salt and black pepper
In a skillet on medium heat add oil and hot italian sausage.
Cook and brown on two sides and remove from the pan.
In same pan on medium heat add a little more oil, onions, bell peppers
and mushrooms.
Cook and stir for 5-7 minutes or until veggies soften.
Add salt, pepper and minced garlic. Cook and stir for one minute.
Add tomato paste. Cook and stir until incorporated and starts to turn color.
Add tomato sauce and crushed tomatoes. Stir and bring up to a simmer.
Add 1 tsp. each of Italian seasonings, oregano, basil and granulated garlic.
Add sugar. Add red pepper flakes for more spiciness. Stir to combine.
Place sausage back into pan. Bring to simmer. Cover and cook for 30 minutes occasionally stirring.
Uncover and stir. Add another tsp. Italian seasonings and any other seasonings you may like.
Add in grated Parmesan cheese. Stir to combine. Cover and simmer for another 15 minutes.
Serve with pasta and garnish with Parmesan cheese.

Ground Beef and Hash Brown Potato Casserole Recipe

INGREDIENTS:
30 oz. frozen hash browns - thawed
1 pd. ground beef
1 cup diced onions
1 1/2 cups diced mushrooms
1 cup frozen peas
4 cloves minced garlic
2 cans cream of mushroom soup
1/2 can milk
2 cups shredded cheddar cheese - divided
salt and pepper to taste
In a skillet on med high heat add ground beef. Chop and cook until no longer pink.
Drain excess fat.
Add onions, mushrooms and pinch of black pepper.
Cook and stir for 3-5 minutes or until onions change color.
Add frozen peas and minced garlic.
Cook and stir for one minute and then remove from heat.
In large bowl add thawed hash browns, cream of soups, half of shredded cheeze, milk and black pepper.
Mix well to combine.
Add meat/vegetable mixture to hash browns and stir to combine.
Pour mixture into lightly greased 9 x 13 baking dish and level out.
Sprinkle top with other half of cheese.
Bake 350 degrees for 40-45 minutes or until slightly golden and bubbly.
Let rest for 10 minutes before serving.

2-3 pounds chicken flats and drums
3-4 Tbsp. oil
2 tsp. Lawry's seasoning

*Mix well and coat wings thoroughly.
Place on rack top side down.
Bake at 425 degrees for 20 minutes.
Flip to top side up and bake 30 more minutes.
Sauce:

2/3 cup hot sauce

1-2 Tbsp. Old Bay Seasoning
1/4 cup honey
Mix above ingredients.

1 cup clam juice
1 1/2 cups chicken broth

3 Tbsp. butter
In a skillet on medium heat add butter, onions, celery, salt and black pepper.
Cook and stir for 3-4 minutes or until the onions soften.
Add bell pepper and garlic. Cook and stir for 1 minute.
Add rice. Cook and stir for 2-3 minutes.
Add tomatoes and stir.
Add clam juice and broth. Stir. Turn heat up to bring to simmer.
Add spices, fish and shrimp. Stir and bring to simmer.
Cover tightly and lower heat to low setting. Cook for 20 minutes.
Turn off heat and let rest for 10-15 more minutes. Do not lift lid.
Remove lid and garnish.

5-6 bone in skin on chicken thighs- cleaned and seasoned with salt & pepper
1 medium diced onion
2 stalks diced celery
1 8oz. packed diced mushrooms
3 cloves minced garlic
1 package long grain & wild rice mix
2 cups chicken broth
1 can cream of chicken
1/4 cup fresh chopped parsley
salt and black pepper
2-3 Tbsp. oil
In an oven proof skillet on medium high heat add oil and place chicken skin side
down. Season both sides with salt and pepper.
Cook for 3-4 minutes or until skin is golden brown and then flip.
Cook for an additional 1-2 minutes and then remove from the pan.
On med heat add onions and celery. Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for another 3-4 minutes.
Add garlic, stir and cook for 30 seconds.
Add rice. Cook and stir for 1 minute.
Add broth and stir to incorporate.
Add seasoning packet, fresh parsley and any other herbs.

