I used the Statesman Rear Tine Tiller which I purchased new 24 years ago while living in the Raleigh, NC area. We were in Johnston County, and traveled over to Clayton, N.C. often to a garden center to shop for garden supplies. It's still going strong.

PIT COOKED BBQ & CHICKEN | OAK FIRED BBQ | BEST SC BBQ | WSM SETUP

Phil N Florence 2020-04-12 | This cook is using the Weber Smokey Mountain Smoker as a SC Pit Style Oak wood fired BBQ. Close down the top vent and two of the bottom vents, an leave the third vent cracked open. All smoke venting is out of the front door which is left cracked open about 1 1/2 inches and wired in place. This is a microcosm of a SC whole hog pit style cook where the meat is meat side down about 20 inches above the shoveled in oak red hot cinders. The WSM is not being used as a smoker on this cook. The meat is roasting over the oak cinders. This is the only way to produce the flavor you get from this method which is a traditional SC way of doing BBQ pork. The cooker ran a little on the high side at about 300 for the first two hours then down around 270-280 the last 4 hours. The cook was a huge success. Also cooked 2 whole chickens cut and quartered which took on the same flavor and was also delicious. This was the best I've done.

Phil N Florence 2020-03-29 | This video shows how to hang ribs PBC style in the Weber Smokey Mountain 22. I used the Weber hanger attachment (no longer offered) but there are other hanger options available online at Gateway Drums & Hunsaker which offer rib hangers for their equipment which will also work in the WSM 22. Thanks to Ruben at The Swine Life Backyard BBQ channel for allowing me to use a couple clips from his video comparing the Hunsaker and Gateway Rib hangers. I used rubs from Uncle Steve's Shakes and SNS GRILLS, along with some Huli Huli homemade sauce to go on the ribs. I used the large capacity charcoal basket and minion basket sponsored by Arbor Fabricating made for the WSM. This turned out to be a fast cook which only took 2.5 hours. The pit temp averaged about 275-290.

Huli Huli Sauce Recipe

1 C Ketchup
1/2 C apple cidar vinegar
1/4 cup brown sugar
1 C pineapple juice
2 Tb sesame oil
1/3 C soy sauce
2 Tb freshly minced ginger
2 Tb Worchestershire sauce
1 Tb lime juice
1/2 C honey
2 tsp salt
1/2 Tb black pepper
1/4 tsp cayenne pepper
1 Tb garlic powder
1 tsp onion powder

mix all ingredients in 2 qt sauce pot, bring to bubbly medium, then lower to simmer and stir frequently for 30 minutes to reduce down to right consistency. Use same day or store in fridge.

We cooked/smoked some cheap Walmart $10 Beef Back Ribs, and one rack of Premium Spare Ribs on the SNS KAMADO. It took about 3 hours and 45 minutes cooking at an avg of 300 F.

Phil N Florence 2020-02-02 | After watching Rob at The BBQ Pit Dog cook up some pork tenderloin, it persuaded me to do the same. I used the SNS KAMADO with the standard kamado setup, brought the meat up to an internal temp of 149 F, then removed the heat place and seared the meat over open flame. I used two different rubs. One was a homemade recipe from Kent over at Daddy Dutch BBQ he calls Sweat Heat, and the other one was from Uncle Steve's Shakes particularly his Spicy R rub. The sauces used were my homemade Pif Sauces, one being a Carolina style sauce, the other a cherry habanero sweet & spicy. Both turned out very nice.

Broccoli Casserole

16 oz. chopped broccoli, cooked and drained
1 Cup mayo, not salad dressing
1 can cream of mushroom soup
1 small onion chopped
3 eggs, beaten
1/2 stick margarine, melted
1 1/2 Cups sharp cheddar cheeze, grated
Salt & Pepper to taste
Ritz Crackers

Mix all ingredients except crackers, with prepared broccoli. Pour into a lightly greased casserole dish. Crumble Ritz crackers to cover top completely. Bake at 350 F for 30 to 35 minutes.

SNS KAMADO | REVERSE SEAR RIB-EYES | BEST RIB-EYE STEAK | GRILLED STEAK

Phil N Florence 2019-11-24 | In this cook, we used the reverse sear method with the slow n sear accessory to offset cook and grill rib-eye steaks until the internal temp on the meat was approx. 118, then removed the steaks, patted dry, applied some olive oil and crushed black pepper to both sides. After adding another half chimney of red hot coals to the slow n sear, got the temps of the charcoal to a very high searing temperature. Then put the steaks back on directly over the hot coals at one minute intervals, spinning the easy spin grate and flipping the steaks between each time. After two minutes on each side we took the steaks up to 130 F internal for med/rare cook, then removed. we allowed them to rest for 10 minutes. The steaks turned out beautiful.

