📒Recipe: How to make southern Thai sour curry (Gaeng Som) | Thai Girl in the Kitchen
- 250g. Shrimps (or as much as you want) - 200g. Raw papaya** - 600ml. Water - 1/2 tbsp. Palm sugar - 4 tbsp. Tamarind paste - 1 tbsp. Fish sauce - 1/2 tsp. Salt - 2 tbsp. Lime juice
**NOTE: The choice of vegetable for Thai sour curry is vary. You can add almost any veggies you like. The more popular choices that Thais would use are ; raw papaya, cauliflower, turnip, carrot, long green beans, young coconut shoots, bamboo shoots, Katuri flower (Dok-Kae ดอกแค), lotus stem, cabbage, morning glory, etc.

What's the difference between the southern Thai vs. the other regions of Thailand's versions?
Well the tastes are similar but the southern version tends to have a stronger, more spicy taste while Gaeng Som from the other parts of Thailand usually taste milder.
The ingredients of southern Gaeng Som, we mainly use Thai dried chili and fresh bird eyes chili (some households go straight up fresh chili) while the other regions will mainly use dried chili peppers and add a little bit of Thai chili for the spice.
Gaeng Som from other regions also include finger roots in the ingredients while the Southern version, we leave the finger roots out and add turmeric in the recipe which makes the curry yellow.
This makes Thais from other regions calling 'Gaeng Som' from the south 'Gaeng Lueng' instead. Since the word 'Som' means orange and can also mean sour in some local Thai dialect. While 'Lueng' means yellow.
After all, each region, areas and even households in the same regions may have a slightly different ratio and recipe. This one in the video is my family recipe that I grew up eating. You can adjust here and there to fit your preference/s since there will be no absolute 'right' or 'wrong'. Only you 'love it' or 'don't love it'.

The amount of every ingredient is totally okay to be a little more or less. Thai households rarely measure anyway. We just estimate by the eyes for example, garlic and shallots are about the same amount eye-judging wise etc.
Homemade version of any curry paste gives so much better and fresh flavors. Might not be the most convenient but all the effort will be totally worth it!

Ingredients :
- 1kg Chicken whatever part you like - 2 tsp Salt - 1/2 tsp Cumin seeds (or powder) - 2 tsp Coriander seeds (or powder) - 2 tsp White peppercorns (or powder) - 4-5 cloves Garlic - 4 tsp Brown sugar - 2 tbsp Light soy sauce - 1 tbsp Water - 3 tbsp Rice flour - 3 tbsp All-purpose flour - Vegetable oil enough for deep frying*
For crispy shallots, you can use store-bought or for the homemade version, use shallots as many as you want (depends on how much you want crispy shallots)
**NOTE : Use higher smoking point cooking oil such as palm, peanut, canola, avocado oil, etc.

- 180g. Water spinach - 5-6 cloves Garlic - Red chili as many as you want - 1 tbsp Oyster sauce* - 1/2 tbsp Light soy sauce - 1/2 tsp Sugar - 2 tbsp Water - 1 tbsp Preserved soy bean (Tauco/TaoJiao)** - 3 tbsp Vegetable oil
**NOTE : 1) If you want to make this dish vegetarian, you can replace the oyster sauce with mushroom sauce 2) Taoco (we call Taojiao in Thailand) is a preserved soy bean which gives a little salty and umami taste to the dish. If you cannot get one, you can leave it out and increase another 1/2 tbsp. of light soy sauce instead.

- 3 tbsp. Tamarind paste - 1 tbsp. Palm sugar - 1 tbsp. **Lime juice - 3 tbsp. Fish sauce - 1/2 tbsp. **Khao-Khua (Ground toasted rice : how to make is in the video) - Chili flakes as much as you want - A little bit of sliced shallots, spring onion and cilantro
**NOTE : - The amount of lime juice can be a little more or less depending on how sour your tamarind is. - Khao Khua (Ground toasted rice) : How to make is in the video, very easy don't worry :)
🌶️ Lime Version If tamarind and palm sugar are uncommon to get in your areas, give this version a go. There’re so many versions of ‘Nam Jim Jaew’ and this is one of them. The taste is a little sharper from lime and granulated sugar. Still very good to go with your BBQ.

Most Thai salads that includes the word 'Yum' will be packed with the flavors of spicy, sour, salty, sweet and umami along with several herbs to fresh the dish up.
In this video, we're making 'Yum Woon Sen Talay'. The word 'Talay' itself means 'Sea/Ocean' but when being included in any Thai menu name, it refers to 'seafood'.
And of course, if you're allergic to seafood you can substitute with something else such as sausages, Vietnamese sausages, meatballs, tofu or even leave it as simple as ground pork/beef/chicken.

