Saute shallot and 1tbs garlic in 1 tbs of avocado oil/high temp oil on medium heat for 2 minutes. Add ground beef and sausage until cooked. Drain and set aside2.) Add 1 tbs of avocado oil/high temp oil. Saute 1 tbs minced/chopped garlic, 1 red and yellow onion diced , 1 bell pepper chopped and mushroom chopped until translucent3.) Add meat to veggies cook for 2-3 minutes4.) Add in chopped tomatoes cook for 2-3 minutes 5.) Add a "pinch" of baking soda and cook for 1-3 minutes6.) Add 1.5 -2 cups of beef stock. Turn heat to medium high to boil for 5 minutes7.) Add in chili, kidney and black beans. Add in 2-3 tbs of chili powder, onion powder, cumin, garlic powder, pepper, 1 tsp of salt and ginger and 1tsp of minced/chopped garlic8.) Reduce heat to medium low/simmer uncovered for 30-45 minutes. If you want a thicker chili simmer uncovered. If you would like more liquid cover with lid for half the cooking time9.) Once cooked to desired consistency, turn off heat and add chopped jalapeño and cilantro10.) Top with cheese, sour cream and chives. Serve and enjoy!
