🥩 Ingredients:
- 750g pork belly, sliced into small cubes - 500g pork heart, sliced into small cubes - 6 green finger chillies 🌶️ - 1 whole garlic, minced 🧄 - 1/2 thumb-sized ginger, minced - 1/2 onion, finely chopped 🧅 - 2/3 cup vinegar - 3 cups water 💧 - 1 orange (zest and juice only) 🍊 - 3 cups pork blood 🩸 - 2 tsp salt 🧂
👩🍳 Instructions:
Step 1: In a large pot or wok over medium-high heat, add the chopped pork belly. Once it begins to release its fat, go ahead and add the pork heart, and cook until browned and beginning to get crispy.
Step 2: Add garlic, onion, and ginger and cook until onions turn soft.
Step 3: Add the chillies, vinegar, water, and orange juice and zest. Bring to a boil then simmer for 30 minutes.
Step 4: Add pork blood and let simmer for 20 minutes.

Let me know what you think of the breading, and I’d love to hear your tweaks and tips. I used a local cheese here, but any soft, meltable cheese should do great! Same with the tomato sauce—I used my own, but even sliced fresh tomatoes will do. Tallow is ideal for frying as it has a high smoke point, and of course, incredible flavor.
🧑🧑🧒🧒 For 4 people as a main dish.
Ingredients: ✔️6 filets of steak ✔️4 eggs a pinch of salt ✔️1 1/2 cups almond flour ✔️1 1/2 cups coconut flour ✔️1 1/2 cups tapioca flour ✔️100g tallow for frying ✔️400g tomato sauce ✔️500g meltable cheese of your choice, cut into 1/2 cm slices basil for garnish
Preparation: Step 1: Tenderize the meat—this is crucial! Milanesa with chewy beef is a no-no. Preheat the oven to 200° C.
Step 2: Whisk the eggs lightly until uniform, adding a pinch of salt.
Step 3: Mix the almond, coconut, and tapioca flour, along with another pinch of salt. Spread evenly on a plate.
Step 4: Dip the steaks in the eggs, folowed by the bread mixture. Make sure to coat everything in both steps, we want to be sure every bit gets that delicious breading.
Step 5: Repeat step 4, so that we get an extra-crunchy crust.
Step 6: Melt the tallow over medium-high heat. Fry the steaks, turning over when golden.
Step 7: Place steaks in baking dish. Spread a thin layer of tomato sauce, followed by a layer of cheese slices, and place them in the oven.
Step 8: Remove from oven when cheese is melted. Note: This can happen fairly quickly depending on your choice of cheese, so keep an eye on it!
Step 9: Garnish with basil and enjoy

They loved helping to coat the fish! This is a classic, simple lunch—but of course, my version is sugar-free, gluten free, totally paleo! If you can’t find creme fraiche, full-fat greek yogurt works great.
Serves 2 people as a light lunch.
1 cucumber 1 lemon 1 tbsp honey a pinch of flaky sea salt 100g coconut flour 2 tbsp butter 4 filets of fresh herring 1 handful chives 2 tbsp creme fraiche
Step 1: Peel and slice the cucumber into 1/2 cm slices.
Step 2: Squeeze the juice from the lemon into a small bowl and mix with the honey and sea salt.
Step 3: Drizzle over the sliced cucumber, and massage gently so that the vinaigrette is distributed evenly.
Step 4: Spread the coconut flour evenly onto a plate with a pinch of salt.
Step 5: Coat the fish evenly with the coconut flour. (Note: the 100g is an estimation—you don’t have to use all 100g, and you may need more. It just needs to be enough to lightly coat the fish.)
Step 6: Melt the butter over medium high heat in a pan, and place the coated fish. Flip when golden.
Step 7: Plate fish with the salad, a dollop of yogurt, and freshly chopped chives.

For how gorgeous it looks, and its rich taste, you’d imagine it’d be a laborious meal. The roe does a lot of the heavy lifting in the looks department. In reality, it’s very few ingredients, and the preparation is non-laborious and fast—provided you have a good grip on timing. For those not used to fish, it can be tricky not to overcook. Trust your instincts, and it should come out wonderfully. I served this with a simple watermelon and cucumber salad, but let me know what pairings you come up with!
For 4 people as a main dish.
1 cod loin 3 cloves of garlic 6 tbsp butter 200g creme fraiche small handful of chives 2 tbsp of roe
Step 1: Mince garlic and sautée with two tablespoons of the butter on a low flame.
Step 2: While the garlic is cooking, cut the fish into thick slices, approximately 10 cm.
Step 3: When garlic is close to being ready, add your creme fraiche and mix over a low flame until the texture is uniform. Set aside.
Step 4: Melt the remaining butter in a pan—don’t be afraid to be generous, as it not only keeps the fish from sticking but adds richness to the dish.
Step 5: Place the fish flesh-side down in a medium-heat pan for three minutes, or when the flesh begins to open up and “blossom”. Be very attentive! The fish can overcook before you know it. Err on the side of more raw, as the fish will continue cooking even when removed from heat.
Step 6: Flip the fish and allow the other side to sear for five minutes. Chop the chives in the meantime.
Step 7: Remove from heat and dress with your creme fraiche sauce, chives, and roe

For me, I avoid extremes: high protein, moderate carbs, and moderate fat keep me at my best. Do what works for you!

100g parsley 100g oregano 1 red onion 3 garlic cloves 1 habanero 1 lemon 1 lime 1 thumb ginger 1 tbsp salt 1/2 cup vinegar 1 cup olive oil
This recipe is super easy, just a lot of chopping.
1. Chop fresh parsley and oregano. 2. Mince red onion and garlic. 3. Deseed habanero (unless you want that extra kick!) 4. Juice the lemon and lime. 5. Add peeled, minced ginger. 6. Add salt, vinegar, and olive oil. 7. Mix vigorously

There is nothing better after spending all day sweating than a sweet, cold treat. Louis helped me tremendously with this delicious, sugar free, coloring free, seed oil free, perfectly natural ice cream recipe. Of course, he was also happy to help me out with the taste testing! I added some delicious salted honey caramel, but feel free to adapt the flavours to your liking. I imagine so many fruits, herbs, chocolates, and jams would be delicious with this recipe. Let me know in the comments what additions you would make! Yields: 4 servings
🍯Honey Caramel Recipe
Ingredients: - 0.5 liters raw cream - 3 teaspoons butter - 0.5 cup honey - 2 teaspoons sea salt
Instructions:
1. *Heat Cream*: Simmer 0.5 liters of raw cream over medium heat.
2. *Add Honey*: Stir in 0.5 cup honey and heat until thickened (5-7 minutes).
3. *Add Butter and Salt*: Stir in 3 teaspoons butter and 2 teaspoons sea salt until melted.
4. *Simmer*: Lower heat and simmer until caramel consistency (10-15 minutes).
5. *Cool*: Remove from heat and cool slightly before using.
Total time: 15-20 minutes.
🍨Salted Caramel Honey Ice Cream🍨
Ingredients:
👉🏼4 cups cream 👉🏼10 egg yolks 👉🏼1 cup honey 👉🏼2 vanilla pods 👉🏼a few pinches of salt 👉🏼some Natruly chocolate 😋
Prep: 1. Separate the yolks from the whites, placing the yolks in a blender. 2. Split the vanilla pods and scrape the insides into the blender. 2. Add the heavy cream and honey. 3.
