The older your starter the lower the inoculation rate should be. So for a starter that hasn't been fed in a week try to use around 1% based on the flour. If the starter is way too old, chances are it has sporulated and needs a couple of additional feedings to become alive.

The mistakes we are having a look at:
1) Underfermented. You didn't ferment your sourdough bread for long enough.
2) Lack of dough strength. Knead your dough more or reduce the water amount
3) Underbaked. You need to bake your bread longer
4) Severely overfermented. You pushed the fermentation for too long. Your bread becomes very flat and the dough is sticky.

Slight overfermentation: The dough is flatter than usual. The pockets of air are quite small.
Overfermentation: You fermented your dough for too long. The gluten starts to break down. The dough will start to stick to your hands and/or banneton.
General flatness: Probably a lack of dough strength and/or you fermented for too long
Baked too hot: You have large pockets of air towards the top. The crust sealed too quickly.
Baked with too little steam: Similar to baked too hot.
Underfermented: This is also known as fool's crumb. Your gluten hasn't broken down. The dough is still quite stiff.

I also felt in a moral experimental mode and made a dough using the bassinage method. It allowed me to push the hydration of my dough up to 105%. Meaning that the dough has more water than flour. It's a great way to make your dough even more extensible.

For the dough itself I used:
- 450g bread flour
- 50g whole wheat flour
- 100g stiff sourdough starter
- 375g water
- 10g salt
Instructions:
1. Knead all together
2. Wait 15 minutes
3. Knead some more
4. Wait until your dough doubled in size. Apply a stretch and fold whenever you see the dough flattened out a lot. It will take 6-12 hours depending on your temperature
5. Shape it
6. Proof in fridge
7. Bake it at 230°C in the oven with lots of steam, or deep fry it like I did.
Probably making tiny doughlings would have been a bit better here. Just out of the fridge, cut them with a knife our dough scraper. Apply some batter and into the hot oil!

- 2 medium eggs, or 100g water
- 40g of stiff sourdough starter
- 2g salt

For the sauce I used some sourdough sandwich bread croutons paired with a nice creamy gorgonzola sauce. Retrospectively a sweet tomato sauce could have been a better pairing.
