Ingredients (makes 16 small or 10 medium loaves):
500g white all purpose flour (11% protein recommended)
400ml water
10g salt
10g sugar
7g dry active yeast
Bran mixture:
500g fine wheat bran
350g white all purpose flour
Recipe summary:
1- Make a preferment the night before
2- Turn the preferment into dough by mixing the rest of the ingredients with it using the technique outlined below
3- Portion the dough out into individual pieces onto trays filled with wheat bran and flour then rest
4- Take pieces of dough and lightly stretch them with your hands, then bake them one by one
Pre-ferment:
In a bowl add 200g of the flour, 200ml of the water and 1g of the yeast from the original ingredient amounts. Mix until well combined and the mixture is sticky. Cover and leave for 12-16 hours.
Assembling bread dough:
1. In the bowl of a stand mixer add the preferment, remaining flour, remaining yeast, sugar, salt, and half of the remaining water. Mix on low until a rough dough comes together (about a minute).
2. Knead the dough on low speed for 5 minutes until smooth, then while the machine is running add half the remaining water and incorporate. Once incorporated repeat to add the rest of the water and turn the speed up to medium.
3. When all the water has been absorbed and the dough starts sticking to the bowl, knead for a further 2 minutes. Dough should be very sticky and stretchy. Cover and let it rest for 1-2 hours depending on ambient temperature or until it doubles in size.
4. Gently knock out most of the air, by releasing the dough from the sides of the bowl.
Bran mixture:
If you do not have fine bran, grind the wheat bran using a blender for 15 seconds and sift it into a large bowl. Mix the bran and flour until well combined and pour the mix onto baking trays or sheets (ideally ones with high walls). The bran and flour mixture should be at least 1 cm deep.
Portioning and baking the dough:
1. Cover trays with bran-flour mixture. Have a plate of flour ready.
2. Wet your dominant hand and flour the other. Using the wet hand, scoop dough and let it dangle from your palm. Swing palm in circular motions to slap dough into hand, until it forms a taught ball. Pinch between thumb and finger to portion, then drop onto floured hand. Bounce in palm to coat with flour, then place unfloured-side down on bran. Space portions well apart.
4. Cover and rest 45-60 minutes in a warm room.
5. Heat home oven with pizza stone/steel to maximum temperature (250Β°C) for 1 hour, or pizza oven to 350-400Β°C for 20 minutes.
6. To bake: Dust peel with bran mixture. Gently lift dough by curling fingers under it through the bran. Support with all fingers, shake off excess bran, and transfer to peel. Pat gently to shape into a circle. Shake to ensure it can slide on the peel.
7. Bake until lightly colored (4-5 minutes in home oven, 90-120 seconds in pizza oven). In a home oven you should take it out when it has started to lightly change colour, in a pizza oven watch for leoparding then remove when lightly browned.
10. Cool bread on a wire rack for 20 minutes, do not stack until cooled to prevent the bread from softening. Store in an airtight bag or container for up to 3 days or freeze and reheat when needed.

Wing wet rub
50g yogurt
50g pepper paste (substitute with 50g tomato paste + 2 tsp paprika)
4.5 tsp sumac
2 tsp pul biber
2 tsp salt
1 1/2 tsp black pepper
1 1/2 tsp oregano
1/2 tsp MSG
3 garlic cloves, minced
20ml olive oil
1.5kg wings
1. Mix the rub ingredients together into a paste.
2. Add the paste to the wings and mix thoroughly to coat. Use right away or rest for 1-6 hours.
3. Fill skewers with 7-8 wings each, space evenly.
4. Grill on ashed over coals for about 8-10 minutes, rotating frequently to prevent burning. Once visibly cooked, slice wings on either side then cook for 30 seconds on each side.
Bulgur Pilaf
20ml vegetable oil
1 medium onion (diced, 0.5cm)
1 mild green chilli (thinly sliced)
1 kapya pepper or 1/2 red bell pepper (thinly sliced)
1 garlic clove (minced)
10g tomato paste
10g pepper paste
1.5 tsp salt
2 tsp dried mint
3/4 tsp black pepper
1/2 tsp pul biber
120g crushed tomato (canned or freshly grated)
1.5 cups bulgur (270g)
20g butter
500ml hot water (Use 100ml more water if you want a softer grain, we prefer a bit of a bite)
1. To a medium pot over medium high heat add the oil and heat. Add the chopped onions and sautee until translucent and corners are starting to turn golden.
2. Add the green chilli, red pepper and garlic and cook until soft. Add the pepper and tomato pastes and cook for 1-2 minutes until fragrant and they start to stick to the pot.
3. Add the spices then crushed tomatoes to deglaze the pot. Mix well until the base of the pot is clean.
4. Add the bulgur, butter and water. Stir until the butter has melted and bring the pot to a simmer, then cover and simmer for 15 minutes.
5. Once the bulgur grains have inflated and all liquid has disappeared, turn the heat off. Place a kitchen towel or kitchen paper over the pot and cover with the lid, then steam for 10 minutes.
6. Fluff up the grains with a fork before serving.

