Carrot Cupcakes for Easter | Craving for Baking

Craving for Baking 2016-03-22 | DUAL CREAM CHEESE FROSTING RECIPE BELOW

🍩 Ingredients:
1/2TSP BAKING POWDER + 1/4TSP BAKING SODA
1tbsp + 1tsp orange zest
1/2 tsp vanilla extract
75ml oil
70gcarrots
90g flour
1/2 tsp mixed spices
85g sugar
1 egg + 1 egg yolk

YOU NEED 3 PIPING BAGS FOR THIS AND A ROUND NOZZLE
Flavour Cream cheese frosting with Orange juice and zest (recipe for frosting here: https://www.youtube.com/watch?v=58_4e... )

Separate the frosting evenly into two bowls

dye one bowl with orange frosting

Put orange frosting into one piping bag and tighten with an elastic band

Put plain frosting into another piping bag and tighten

In a large piping bag, place the large ROUND nozzle.

Put both bags of frosting into the LARGE PIPING BAG with the ROUND nozzle.

Do a test pipe to see if you get dual colours, and begin to pipe.

CUPCAKES MUST BE COMPLETELY COOL BEFORE PIPING

Pumpkin Swirl Cheesecake | Craving for Baking

450g cream cheese
1tsp vanilla extract
1 tbsp whipped cream
100g sugar
130g pumpkin puree
2 eggs
20 digestive biscuits
3 tbsp butter
1 tbsp pumpkin spice

Make your own pumpkin puree!

1. Cut pumpkin in half and deseed
2. Cut each half in to halves
3. Wrap in foil and bake for 45mins - 1 hour or until tender
4. remove pumpkin peel and blend until a smooth puree is formed