INGREDIENTS:
5-6 bone in skin on chicken thighs - cleaned and trimmed and dried
1 small cubed sweet onion
4 medium peeled and cubed russet potatoes
1 1/2 cup mini cut carrots
1 cup chicken broth
1/3 cup white wine
3 cloves minced garlic
1/2 tsp. thyme
1+ tsp. Herbes De Provence
salt and black pepper
1 Tbsp. Dijon mustard
2 Tbsp. butter
3 Tbsp. flour
1/4 cup oil to fry chicken
Clean, trim and dry chicken thighs. Season both sides with salt, black pepper and Herbes de Provence.
In oven proof skillet on med high heat add oil and place chicken skin side down.
Cook for 3-4 minutes until golden crust forms. Flip and cook for 2 more minutes.
Remove from skillet and set to side.
In same skillet on med heat add butter, onion and minced garlic. Cook for 1 minute.
Add flour. Cook and stir until incorporated.
Add wine and chicken broth. Stir and bring up to simmer.
Add Dijon mustard and seasonings and stir and turn off heat.
Add potatoes and carrots. Stir to coat.
Place in chicken skin side up.
Cover and bake at 350 degrees Farenheit for 30-40 minutes or until chicken done and veggies are tender.
Remove chicken and let rest for 10-15 minutes before eating.

INGREDIENTS:
6 bone in skin on chicken thighs - cleaned and trimmed
season both sides with salt and pepper
1/4 cup oil - for frying chicken
*In medium high skillet add oil and place chicken thighs skin side down.
Let cook for 3-4 minutes or each side and remove from pan
1 cup diced onion
1 large diced carrot
1 package sliced mushrooms
3-4 cloves minced garlic
1/2 cup white wine or white cooking wine - optional
1 1/4 cup chicken broth
1 tsp. thyme
1/2 tsp. rosemary
2 tsp. parsley
1 - 40oz can drained butter beans
In same skillet on medium heat and about 2 Tbsp. of leftover oil, add
onions and carrots.
Cook and stir for a couple minutes.
Add mushrooms. Cook and stir for 3-4 minutes.
Add garlic, salt and pepper. Cook and stir for another minute.
Add wine, deglaze pan and let cook for one minute to cook off alcohol. This is optional.
Add chicken broth. Turn heat up to bring to simmer.
Add spices, stir, bring to simmer and let cook one minute.
Turn off heat.
Add butter beans. Stir.
Place chicken skin side up in pan.
Bake at 400 degrees Farenheit for 30 minutes or until done.
Remove chicken, cover and let rest 10 minutes.
Serve with rice or a good homemade slice of bread OR corn muffin.

How to Make Irish Beef and Guinness Stew ~ Beef Stew Recipe
INGREDIENTS:
2 pds stew meat - I cubed chuck roast
1 cup diced onions
3 diced celery stalks
4 diced med. size carrots
1 1/2 cups cubed parsnips
1 bottle of Guinness Stout beer
3-4 cups beef broth
1 tbsp. tomato paste
2 minced cloves garlic
4-5 sprigs of fresh thyme or 1 tsp. dry thyme
2 tsp. Worcestershire sauce
salt and black pepper
oil
*I am serving with mashed potatoes but you can
also add some cubed red potatoes the same time
you add the parsnips.
1 cup flour
1 tsp. salt
1 tsp. black pepper
*Dredge cubed beef in above seasoned flour and
shake off excess
In a medium high heat pan coat bottom with oil.
Add beef and cook on each side for 1-2 minutes or
until a golden crust forms. Remove from heat.
Turn heat to medium, add onions and stir for one
minute. Add garlic and tomato paste.
Stir and cook for one minute.
Add carrots and celery, stir and cook for 1-2 minutes.
Add Guinness beer and stir.
Turn heat up to high and add beef broth, stir and
make sure you get the tid bits off the bottom of the pan.
Add Worcestershire sauce, sprigs of thyme, and chopped
parsley. Stir and bring up to a simmer, reduce heat,
cover and cook for 1 hour stirring occasionally.
Add parsnips (and/or potatoes, turnips), stir, cover
and cook for 20-30 minutes or until meat and veggies
are tender.
You can thin out the stew with more broth if needed.
Serving with mashed potatoes and garnishing with parsley.
Enjoy.

