SQUASH SOUP 1 butternut squash ( blend 3/4 and save 1/4 for topping 200ml coconut milk 500ml veg stock 2 courgette 2 large carrots
CRISPY LENTILS 1 x tin of cooked lentils 1 tsp olive oil 1 tsp soy sauce (can omit completely) 1 tsp tumeric powder (optional)
Served with brown rice noodles for me and spelt pasta for my prince x
Topped with fresh Thai basil leaf or coriander and a drizzle of extra virgin olive oil. I used brown rice noodles and my lil man had spelt pasta - a pasta shape he already loves.

When I was younger Curry Goat was something i LOVED, then i stopped eating meat, but I still wanted to make a curry that resembled one of my faves so I made this. Curry no Goat. It doesn't taste like goat.... because its literally not goat but it is nostalgic to the classic in a plant based way.

Growing up chicken and rice was a dish I had A LOTTT, so this is very nostalgic of that but with some really fun spices alongside citrusy sweet orange. I couldnt stop eating this. Seriously. So…. Good.
Spice mix 3 green cardamon pods, pods moved 1 tsp coriander seeds 1 tsp caraway seeds 1 tsp cumin seeds
Paste 1/2 of the spice mix above 1 tsp agave 1 tsp orange juice and zest 1 tsp smoked paprika or ground chilli for heat 1 tsp olive oil 180g ****Heura Original Plant-based Chicken Chunks**** Half spices from above 1 onion, diced 4 cloves of garlic, minced large handful of cherry tomatoes 1 tsp coriander leaves 1 1/2 measured cup of washed basmati rice 2 1/2 measured cup of water Veg stock cube Orange zest Squeeze of lemon Salt and Pepper Optional step: Burnt orange
To a bowl add half of the spices, top with agave, orange zest and juice, smoked paprika or ground chilli for heat and olive oil.
Place plant based chunks in a pan, add paste and cook until golden brown. Remove chunks from pan and set aside for later.
In the same pan, add left over spices, onions, garlic and cook down until onions have softened. Then add cherry tomatoes, measured washed rice, measured water, coriander leaves, veg stock cube, orange zest and a sqeeze of lemon juice. Season to taste with salt and pepper. Place plant based chunks on top, bring to a boil then reduce heat place a lid on top on a low simmer for 10 minutes. Then turn off heat, and allow to sit with the lid on for another 5 minutes.

Cavolo Nero Pasta with Tarragon & Olive Pesto #shorts Pasta that makes you soul dance and you immune system
The pesto can be used for soooo many things so make sure you save the recipe!
For the pesto add all ingredients into a small hand blender OR pestle and mortar and mix into a course paste. Add the olive oil last and taste for salt and pepper.
Pull cavolo nero leaves of the stem. Add the leaves to a blender. Cook down the stems in hot water until soft, then place in blender with the leaves. Then add hot pasta water to blender with lemon juice, nutritional yeast and salt and pepper. Blend until completely smooth - you could drink this.

Main lessons: Use quality organic dried chickpeas (best for flavour as well as nutrition) Remove skins with methods shown (only way to get it super smooth) Make a little seasoned paste with the Tahini lemon garlic and salt before mixing in the blender Always use quality lightly roasted Tahini, bitter ones with create bitter hummus

Easy and delicious ital inspired curry with fried plantain, quinoa and salad! If you don't like coconut milk or have it you can sub for an extra 1/2 of water with a nut butter (cashew/peanut/almond) for a richer taste. If you don't have chopped tomatoes use 3/4 large tomatoes. If you don't have quinoa use sub for rice/brown rice/couscous etc. Hope you enjoy!!

Topping Icing sugar mixed with blood orange topped with crushed pistachio nuts METHOD Pre heat oven to 180 degrees c. In a large bowl, sive flour, baking soda, cinnamon. Add a pinch of salt and mix the dry ingredients together. In a separate bowl, mix together plant based milk, vegetable oil, sugar, vanilla extract, vinegar/lemon juice, and apple sauce to combine. Tip in the chopped apples in with the wet ingredients. Combine the wet ingredients with the dry and gently mix together. Careful not to overwork the mixture but still combine all ingredients. Place mixture into a prepared loaf tin and place in the oven for 45 minutes. Do the knife test! Insert a clean knife into the center of the cake, If the knife comes out clean, it's done. If it comes out gummy place it in the oven for another 10 minutes then check again.