A little bit of…. - Cilantro - Spring onion - Celery (In the video, I use Chinese celery which is smaller, more leafy and stronger flavor. However, if you can’t get Chinese celery, you can use the leaf parts from celery you can get)
If you want the extra texture and nutty flavor, you can also top it up with roasted peanuts or cashew nuts or both!

- 500g. Shrimps - 70g. Oyster mushroom** - 60g. Lemongrass - 60g. Shallots** - 60g. Galangal - 5-6 Kaffir Lime Leaves - 1-2 Cilantro roots** - 15g. Cilantro - 15g. Culantro** - 10g. Dried chili - 10g. Bird eyes chili - 1 Liter Water - 2 tbsp. Roasted chili paste - 5 tbsp. Fish sauce - 150 ml. Evaporated milk or coconut milk - 5 tbsp. Lime juice
**NOTE: ■ The choice of mushroom is yours. Ideally straw mushroom is the most popular for Tom Yum (and personally my most favorite! But unfortunately I couldn’t find it where I live). You can use oyster mushroom, Shimeji mushroom, button mushroom or any other neutral flavor mushroom.
■ Shallots can be substituted with onion.
■ Cilantro roots : This ingredient gives so much aroma to the broth. However if you don’t have, you can use cilantro stems.
■ Culantro or ‘sawtooth coriander’ is optional. Good to have it for extra aroma but if not, totally fine to leave it out.
■ The amount of chili is your choice. If unsure, try add a little bit by bit or add it separately in your serving bowl. Remember you can always make it more spicy but it’s difficult to fix it when it’s too spicy.

To season (For each serving bowl) : - 2 tbsp. Lime juice - 1 tbsp. Fish sauce - 1/2 tsp. Sugar
And a little bit of - Pounded chili - Spring onion - Cilantro - Holy basil *OPTIONAL - Saw-tooth coriander (culantro) *OPTIONAL
Taste and adjust to your preference.

- 3 Large Eggs - 2 tsp Fish Sauce - [Optional] 4-5 drops Lime Juice - Cooking Oil enough for frying
*Lime juice won't affect the taste but will help the egg to hold up the air better when we whisk. Which will make the egg crispy when we fry. However, without it but enough heat from the oil your omelette will still turn out crispy and fluffy. Totally optional 🙂
**To get the crispiness, the type of oil is also one of the factors. Like deep frying chicken or other things, using higher smoking point oil like canola oil, soy bean oil, sunflower oil, palm oil will hold up the heat better which gives the crispy food as a result. Healthier choice of high-smoking point oil would be an avocado oil. The only con of avocado oil would be the higher price. So use what you're convenient with and enjoy cooking! 🙂
There're many ways to season the omelette. Can just be as simple as using fish sauce or soy sauce only. Or for 3 eggs, you can add 1/2 tsp oyster sauce, 1/2 tsp soy sauce, 1/2 tsp white pepper and some chopped green onion...This is also my favorite way to make omelette.
We can even add some minced pork/chicken/prawns. The more extra stuff we add, it won't be as crispy as just the eggs alone since it will be a little heavy but still gonna be good.
As I always say....."That's the beauty of homecooked. Adjust to whatever you like"

Beef Marinade; - 500g Beef Steak (Any part you like. Recommend to choose the parts with some fat layers for more flavors) - 1 tbsp Palm Sugar - 2 tbsp Oyster Sauce - 2 tbsp Light Soy Sauce
Spicy Dressing; - 1 tbsp Chili Flakes (Or at your desired spice level) - 3 tbsp Fish Sauce - 3 tbsp Lime Juice - 1 tbsp Ground Toasted Rice** (🌻 See How to Make Ground Toasted Rice : youtu.be/klzg-CH-phE )
Vegetables/Herbs; - Shallots or Red Onion - Green Onion - Mint Leaves
*The ratio for vegetables/herbs is not fixed. You can put as much as you like. *You can also add culantro(sawtooth coriander) and coriander for more aroma.
🌻 Recommend to serve with cold&crunchy vegetables like cucumber, lettuce, long green beans, cabbage, Thai basils, etc. for more texture and to cut the hot tastes.

When you buy 'Moo Ping' in Thailand, you'll always see they sell bags of sticky rice with it.
To cook sticky rice, traditionally we use bamboo-steamer but there're many other ways to cook. In a rice cooker, or if you don't have a rice cooker, you can also cook in a microwave in just an hour (See 'How to Cook Sticky Rice in Microwave' : youtu.be/Rwa3qeTc1gQ ).