2 cloves minced garlic
4 Tbsp. olive oil
Sauce:
1/2 cup orange marmalade
3/4 cup Sweet Baby Rays original or honey BBQ sauce
1/4 cup light soy sauce
1/2 cup orange juice
1 tsp. orange zest
1/2 tsp. garlic powder
1/4 tsp. red pepper flakes
*Mix above ingredients well.
In skillet on medium high heat (electric stove: setting 8) add oil and seasoned chicken skin side down.
Cook for 6-8 minutes or until a nice golden crust forms.
Flip over chicken and cook for 5 minutes on heat setting 7.
Cover and cook another 5 minutes on heat setting 6.
Flip chicken over again skin side down, cover and cook for 5 minutes.
Remove chicken and set to the side.
On medium heat, with about 2 Tbsp. of oil on bottom, add onions and bell peppers.
Cook and stir for 2 minutes. Add minced garlic and cook another minute.
Add sauce in slowly and bring to simmer. Add 1/2 of cranberries and stir.
Add in chicken and baste with sauce. Bring to simmer, cover and cook for 5 minutes.
Baste chicken again and add rest of cranberries.
Cover and cook another 5-7 minutes or until chicken is done. Internal temp should be at least 165 degrees Farenheit. I like my chicken around 180-190 which is fall off the bone tender.
Let chicken rest for 5 minutes and serve. Spoon over delicious sauce.

INGREDIENTS:
6-8 chicken thighs
Orange Glaze:
1 jar of orange marmalade (18oz)
1/4 cup honey
2 tbsp. orange juice

1/4 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. salt
*Add all ingredients to sauce pan. On medium heat bring to a boil and simmer for
2-3 minutes. Remove from heat and let cool for 15 minutes.
Season chicken on both sides with Adobo seasoning or your favorite seasoning.
Preheat oven to 400 degrees
30 minutes - 400d flip chicken
15 minutes - 400d drain juices, place skin side down and baste with bbq sauce
10 minutes - 400d drain juices, flip chicken, baste with bbq sauce
10 minutes - 400d baste with bbq sauce
10 minutes - let chicken rest before serving.

INGREDIENTS:
6-8 bone in chicken thighs
2 sliced lemons
4 sliced garlic cloves
1 sliced onion
sprigs of thyme
sprig of rosemary
McCormicks chicken and fish seasoning
oil
oven proof skillet / pan
Clean and dry chicken pieces.
Season both sides.
On medium high heat add oil and chicken skin side down into pan.
Brown on each side for 3-5 minutes.
Remove from pan and turn off heat.
Add onion slices, sliced garlic, lemon slices and herb sprigs to bottom of pan.
Place chicken and juices on top.
Bake 400 degree Farenheit oven for 30-40 minutes depending on size.
Internal temp should be 165-175 F.
Remove from oven when done and let rest for 15 minutes.
Serve chicken and spoon over juices.

Egyptian Macaroni Bechamel Casserole Recipe ~ Baked Macaroni with Bechamel Sauce

INGREDIENTS:
1 pound Penne pasta - cooked and drained
Grated Parmesan cheese
parsley for garnish
MEAT SAUCE:
1 pound ground beef
1 medium diced onion