Karkadieh (Hibiscus drink)
40g Hibiscus flowers or petals
1000ml water
150g sugar
1- Add hibiscus and water to a small pot. Bring to a boil over high heat and cook for 10 minutes.
2- Turn the heat off, then leave the hibiscus to infuse for 10 more minutes.
3- Pour through a strainer to filter out the flowers, then add the sugar while still warm and mix to dissolve.
4- Chill completely then serve. You can dilute this to taste with extra water
Hibiscus sorbet (makes two 400ml tubs)
50g hibiscus flowers
1000ml water
250g sugar
25ml lemon
5 mint leaves
1- Add hibiscus and water to a small pot. Bring to a boil over high heat and cook for 10 minutes.
2- Turn the heat off, then leave the hibiscus to infuse for 10 more minutes.
3- Strain the liquid, then add the sugar and lemon juice.
4- Add mint leaves to a container then pour in liquid and freeze.
5- Use a ninja creami on the sorbet setting to turn into a creamy sorbet.
Hibiscus jam
150g Hibiscus petals
300g sugar
1000ml water
5g pectin
1- Add hibiscus and water to a pot. Bring to a boil over high heat and cook for 10 minutes.
2- Once the petals have softened, strain the liquid into a jug keeping the petals aside.
3- Weigh out 150g of the softened petals and 600ml of the liquid into the pot. Add the sugar except for 50g.
4- Mix the pectin with the remaining sugar then add to the pot.
5- Heat the pot over medium high heat, stirring often until it comes to a gentle boil
6- Cook until it reaches 103 degrees Celsius. Pour into a sterilised jar and allow to cool

1/2 hibiscus drink prepared as per recipe above excluding the sugar
250g of Sugar (per 125g of hibiscus drink)
1/2 tsp citric acid (per 125g of hibiscus drink)

1/4 tsp salt
1 tsp Honey
Tangy Tahini Sauce
75g tahini
75g mayo
50ml water
15ml lemon juice
5g ACV
2 small preserved lemons (~40g)

Herby Tahini Sauce
75ml lemon juice
65g tahini
50g mayo
25g parsley
25g coriander
20g green chillies

Meat options:
Chicken thigh
Ribeye steak cubes
Boneless lamb chops
Any other tender and fatty meat
Turkish inspired
Rub (enough for 1.5 kg of meat):
2 tbsp pul biber
1 tbsp salt
1 tbsp oregano
1 tbsp sumac
1 tbsp garlic granules
1 1/2 tsp black pepper
1 1/2 tsp cumin
To coat:
500g meat
2 tbsp Turkish rub
1 1/2 tbsp extra virgin olive oil
Glaze:
20g tomato paste (or pepper paste)
1 tsp paprika (if not glazing the chicken, add this when coating)
50ml water
Palestinian inspired
Rub (enough for 1 kg of meat):
2 tbsp zaβatar
2 tbsp sumac
2 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper
To coat:
500g Meat
2 1/2 tbsp Palestinian rub
2 tbsp extra virgin olive oil
Glaze:
2 tbsp honey
2 tbsp lemon juice
2 minced garlic cloves
Moroccan inspired
Rub (enough for 3 kg of meat):
2 tbsp salt
1 tbsp black pepper
1 tbsp turmeric
1.5 tsp ginger
1.5 tsp cumin
1 tsp cayenne pepper
3/4 tsp cinnamon
To coat:
1 tbsp Moroccan rub
1 tbsp extra virgin olive oil
1 tbsp lemon juice
2 garlic cloves
5g parsley
5g coriander

Recipe as demonstrated:
2kg bone-in meat (lamb shanks or another joint)

6 small pigeons 120-150g each (substitute with any other small game bird, avoid aged hung birds)
Offal and onions:
30g butter
3 pieces of mastic

150g mixed pigeon offal (substitute with chicken liver)

350g medium grain rice (calrose)

Tahchin Morgh has got to be one of the fanciest rice dishes of all time. This Persian rice dish is made by layering saffron rice and tangy barberry chicken together, then the tahchin is baked until the rice goes crispy. The tangy barberry gravy combined with the crispy layers of rice make it so pleasurable to eat and packed full of flavour.