🔴📒Recipe: Thai Green Curry Chicken แกงเขียวหวานไก่
- 3 tbsp Green Curry Paste - 300 g Chicken - 400 g Coconut Milk - 200 g Water - 200 g Thai Eggplants - 5 - 6 Kaffir Lime Leaves - 1 handful Thai Basil - 1 tbsp Palm Sugar - 1 - 2 tbsp Fish Sauce [Depends on the taste of your green curry paste. Some are saltier, some are less. Adjust to what you like :) ] - Red Chili or Red Bell Pepper for garnishing
*NOTE: You can replace eggplant with vegetables of your choice. Alternative vegetables that are recommended: Potatoes, carrot, bambooshoots, pumpkin, aubergine, wax gourd, long green bean, zucchini. *Substitute for Thai Basils: Regular basils or sweet basils

〽️ Massaman Curry Massaman curry is the mildest spice in all 3. It is known as a Thai curry but originally the ingredients are from Muslim traders from Persia, the Indian subcontinent and the Malay archipelago (e.g. cardamom, cinnamon, bay leaves, etc.). When these ingredients were brought to Thailand, Thais combined with ingredients that are commonly used locally (e.g. coriander, lemongrass, galangal, etc.). And it became the Massaman we're having these days. In the past, beef was the choice of meat to make this menu but these days there's no limit and the choice of the protein is yours.
〽️ Red Curry More spicy, deep flavors from herbs that are commonly found in South East Asia. The red coloring derived from dry red spur chillies. The main ingredients include (dried) red chili peppers, garlic, shallots, galangal, shrimp paste, salt, Kaffir lime leaves, coriander root, coriander seeds, cumin seeds, peppercorns and lemongrass. These days, there're huge numbers of brands producing ready made paste and the taste from each brand and each household(if homemade) can be slightly different. Some are stronger, some are milder.
In Thailand, we have so many types of curry that are red. The ingredients can be slightly different depending on which part of Thailand it's from. The south of Thailand where I'm from, we use a lot of turmeric in curry pastes which makes most of Southern Thai curries yellow and not red as the other regions.
〽️ Green Curry The name "green" curry comes from the color of the dish, which comes from green chillis. Green and red chilis are slightly different. The red are always more spicy while the green contains more spice fragrance. That's why you might see many Thai dishes contain both red and green chilis. To deliver both spicy flavor and spicy fragrance.
Always go with coconut milk, that's why the taste is milder than the red curry. The herb that makes this dish special would be Sweet Thai Basils. Smells similar to Italian basils but more intense.

- 1 tbsp Palm Sugar - 1/3 cup Warm Water - 4 tbsp Lime Juice - 2 tsp Salt - 5 cloves Garlic - 1 cup Coriander - Chili as you like

🔴 Nam Jim Jaew - Thai Spicy BBQ Dipping Sauce with Tamarind
- Fish sauce 3 tbsp - Tamarind juice 2 tbsp - Lime juice 1 tbsp - Palm sugar 1/2 tbsp - Chili powder 1 tbsp - Ground toasted rice 1 tbsp** - Red onion - Freen onion - Coriander

〽️ Prik Nam Pla (Thai Chili Fish Sauce) - Every Thai Street Food restaurant has this sauce on the table. This one is not a dipping sauce, it’s more like a table sauce which we use to enhance the flavors of the dish. Some areas in Thailand might call it Nampla Prik instead of Prik Nampla. Both are the same and straightforward meaning. Prik = Chilis and Nampla = Fish sauce in Thai. Like salt and pepper in the west, it’s always good to have this with Thai meals.
〽️ Nam Jim Seafood (Thai Spicy Seafood Dipping Sauce) - Even though we call it a Seafood Dipping Sauce, as you can see in the video, I even dipped with grilled pork belly. It’s so good with the seafood from it’s spicy, sweet, salty and sour. But also good to go with ANYTHING even vegetables. The main character of this sauce is sharpness yet mellow. All the taste elements are so clear so you’ll have a perfect combo in one dip.
〽️ Nam Jim Jaew (Thai Spicy BBQ Dipping Sauce) - Good with any BBQ you’re planning to have. Beef, pork, chicken, lamb, etc. Not for seafood in my opinion, it’s not as light and fresh. Comparing to wine I’d say this one is the red and seafood dipping sauce is the white. Special character of this sauce is ground toasted rice(check out the link above).

📒Recipe: Thai Mango Sticky Rice Dessert | Thai Girl in the Kitchen
- 500g. Glutinous Rice (Soaked overnight or at least 4 hours) - 3-4 Ripe Mangoes
Sweet Coconut Cream Mixture - 400ml. Coconut Milk - 180g. Sugar (You can add more if you want sweeter) - 2 tsp. Salt
👉🏻 To cook sticky rice in a rice cooker: 1. Wash and rinse the rice as shown in the video. 2. Put the clean cloth sheet on the rice cooker pot. 3. Put the washed glutinous rice on top on the sheet (500g. Will be around 3.5 rice cup). 4. Pour 3.5 cups(same amount with rice). 5. Fold the cloth sheet and press the button to cook :)