1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/4 tsp. thyme
salt and black pepper to taste
handful of fresh parsley
In skillet on med heat add oil and minced onion. Cook and stir one minute.
Add minced garlic and cook another 30 seconds.
Add ground beef, cook, chop and stir for 5 minutes or until no longer pink.
Add seasonings and tomato paste. Cook and stir for one minute.
Slowly add tomato sauce, bring to simmer and cook for 2-3 minutes.
Remove from heat, add fresh parsley, stir and set to the side.
BECHAMEL SAUCE:
5 tbsp. butter
4 tbsp. flour
4 cups milk
1/8 tsp. nutmeg
salt and black pepper
4 oz. cheese - Monterey jack
grated parmesan cheese
1 egg to temper
In skillet on med heat add butter and flour. Cook and stir until butter melted
and cook for one minute.
Slowly add milk and stir in between batches.
Add seasonings, cook and stir until sauce slightly thickens.
Remove from heat.
Add tempered egg and stir to incorporate.
Add cheese and stir until melted.
Add 2-3 ladles or 1/3 of the Bechamel sauce to pasta and stir.
ASSEMBLY:
One ladle of Bechamel sauce on bottom.
Half of pasta and gently tamp.
Sprinkle grated cheese.
All of meat mixture and level out.
Sprinkle grated cheese.
Rest of past and gently tamp.
Pour rest of Bechamel sauce on top and level.
Bake 400 degrees Farenheit for 35-40 minutes

Spinach Layer
1 cup diced onions
1 cup diced bell peppers
1 pkg. baby spinach
1/2 tsp. oregano
1/2 tsp. Italian seasonings
1 tbsp. minced garlic
salt and black pepper
2 tbsp. butter and 1 tbsp olive oil
*On medium heat add butter, oil, onions, bell peppers, salt and black pepper.
Cook and stir for 3-4 minutes.
Add minced garlic and cook for another minute.
Add spices and cook for another minute.
Add package of rinsed and drained baby spinach.
Cook and stir for 2-3 minutes or until spinach is wilted. Remove from heat.
Ricotta layer:
1 pint of Ricotta cheese
1 egg
1/4 cup grated Parmesan cheese
1/2 tsp. dried parsley
*Mix above ingredients in bowl.
Sauce:

1/4 cup flour
3 3/4 cup to 4 cups milk
2 tbsp. basil/ pesto or 1 tsp. dried basil
1/2 tsp. garlic powder
1/2 tsp. onion powder
salt and black pepper to taste
1/2 cup grated Mozzarella or Parmesan cheese
*On medium heat add butter and flour. Cook and stir for 2 minutes.
Slowly add milk, turn heat up to med high to bring to simmer.
Add spices, stir and cook until sauce slightly thickens.
Remove from heat.
Add cheese and stir until melted.
Add cooked cubed chicken and stir to combine.
Layer: Little sauce, noodles, ricotta cheese, spinach, chicken/sauce,
grated cheese, noodles...repeat and end with reserved sauce on top.
Bake at 375 degrees Farenheit covered for 30 minutes.
Uncover, top with cheese and bake an additional 15 minutes.

1/8 tsp. white pepper
2 tsp. light soy sauce
1 tsp. cooking wine
1 tbsp. cornstarch
*Mix and marinate for 30 minutes
Sauce:
1/4 cup water
2 tbsp. oyster sauce
2 tsp. dark mushroom soy sauce
1 tbsp. cooking wine
1 tbsp. sugar
1 tsp. cornstarch
*Mix well
1 cup diced onions
1/2 cup shitake mushrooms - small or large sliced
16oz sliced button or Bella mushrooms
2 tsp. minced garlic
In a wok or pan on high heat add oil and beef.
Spread and let cook for 15-20 seconds before stirring.
Cook and stir for 2-3 minutes or until beef is done.
Do not over cook. Remove from pan.
On med high heat add oil and minced garlic.
Cook and stir for 30 seconds.
Add diced onions, cook and stir one minute.
Add shitake mushrooms, cook and stir one minute.
Add sliced Bella mushrooms, cook and stir 2-3 minutes.
Add beef back into pan and stir to combine.
Pour sauce over top, cook and stir for one minute or until sauce thickens.
Right before done cooking, add green onions and toss one more time.
Serve and enjoy.

