Mascarpone whipped cream:
226 g heavy cream
4 TBSP powdered sugar
113 g mascarpone
1/2 tsp orange zest
Whip to medium-stiff peaks
Strawberry consommé:
2 lbs strawberries
45 g granulated sugar
70 g orange juice
For the consommé, combine quartered strawberries with sugar and orange juice in a heat-proof bowl. Cover the bowl in 3-4 sheets of plastic wrap so that it is airtight. Place bowl over a pot of simmering water and let cook for roughly 3 hours for the berries to release their juices. Add water to the pot periodically as needed. Remove the bowl and carefully discard the plastic wrap. (Watch out for steam!) Strain the contents through a fine mesh sieve for a couple of minutes or until all the juice drips through on its own (do not squeeze the excess, it could make the juice cloudy!). Discard the strawberry pulp and serve the consommé warm or chill and serve it cold. Serve with shortcake and dollop with mascarpone whipped cream.

Plain: Top the dough with additional olive oil and coarse salt. Bake for 17 to 22 minutes.
Rosemary-Olive: Add pitted olives to taste (1/2 cup or so) and freshly minced rosemary. Bake for 17 to 22 minutes.
Garlic Confit and Lemon: Break up 1 bulb of garlic and simmer the cloves in olive oil for 20 minutes.
Top the dough with the garlic, fresh lemon zest, and coarse salt to taste. Bake for 17 to 22 minutes.
Sandwich: Season some sliced bell peppers, halved roma tomatoes, and garlic cloves with olive oil, salt, and pepper. While the oven preheats, roast the vegetables on a cookie sheet until jammy, withered, and browned on the bottom. Martin dressed his sandwich with basil mayonnaise, Scamorza cheese (smoked mozzarella), and the vegetables.
