Moto Patisserie Topping the Cheesecake Moto Patisserie 2021-03-24 | After letting the Cheesecake cool down in the water bath. I let it set up in the refrigerator, then par freeze it so it’s easier to work with. You can bake cheesecake in a spring form pan as well, but over time they can leak . After removing from the freezer, I use a hot plate to thaw the bottom, and the temperature of my hands to thaw the sides. Also there is parchment in the bottom of the pan. Flip it upside down on to something you can manage, then flip it back over onto a cake board or plate, if you use a plate you should let it thaw a bit before trying to slice it.
Strawberry Topping part 2 Moto Patisserie 2021-03-24 | After introducing the starch mixture to the strawberry purée, it’s best to stir constantly to keep it from sticking to the bottom of the pan and burning. When it doesn’t want to fall off a cooled spoon, and the starch has cooked clear, it’s ready to be cooled down and used.

Let it come to a simmer, add a couple Tablespoons of a 50/50 starch granulated sugar mixture.Sweeten it to taste with sugar as needed.Keep in mind the cheesecake is already sweet so you don’t want to over sweeten the topping.

Moto Patisserie - Making Elephant Ears Moto Patisserie 2021-02-27 | I made the dough a couple days ago, left it in the refrigerator to mature a bit . It is Rich dough, or Cinnamon roll dough. Roll them out flat in sugar dusting the bench (with granulated sugar) accordingly to keep them from sticking. I bake them for 5 minutes, turn the pan , and another 5, at 350 degrees in a convection oven. Note , there were no Elephants harmed in the making of this video 😎
