Ingredients: 2 cups whole milk 2 cups heavy cream 1 cup sugar, divided pinch salt 1 1/2 tsp. vanilla 5 egg yolks 1 1/2 cups crushed vanilla wafers 2 bananas
Freeze your ice cream bowl overnight.
In medium saucepan heat the milk, cream, and half of the sugar, and salt. Bring to just boiling. Remove from heat. Combine egg yolks and remaining sugar, and beat until pale and thick. Add hot milk mixture to the yolks, 1/3 at a time, incorporating after each batch. Return the milk/egg mixture to the saucepan and heat until thickened. Do not boil. After thickened, remove from heat and add vanilla. Refrigerate mixture for 3 hours or overnight. Crush vanilla wafers, cut bananas into small pieces.
Pour into ice cream mixer bowl and turn on. Let mix for 20 minutes or until thickened. Once thickened, add wafers and bananas. Chocolate Cake in a Pumpkin
Cake Ingredients: Chocolate cake mix 1 cup water 1/3 cup oil 3 eggs 1 tsp. cinnamon 1/2 tsp. ground ginger 1/4 tsp. ground nutmeg 1/8 tsp. ground cloves
1 large (or two medium) pie pumpkins
Hot Vanilla Sauce: 1/2 cup water 1/4 cup sugar 1 Tbl. cornstarch 1/2 Tbl. butter 1/2 Tbl. bourbon or whiskey 1/2 tsp. vanilla butternut extract (or vanilla) pinch of salt
1. Mix all cake ingredients together until combined. 2. Cut top off pumpkin, scoop out seeds, and scrape down inside edges. 3. Pour cake mix into pumpkin until 3/4 full. 4. Bake in 350 degree oven for 1 hour. 5. Reduce heat to 300 degrees, and bake for additional 50-60 minutes. 6. Let cool 3-4 hours before cutting. 7. Make hot vanilla sauce and/or serve with ice cream. 8. If making vanilla sauce, combine first 3 ingredients in a saucepan on medium heat. Cook until thickened. Remove from heat and stir in additional ingredients. The variety of tacos we had over the day was astonishing. Of course the various meat options were vast: carnitas, barbacoa, shrimp, chicharron, lengua, chicken, white fish, salmon, suadero, steak, buche, al pastor, and chuleta. Then there were surprises like the taco birria and the avocado taco.

Potato Breakfast Hash
Ingredients: Potatoes Oil Salt and Pepper to taste Eggs Butter Hot sauce, optional
Dice the potatoes to any size you like. Toss in a bowl with vegetable oil and salt and pepper to taste. Place in a 425-degree oven for 25 minutes, or until potatoes start to brown on the edges. When potatoes have about 5 minutes left of cooking, heat a skillet on medium. Add a teaspoon or so of butter to the pan. Crack eggs into the pan and let fry until cooked the amount you prefer. Heap potato hash on plate, top with fried egg, and add hot sauce and more salt if you like! It's a Persian dessert, and the combination of ingredients is very intriguing. It includes things like dates, chocolate, bananas, and coffee! We made a few substitutions based on what was in our pantry and fridge. The recipe is below, with the more traditional ingredients noted.
MAJOON (Date Shake)
1 cup ice 1.5 cups milk 1.5 cups ice cream (we used chocolate, more traditionally saffron ice cream plus cocoa powder) 1 very ripe and frozen banana 5 dates 1/4 cup nuts (we used pecans, more traditionally a mix of walnut and pistachio) 1/4 cup cold brew coffee 1 tsp. vanilla 1/2 tsp. cinnamon
Blend until smooth. You may still have some small date and nut bits. THANKSGIVING PIE Ingredients: pre-baked and cooled 9" pie crust 1 1/2 pound root veg (pumpkin, sweet potato, butternut squash, or carrot) 2 tablespoon butter softened 1/2 cup sugar 1/2 cup brown sugar packed 2 large eggs 1 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon salt 1/4 teaspoon ginger 1 teaspoon vanilla 3/4 cup half and half 1 tablespoon flour Instructions: 1. Peel and chop root vegetable of choice. 2. Place veg in large pot, cover with water and bring to a boil. Reduce heat to medium and simmer until tender, about 25 - 30 minutes. 3. Drain water. Return veg to pot. Cook veg over low heat, stirring constantly, for a few minutes, to steam off all excess water. 4. Puree veg and butter until absolutely smooth. You can do this in a food processor, blender, food mill or with a ricer. 5. After smooth, mix in sugars, eggs, cinnamon, nutmeg, salt, ginger, vanilla, half & half and flour until well combined. 6. Pour mixture into prebaked & cooled 9" pie crust. 7. Bake at 350° for 50 - 60 minutes or pie is set and toothpick inserted in center comes out clean. 8. Cool on wire rack. Refrigerate for 1-2 hours before serving. DOUGH: 1 2/3 cup water 2 tsp. active dry or instant yeast (1 tsp. if letting sit overnight) 1/4 cup olive oil 2 tsp. salt
TOPPINGS: Anything you like. All meat/veggies should be pre-cooked because the grill just melts the cheese.
INSTRUCTIONS: Mix yeast (see various methods below) and water in a stand mixer and let sit until dissolved.
Stir in oil, then add flour and salt. Mix with a spatula until shaggy. Add dough hook attachment and mix for 5-7 minutes. Dough should form a smooth ball. Use pastry scraper to divide dough into 8 lumps and form each into a ball. Add to a greased pan, then spray the top and cover with plastic wrap.
1-HOUR METHOD: Use 2 tsp. yeast and let sit for 1 hour or until doubled in size. OVERNIGHT METHOD: Use 1 tsp. yeast, cover, and place in fridge overnight. Take out of fridge and let warm up for an hour before shaping.
Pat the dough ball down on a spot of olive oil. Then roll out or press with fingers until it forms a circle. Heat grill with half the burners on.
Place dough on the hot side of grill and cook on one side until lightly browned and bubbly. Then flip onto the cooler side and add toppings. Cook with lid shut until cheese has melted. Summery Orange-Lime Meringue Pie INGREDIENTS 1 pre-baked crust FILLING: 1 cup sugar 1/4 cup cornstarch 1/4 teaspoon salt 1 cup orange juice (freshly squeezed is the best!) 1/2 cup water 3 large egg yolks, well beaten 2 tablespoons lime juice, freshly squeezed 1 tablespoons lemon juice, freshly squeezed 4 teaspoons grated orange zest 1 tablespoon butter MERINGUE: 3 large egg whites 1/8 teaspoon cream of tartar 6 tablespoons sugar
1. For filling, combine the sugar, cornstarch and salt in a saucepan. Whisk in orange juice and water until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Gradually stir 1 cup hot filling into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in the lime juice, orange zest and butter. Pour hot filling into pie crust.
2. For the meringue, beat egg whites in a bowl until foamy. add cream of tartar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form. Spread evenly over hot filling, sealing edges to crust.
3. Bake at 350° for 12-15 minutes or until golden. Cool on a wire rack for 1 hour; refrigerate for at least 3 hours before serving.
