Here are a few ways I simplify lunch so I do not burn out:
1. Use leftovers for lunch
This can be exactly what you had the night before or a new version of it. In this video, I used leftover salami and brie from a cheese board and turned it into a simple, delicious sandwich with a few quick additions.
2. Prep one thing
I like to keep one easy add-on ready for lunches during the week. This week it was a Brussels sprout salad with apples. Next week it might be sourdough bread for toast. Another week it could be boiled eggs. Just one prepared item can make lunch feel much easier.
3. Do not panic when the cabinets are looking dull
Honestly, even in my nutrition-forward household, we sometimes have cereal for lunch. And when even that feels uninspiring, snack boards save the day. Cut up the little pieces of fruit, add crackers, cheese slices, nuts, and maybe some pickles. Call it a picnic and enjoy the simple moment with your kids. 🤍
