Cointreau or Tripple sec has been on the list for a long time now. I'm pretty excited to finally give it a go! The first attempt didn't go quite according to plan. But I think I got it almost dilled in for the second.
Here is the recipe I would recommend:
1 L of Neutral / Vodka (0.26 gal) Peel of 2 oranges 6 g of dried naval orange peel 1/2 teaspoon bigger orange powder
Macerate for 1-3 days
Distil taking around 115ml of heads then hearts down to around 55-60 % ABV.
If you are worried about louching at 40% abv you may want to cut this resulting distillate with a little more neutral while proofing it down and adding sugar. I found these proportions to work well.
1 part orange essence (that you just distilled) 0.5 part vodka 0.7 Part 1:1 sugar syrup 0.4 part water
This should land you around 40% abv

"Brandy" Recipe (this is scalable): 95 L (25 gal) of water 14kg (30,9 lb) of sugar 1kg (2.2 lb) of raisins 1kg (2.2 lb) of oats
Macerate for 24 hours starting at 170 f / 76 c 2 L of 170 proof / 85 % "brandy" 90 g of wormwood 53 g of anise 53 g of fennel 26 g of mint 53 g of Lemon Balm 5 g angelica seed
Proof the maceration down to 40% ABV and pot still it. Take a small amount of "foreshots". Collect down to 60% abv and keep as "hearts" 60% - 40% can be kept to distill again with the next batch of brandy 40% and down can be kept to distill again with the next botanical distillation.
Separate 48% of your hearts and heat to 140 f / 60 c and colour with: 2 g of hyssop 3 g of spinach I macerated for 12min. You should either macerate much longer or double or even triple the amount of coloring botanicals as my absinthe was not colored heavily enough.
---------------------------------------- Because I lost 3L of the upper hearts my spirit was under proofed. I took some of the lowest hearts and redistilled them. Then blended them back into the highest abv hearts I had. Just don't spill your spirit and you won't need to do this. Sigh. Be careful people!

Suggested "easy" mash recipe: Grate 13kg (28.6 lb) of Sweet potato / Kumera Add it into a pot with enough water to cover it Add in high temp alpha enzymes (HTA) Bring it up to 92c (197.6 f) (or as high as your HTA will go) Mash for 1-2 hours
Suggested "efficient" mash Recipe: Grate 13kg (28.6 lb) of Sweet potato / Kumera Add sacrificial HTA enzymes Bring up to a boil and simmer for 45min Cool back down to 92c (197.6) Add more HTA and mash for 1-2 hours until a starch test is passed
Fermentation Collect all the clear wash, and optionally press the sweet potato / Kumera to get a little more out Alternatively, ferment on the vegetable and squeeze after fermentation Pitch your yeast of choice, I used an M-1 whiskey yeast Ferment until all signs of fermentation are finished and gravity has dropped near or below 1.
Distillation Distill all of the wash with a stripping run. This is likely quite low ABV so I suggest running LOW (1-4% off the still)
Re distill the low wines in a reflux still. The higher the ABV the still is "capable of" the better. But I did this with the humble T500 and it actually turned out great!

Of course, the "best" way to make bourbon is with 100% grain and corn. Unfortunately, that's no small feat, especially when you are new and don't have lots of equipment. There is nothing particularly tricky or complicated about it. But there is a HUGE learning curve for a new distiller!
This recipe is built to make that first step into all-grain distilling welcoming and foolproof. You CAN make this and you DO NOT need all sorts of fancy stuff to do it.
The Recipe: 4.7kg (10.36 lb) of cracked corn 2.75kg (6.06 lb) of distillers malt (for the main mash) 0.5kg (1.1 lb) of distillers malt to keep corn thin 0.5 kg (1.1 lb) of torrified wheat 0.5kg (1.1 lb) Shepard's delight (can sub for extra special malt) 0.175kg (0.385 lb) of light chocolate malt
5.8kg (12.78 lb) of table sugar 0.25kg (0.551 lb) of honey
40g (1.41 oz) of AM-1 yeast Can use bakers if you want. Use 90+ grams