In a skillet on med high heat brown patties about 2 minutes on each side
or until a crust forms.
Remove patties from pan.
Add diced onions and mushrooms.
Cook and stir for 5-7 minutes or until the mushrooms release their moisture.
Add minced garlic and stir for a minute.
Add butter and melt. Add flour, cook and stir for 1 minute.
Slowly add beef broth and stir.
Add Worcestershire sauce.
Bring up to a simmer. Add patties back into pan.
Partially cover and cook on low simmer for 40-45 minutes occasionally basting the
steaks and flip half way.

Parmesan crisp: Place a couple tbsp. parmesan cheese on silicone baking mat and bake at 400 degrees F for 6-8 minutes or until golden brown.
Spread basil pesto on roll; tomato; leftover spaghetti; cheese
Bake at 400 degrees F for 8-10 minutes or until the cheese is melted.
Place fresh basil leaves on top. Parmesan crisp can be on side or
inside the sandwich (this is the way I like it...gives the sandwich a little texture)

1/2 pound chorizo - casing removed
1/2 pound ground beef
1 cup diced onion
3/4 cup diced red bell pepper

10oz pasta shells
8oz shredded sharp cheddar cheese - divided
3 Tbsp. cream cheese
chopped green onions for garnish
In a skillet on med high heat add chorizo and ground beef.
Chop and brown until fine and no longer pink.
Add minced garlic, diced onion and bell pepper.
Cook and stir for 2 minutes.
Add spices. Cook and stir for one minute.
Add diced tomatoes and chicken broth.
Turn up heat to bring to simmer. Stir and cook for a couple minutes.
Add pasta and stir. Bring to simmer, cover and cook for 9-12 minutes
or until pasta is tender, stirring occasionally.
Turn off heat.
Add half of shredded cheese and cream cheese. Stir until incorporated.
Sprinkle top with chopped green onions and remaining cheese.
Place under low broiler until cheese is melted.
Serve and enjoy.

4 Tbsp. flour
2 cups milk
1/2 cup cream or half and half
1/4 tsp. white or black pepper
salt to taste
sprinkle of cayenne pepper - optional
In a pan on medium heat add the butter and melt.
Add the flour, cook and whisk for a minute.
Pour in the milk and whisk.
Add the seasonings and cream.
Cook and stir until sauce thickens and then turn off the heat.
Add the cheese and stir until melted.
Add the macaroni, stir until combined.
Fill peppers with mac and cheese.
Top with extra cheese and crumb topping. (1/2 cup panko crumbs and 4 Tbsp. butter).
Bake 400 degrees for 20-30 minutes.
Place foil on top if crumb topping getting too brown before peppers are done.
Let rest and serve.

Cheese

In a pan on med high heat add ground beef.
Cook and chop until no longer pink.
Add onions and bell peppers and garlic.
Cook and stir for 2-3 minutes.
Add Rotelle and tomato paste.
Cook and stir for another 2 minutes.
Add water and stir. Bring up to a simmer.
Add spices and stir.
Add spaghetti and stir in as best you can.
Cover and simmer for 13-15 minutes or until spaghetti is done.
Stir a couple times during cooking so spaghetti does not stick.
You can add water as needed.
When done, top with cheese and any garnish you like.

1 very large or several small zucchini cut in half and cored

Clean, halve and core zucchini.
In a skillet on medium high heat add ground beef, cook and stir until no
longer pink and drain excess fat.
Add onions, bell peppers, salt and black pepper. Cook and stir for 3-4 minutes.
Add minced garlic and green chilies. Cook and stir for 1 minute.
Add salsa, 3 tbsp. of enchilada sauce and seasonings. Cook and stir for 2-3 minutes
fill the zucchini boats full and tamp down lightly.
Spoon over a couple tbsp. enchilada sauce. Cover.
Bake at 400 degrees Farenheit for 30-50 minutes or until fork/knife tender.
Mine took 50 minutes all together.
Top with rest of enchilada sauce and grated cheese.
Bake another 5-10 minutes until cheese is melted.

