Boil chestnuts for 20 minutes.PEEL CHESTNUTSRemove from heat. Working 2 or 3 nuts at a time, leaving the rest in the hot water while you work, peel off the outer hard shell and the inner paper-like membrane; the membrane becomes difficult to peel when cooled even slightly.GRIND CHESTNUTSTransfer all chestnuts to a food processor and grind as finely as possible. Set aside.DISCARD BONES & ONIONBack to the stew: Remove meat from bones, if any, and discard bones. Discard onion.ADD SQUASH, BEANS, & HOMINYStir in butternut squash, hominy, beans and ground chestnuts. Simmer forabout 10-15 minutes, or until squash becomes tender but not mushy. Simmer longer for a thicker stew or use more ground nuts. For a thinner stew, add water or chicken stock.SEASON & SERVECoat the bottom of a large heavy- bottomed pot with cooking oil and heat over medium. Set to high for 4-6 hours until tender enough to shred with a fork.MAKE RED PEPPER SAUCESaute garlic in a little oil until fragrant, add in peppers, cayenne and paprika. Simmer, then blend and season with salt to taste.MAKE LARD MIXUsing a stand mixer or hand mixer with whisk attachment, whip lard, baking powder, and salt until light and fluffy.COMBINE MASA & LARD MIXIn a separate bowl combine masa and stock, mix by hand until crumbly. Using paddle attachment or your hands, fold together masa mixture and lard mixture. The texture should be soft, pliable and a touch sticky. Add splashes of cold water as needed if the dough is too dry.BRAISE BLEND & SHREDDED MEATRemove legs, shred meat off bones with a fork into smaller-than-bite-sizepieces. Transfer the braising liquid to a saucepan, then use a stick blender to purée. Simmer until just thick and adjust seasoning. Pour enough of theliquid over shredded thigh meat until just covered, tossing meat to evenly coat.FILL & FOLD HUSKWith the husk, smoother side up, tapered point down, spread a 1⁄4 - 1⁄3 inch thick layer of masa mix in a rectangular shape from the top right corner, 3-4 inches down. Leave 2” of the left side of the husk clean.Place 1-1.5 tbsp of the shredded meat mixture in center of the masa, fold masa over itself and roll tight towards the clean side, twist and fold up the end.STEAM TAMALESPlace vertically in a steamer (open end up) over boiling water. Snapping Turtles of Texas Texas Parks and Wildlife 2023-10-16 | Tips for identifying the two different species of snapping turtles found in Texas, the common snapping turtle (Chelydra serpentina) and the more rare alligator snapping turtle (Macroclemys temminckii). While common snapping turtles can be found throughout most of Texas, the alligator snapping turtle is only found in the eastern third of Texas and they're currently classified as a threatened species.If you see either of these turtles in the wild, you can contribute to their conservation by using the iNaturalist app to add your observations to the Herps of Texas iNaturalist project. Remove from heat and set aside to cool.COMBINE MEAT WITH RICEIn a mixing bowl, combine the meat, drained rice, and fresh herbs. Taste and adjust seasoning. Next, add a generous drizzle of extra virgin olive oil, and mix so that everything is well-incorporated.PARCHMENT PAPER & TOMATOESLightly oil a deep heavy bottomed pan with olive oil. Line the bottom of pan with broken grape leaves or parchment paper. Top with sliced tomatoes.FILL GRAPE LEAVESPlace leaves on cutting board, rough side up, cut off stem. Take 1 heapingteaspoon of the filling and place in the center of the leaf, then fold the sides over the filling and roll. Repeat with the remaining grape leaves or until you're out of stuffing.SIMMER & STOCKNeatly arrange the dolmas seam side down, in your prepared pot, keep them snug. Then place a small plate inverted on top. Bring the stock to a simmer and pour over the dolmas, make sure to cover the dolmas, add water if needed. Place a upside down plate on top the dolmas to keep them submerged.COVER & COOKNow cover the pot with the lid and cook over medium heat for 30-40 minutes until the liquid has been absorbed. Uncover and remove the plate, then pour juice of 2 lemons.COOL, THEN SERVERemove dolmas from heat. Allow to cool uncovered for 20 to 30 minutes before serving. Texas Wins Gold Medal From National Recreation and Park Association Texas Parks and Wildlife 2023-10-11 | Texas State Parks received the 2023 National Gold Medal Award for Excellence in Park and Recreation Management. The National Gold Medal Award Program is administered by the American Academy for Park and Recreation Administration (AAPRA) and announced at the National Recreation and Park Association (NRPA)’s annual conference. “It’s no secret to the more than 9 million people who visit Texas State Parks every year that we have one of the nation’s premiere systems,” said Rodney Franklin, director of Texas State Parks. “However, it is touching and fitting to receive this prestigious award during our centennial year, truly substantiating the progress we have made over the past century to fulfill the vision laid out by Gov. Patt Neff to provide places where the people of Texas could enjoy the beauty of this great state.” Founded in 1965, the Gold Medal Awards program honors communities in the United States that demonstrate excellence in parks and recreation through long-range planning, resource management, volunteerism, environmental stewardship, program development, professional development and agency recognition.