Stock:
1.2 kg chicken thighs/legs
2 medium onions
1.5 tsp salt
1 cinnamon stick
1 tbsp oil (stock)
1 tsp black pepper
1 tsp ground cardamom
150g barberries
Rice:
600g rice (3 cups)
250g thick greek yogurt
30g neutral oil
1 whole egg
2 egg yolks
0.5g Saffron
100ml hot water
1 tsp salt
1/2 tsp black pepper
Topping:
50-75g barberries
2 tsp sugar
15g butter
To make the chicken stock:
1. Thinly slice the onions and set aside.
2. Heat 1 tbsp of neutral oil in your stock pot and sear the chicken pieces until skin is golden brown. Remove the seared chicken and set aside.
3. In the same pot, add 1.5 tsp salt and the sliced onions then fry until translucent.
4. Add the chicken and cinnamon stick to the pot. Cover with water and bring to a boil. Use a mesh strainer to skim off the gunk. When all impurities are removed lower the heat to medium low, cover pot and let the stock simmer for 30-45 minutes depending on the size of chicken pieces.
5. Remove the chicken once cooked and set aside.
6. To the onions and stock add the black pepper, cardamom and barberries and simmer on medium to high heat until the stock is reduced to a thick-ish onion sauce (about 20 minutes).
To cook the rice:
1. Wash and pre-soak your rice. Ideally before starting the stock.
2. Crush the saffron, and pour in the hot water. Let this infuse for around 15 minutes.
2. In a large bowl, add all the ingredients (except for the rice) and whisk until well combined.
3. Drain the rice and add it to the yellow mixture. Mix until all grains of rice are coated in yellow goodness.
To make the barberry topping:
1. In a small saucepan, add the sugar and butter and melt on medium heat. Add the barberries and cook until the berries are inflated.
How to assemble and cook the tahchin:
1. Shred the chicken into thick strips. Into a medium bowl, add the chicken and 1/2 to 2/3 of the onion sauce (reduced stock). Mix until all the chicken is coated in the sauce.
2. Coat a 25cm non-stick oven proof pan in about 40g of neutral oil, sides included. To the pan, add 2/3 of the rice mixture covering the base and the wall. Add the chicken mix then cover with the remaining rice mix.
3. Distribute the cubes of butter equally over the rice.
4. Cover the rice with a lid or foil and bake in a preheated oven at 180C for 45 minutes. Uncover the rice then bake for another 30 minutes.
5. Let the tahchin rest for 10 minutes then flip onto a large platter.
6. Top the tahchin with the barberry topping and slivered pistachios.
This is Hijazi Almond Coffee and it's a Hot Drink from the Hijaz Region of Saudi Arabia that is served all year round during special occasions. It's sweet and creamy, but the colour makes it clear, this doesn't contain coffee at all. So why is it called that?

Recipe (makes 4-5 mugs):
1L Whole Milk
60g Rice Flour
75g Blanched Almonds
50g Sugar
To garnish
Flaked Almonds
Ground Cardamom
Ground Cinnamon
1. Boil the almonds 5 minutes then grind to fine pieces (not flour).
2. In a saucepan add the remaining ingredients and whisk continuously on medium heat until the liquid thickens.
3. Serve in your mug of choice and garnish with toasted flaked almonds, ground cardamom and cinnamon (or any topping of your choice).

Kefta:
500g mince lamb or beef
1 small onion (100g grated)
10g chopped parsley
10g chopped coriander
2 garlic cloves
1 tsp salt
1 tsp paprika
1/2 tsp cumin
1/2 tsp black pepper
1/2 tbsp olive oil
1. Grate 1 small onion, keeping the juice and mince the garlic.
2. Add all ingredients to a large bowl and knead the meat until sticky.
3. Portion into small meatball and roll into ball.
Shakshuka
4 tomatoes (grated 400g)
1 onion
20g tomato paste
1 cup water
1/2 tsp salt
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp black pepper
1 tbsp olive oil
5g chopped parsley
5g chopped coriander
3-4 eggs
1. Grate the tomatoes.
2. In a saute pan, heat the oil on medium high heat. Add the onions and cook until translucent.
3. Add the tomato paste and cook off for a minute or two.
4. Add the grated tomatoes and water. Simmer for 15 minutes then add the spices, herbs and meatballs.
5. Cover the pot and cook for another 10 minutes, turning the meatballs half way through.
6. Once thickened form a well in the sauce to place each of the eggs.
7. Break an egg into each of the wells, sprinkle some salt and pepper then cover and cook for 3 minutes for runny yolks.
8. Garnish with fresh chopped herbs and serve with crusty bread.
This Persian hot dog sandwich called Sosis Bandari is packed to the brim with flavour. It's got loads of spiced caramelized onions that are mixed with sliced and fried hotdogs, and when you fill a sandwich with them, it's guaranteed to be a great meal.

Per cup of Turkish Coffee:
7.5g Finely Ground Coffee
75g Water
7.5g Sugar (optional)
Mix the coffee with 1/3rd of the water until smooth
Add the remaining water and heat over medium low heat, stirring for the first 60 seconds
Heat for 2-3 minutes then briefly stir
Continue heating for another 4-5 minutes until lots of steam is coming from the pot and the surface of the coffee is getting foamy
There's few better sandwich fillings, than some awesome grilled chicken served with salad and a sauce. Today I put two sandwiches with very different flavour profiles, but both heavy hitters when it comes to flavour.