3-4 pounds bone in chicken thighs or legs
6 cups water or chicken broth
1 large diced yellow onion
1 peeled and diced sweet potato
2 peeled and diced russet potatoes

2 diced plum tomatoes
1 habanero or scotch bonnet pepper
6 ounces tomato paste
1/2 cup natural creamy peanut butter
5-6 cloves minced garlic
2 inch piece minced ginger
2-3 bay leaves
1 tsp. paprika
1/4 to 1 tsp. cayenne pepper
cilantro
salt and black pepper
1/4 cup oil
Season chicken with:
salt
black pepper
cayenne pepper
paprika
In a deep skillet on medium high add oil and seasoned chicken skin side down.
Cook for 6-8 minutes or until crust forms. Flip chicken and cook 3-4 minutes. Remove chicken from pan and set to the side.
In same pan with about 1/2 cup oil/chicken fat, add onions. Cook and stir for one minute and add in minced garlic and ginger. Cook and stir for another minute.
Add in bay leaves. Add water/broth. Turn heat up to bring to simmer.
Add tomato paste, habanero/scotch bonnet pepper and chicken/juices back into the pan. Bring up to simmer and cook for one hour.
Half way during cooking, flip chicken and stir.
Skim excess fat and impurities from the top.
Place chicken to one side, add peanut butter and stir to incorporate.
Replace chicken.
Add diced tomatoes, carrots, sweet potatoes and russet potatoes.
Sprinkle with the amount of cayenne pepper that you like.
Stir in vegetables.
Bring up to simmer and cook for 15-20 more minutes or until vegetables are tender.
Stir in a handful of cilantro - optional - OR, garnish individually.
Serve with steamed rice, broccoli or side salad.

INGREDIENTS:
1 pound cubed boneless chicken thighs or breasts
1 cup diced onions
1/2 diced green bell pepper
1/2 diced red bell pepper
1 1/2 cup diced fresh pineapple
1 tbsp. minced garlic
2 tsp. minced ginger
Sauce:
1 cup pineapple puree/juice
1/2 cup ketchup
1/2 cup light soy sauce
1/2 cup light brown sugar or honey
2 tbsp. apple cider vinegar
*Mix above ingredients together
In a skillet on medium high heat add oil and chicken.
Cook for 5-8 minutes or until chicken in done and then remove from the pan.
In the same pan on medium heat add onions and bell peppers.
Cook and stir for a minute or two and then add fresh pineapple
Stir to combine.
Add minced garlic and ginger. Cook and stir for about 30 seconds and then add sauce.
Stir to combine and scrape all tidbits off of bottom of pan.
Bring up to a simmer and cook for 10 minutes or until veggies are tender.
Add chicken and juices back into pan.
Stir and cook to heat chicken through.

1 whole fresh turkey - My turkey was 16.65 pounds
2 onions
4-5 stalks celery
4-5 carrots
2 cloves garlic
1 granny smith apple
1 lemon
fresh sage
fresh thyme
fresh parsley
salt and pepper
Seasoned butter:
1 stick softened butter
1 tbsp. extra virgin olive oil
1 tsp. poultry seasoning
1 tsp. savory
1/2 tsp. salt
1/4 tsp. black pepper
squeeze of lemon
*Mix and cream above ingredient together
***Clean and brine turkey - refer to my "Brining Turkey" video recipe.
Preheat oven to 350 degrees
Pat turkey dry.
Season inside cavity with salt and pepper.
Stuff cavity with pieces of onion, celery, apple, lemon, garlic and
sprigs of herbs.
Gently separate skin from turkey.
Take half of seasoned butter and rub between turkey and skin.
Take remaining seasoned butter and rub outside of turkey.
Place remaining veggies, fruit and herbs on bottom of roaster and place
turkey on top.
Tuck wings under bird.
Bind together legs with butchers twine.
Add 1 cup of water to bottom. Add more if needed during roasting.
Roast turkey at 350 degrees until done. Internal temp of turkey should
be at 165 degrees F at thickest part of breast.
Turn turkey around 180 degrees in oven half way.
Add more water if needed.
Tent lightly with foil if turkey becomes too brown during roasting.
Remove from oven, tent and let rest for 1/2 to 1 hour before carving.

1 cup diced carrots
3 lemon slices
3 Tbsp. butter
Place veggies on bottom of baking dish.
Place in slices of lemon and butter.
Place seasoned turkey wings on top.
Cover with foil.
Bake at 375 degrees for 1 hour and 15 minutes.
Remove wings and veggies from baking dish.
Make gravy as instructed below.
Place wings back into baking dish and pour over gravy.
Bake uncovered for an additional 30-40 minutes.

Put peeled and cubed potatoes in cold water. Water should be about 1" above

Drain and return to the pan.

Thanksgiving Chicken Recipe ~ Baked Roast Whole Chicken Step by Step

INGREDIENTS:
6-8 pound whole chicken
onions
celery
carrots
lemon
garlic cloves
rosemary
sage
thyme
parsley
chicken broth
Seasoning:
1/2 stick butter - room temperature
1 tbsp. olive oil
1/2 tsp. poultry seasoning
1/4 tsp. savory
1/2 tsp. salt
1/4 tsp. white pepper
1/4 tsp. garlic powder
1/4 tsp. thyme
1 tsp. parsley
*Mix above ingredients well.
Preheat oven to 425 degrees Farenheit.
Place vegetables and herbs on bottom of baking pan and reserve some
onions, lemon, garlic and herbs for the cavity.
Season chicken cavity with salt and pepper and stuff.
Rub 1/3 of seasoned butter under chicken breast and leg areas.
Rub remaining butter on the outside of the chicken.
Tuck wings under the chicken and tie legs with cooking twine.
Place whole chicken on top of vegetables/herbs in baking dish.
Bake for 1 1/2 to 2 hours (depends on size of chicken) or until
internal temp is 165-170 degrees/juices run clear.
Remove from pan, tent with foil and let rest for 15-20 minutes
before cutting.

INGREDIENTS:
4-5 large sweet potatoes - peeled and sliced/cubed
1 cup dark brown sugar
1/2 cup unsalted butter
1/4 cup white sugar
1/4 cup light corn syrup
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1/8 tsp. ground ginger
pinch of Kosher salt
pinch of black pepper
In skillet on low medium heat add butter, brown and white sugar and corn syrup.
Cook and stir until incorporated.
Add cinnamon, nutmeg, ginger, salt and black pepper.
Cook and stir until light simmer.
Add sweet potatoes and stir until coated.
Turn up heat to medium and bring to simmer.
Cover and cook for 10 minutes. After 5 minutes give it a stir.
Uncover, gently stir and simmer for another 10-15 minutes or
until the liquid has reduced, thickened and the potatoes are tender.
Take off the heat and let slightly cool for 15-20 minutes.

INGREDIENTS:
PEACH MIXTURE:
6 cups peeled and sliced fresh peaches
1 cup sugar
pinch of salt
1/4 cup cornstarch
1/2 cup orange juice
1/2 tsp. cinnamon
4 to 6 grates of nutmeg
*In large sauce pan combine above ingredients except spices.
Cook and stir on medium heat until peaches softened, sauce thickened and clear.
This will take 7-10 minutes.
Remove from heat, stir in spices and slightly cool.
Preheat oven to 350 degrees Farenheit
1 stick butter (1/2 cup) - melt in 9 x 13 pan in pre heated oven
BATTER:
1 1/2 cups self rising flour
1 cup sugar
1 1/2 cups milk
*Mix above ingredients. Batter will be thin.
Pour over melted butter. Do not stir.
Spoon peach mixture over batter. Do not stir.
Bake at 350 degree Farenheit oven for 50 minutes or until golden brown.
10 minutes before done, you can sprinkle with cinnamon and raw (turbine) sugar.
Cool for 30 minutes before serving.

INGREDIENTS:
2 pounds sirloin steak cubed into 1 to 1 1/2" pieces
2 Tbsp. soy sauce
2 Tbsp. Worcestershire sauce
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. kosher salt
1 tsp. plus fresh cracked black pepper
1 Tbsp. olive oil
*Mix above ingredients, cover and let marinate on counter top for 30 minutes.
1 medium diced sweet onion
1 diced green pepper
1 diced red pepper
6 Tbsp. butter divided into 2 T and 4 T
5 cloves minced garlic
salt and black pepper
oil
In a skillet on medium heat add 2 Tbsp. butter, onions, bell peppers, pinch salt and black pepper.
Cook and stir 5-8 minutes or until the onions change color...leave a little crunch.
One minute before done add 2 cloves minced garlic. Cook and stir and remove from pan.
In same skillet on med high heat add enough oil to coat bottom. Place in steak bites and sear
on sides turning occasionally for 3-4 minutes. You are looking for a medium doneness.
Cook steak bites in batches if needed.
Turn heat to medium and add all steak bites into pan along with 4 Tbsp. butter.
Stir until butter melted and steak bites coated.
Add in 3 cloves minced garlic and more fresh cracked black pepper if wanted.
Cook and stir for about 20 seconds and then add in onions and peppers.
Stir to incorporate and serve.

8-10 Cortland apples - peeled
1/4 cup sugar
pinch salt
1 tsp. cinnamon
20-25 hot cinnamon candies
Add peeled and sliced apples in slow cooker with sugar, salt and
cinnamon. Cook in slow cooker on high for 4-5 hours or on low for
7-8 hours. While still hot add in hot cinnamon candies and stir.
Add to taste and color.
Let applesauce cool to room temperature and refrigerate.

Beef and Cabbage Casserole Recipe
INGREDIENTS:
5 cups diced cabbage
1 1/2 to 2 pounds ground beef
1 medium diced onion
2 diced carrots
1/2 cup diced bell peppers
1/2 cup uncooked rice - I used jasmine rice
1 1/2 cups beef broth
1 - 28oz can diced tomatoes
3 cloves minced garlic
1 tsp. oregano
salt and black pepper
In skillet on med high heat brown and chop ground beef until no longer pink.
Add onions, carrots and minced garlic.
Cook and stir for 3-4 minutes.
Turn off heat.
In bowl add meat mixture, uncooked rice, diced tomatoes and spices.
Mix well. Add diced cabbage and mix well.
Add ingredients to baking dish. Pour over beef broth.
Cover tightly with foil.
Bake at 350 degrees Farenheit for 1 hour.
Remove from oven, add bell peppers, stir well,
return to oven and bake for 30-45 more minutes or until cabbage is tender.
Remove from oven and let rest for 15 minutes before serving.

Easy Asian Ground Beef and Cabbage Skillet | 1 Pound Beef Feeding 4 Hungry People
INGREDIENTS:
1 lb. ground beef
4 cups shredded cabbage
1 cup shredded carrots
1 cup sliced onions
1/2 sliced red bell peppers
1 Tbsp. minced garlic
1 Tbsp. minced ginger
Sauce:
4 Tbsp. soy sauce
1 Tbsp. Hoison sauce
1 Tbsp. toasted sesame oil
1 tsp. chili garlic sambal or siracha
1 Tbsp. brown sugar
In a skillet on medium high heat add ground beef. Cook and chop until almost no pink.
Add minced garlic, ginger and onions. Cook and stir for one minute.
Turn heat down to medium. Add shredded cabbage a little at a time and stir to incorporate.
Add shredded carrots and stir.
Place on lid and cook for 2 minutes. Take off lid and stir, place on lid and cook for an additional 2 minutes. This will help steam and cook the cabbage.
Add bell peppers. Stir and cook for 1-2 more minutes.
Pour in sauce. Stir and cook one minute.
Serve and enjoy.