Banana Split Pie Recipe

2- Ready made Graham Cracker Crust
1- 8 oz pkg cream cheese
1- 16 oz Large container of cool whip
1- large can crushed pineapple (strained)
1- 8 oz jar marachino cherries, chopped & drained. save some juice
1- can eagle brand sweetened condensed milk
1/2 cup pecans or walnuts finely chopped
1/4 cup lemon juice-1 Tb cherry juice
3- banana's cubed
1- cup sweetened flaked coconut

Using a blender,
Blend together the cream cheese and condensed milk.
Gently fold in the whipped topping.

Toss the cubed banana's in the lemon juice. This keeps the bananas from turning color, and extra flavor.

Stir in the crushed pineapple, cherries, bananas, coconut, and pecans until mixed in well.

Pour all of this mixture into your pre-crust, cover and refrigerate for 4 hours. It's also good to freeze 30 minutes before serving. This gives it more body, and makes it easier to cut the pie more cleanly.

The pie freezes well.

Phil N Florence 2019-11-10 | I smoked two 9 lb boston butts on a modified Texas Original Pit, some call a stick burner because you burn real splits of oak, hickory, pecan or other hardwoods. The cook took 7 hours and 51 minutes to reach an internal temp of 200 & 201 F. It was removed from the pit, pulled, and sauce added. I did need more salt & pepper.

ELEGANTE GRITS RECIPE
1/2 lb Jimmy Dean Pork Sausage (mild or hot)
1 can original Ro-Tel tomato and chilies
1 (8 oz) pkg Velveeta cheese cubed
1 cup of grits
2 cups of half n half
2 cups water
Fry sausage in a sauce pan and drain
Place sausage in crock pot along with the velveeta, Ro-Tel cook on med heat
On stove top, bring water and half n half to a boil in 2 qt pot.
Add Grits and 1/4 tsp salt.
Reduce heat to low and cook for 10 minutes.
Add the grits to the crock pot with other ingredients.
Cook until cheese is melted and grits become creamy.
More water can be added to thin if too thick.
Variation: can use fried bacon or ham.
If large crowd is expected you can double the recipe

WSM BRISKET COOK | BBQ GURU | BEAST BASKET

Phil N Florence 2019-10-06 | This is a 11.25 lb. brisket cook featuring the Weber Smokey Mountain, THE BBQ GURU, and The Beast Basket from Greg over at THE WOODSHED SMOKE AND BBQ. I used the water pan and smoked the brisket for 4 hours and 15 minutes until it reached a stall at 169 degrees. Then I wrapped it up in 2 layers of foil with some beef broth and Worcestershire sauce and put back on the smoker for 2 and half more hours. Since it was a prime brisket it took only 6 and a half hours to reach an internal of 207.

Phil N Florence 2019-10-01 | Due to hard to roll across paver joints, I replaced the type wheels on the wsm, and to add extra strength, added stretchers between each wheel bracket so it would roll as one wheel across the pavers. The upgrade was highly successful. There is an easier way to achieve this by using flat steel stock with holes across and between each wheel. I added a picture how to do this just like fellow pitmaster Rob Weiss did his. That way is much more simple and easier which I suggest you follow if you are interested in this mod. I am well pleased with the outcome and it works great now.

Phil N Florence 2019-09-22 | This is grilled and smoked chicken drumsticks cooked on the Weber Smokey Mountain. I used the Arbor Fab Large Charcoal Basket and began the fire in the Minion Starter Basket. The cooker ran about 250 F for an hour fifteen minutes, then we cranked it up to 350 after saucing. Total cook about 1.5 hours. Wrapped the veggie pan up in foil and continued to cook about another 30 minutes to get them done.

HOMEMADE HOT SAUCE | 4 PEPPER HOT SAUCE | PIFS HOT SAUCE | PEPPER SAUCE

Phil N Florence 2019-09-19 | I decided to make some hot sauce using peppers from my garden. It is my first time trying this. Thanks for the tips from Nate over at White Thunder BBQ YouTube Channel and Joshua Weissman YouTube Channel. I think it turned out good for my first stab at it. The heat level is similar to Tobasco Hot Sauce in my judgement. I did a Tablespoons of sugar and some lemon juice to the one bottle I had in the fridge which I think helped cut down on the sharpness of it. Also, added some tomato sauce/water 1/4 mixture, one TB white vinegar, and one TB lemon juice to the other six bottles to smooth it out some. Ended up with the heat comparable to Texas Pet IMO. Next time I'll probably try something different. I'm pleased with it overall.

Recipe for hot sauce as shown for one recipe. I had more peppers so I doubled it.
I used two times as many peppers so I doubled some of this recipe
1 1/4 lbs of chili peppers
1 1/4 quarts of water
3 1/2 TB of kosher salt
2 chopped shallots (can use onion)
6 cloves of garlic chopped
De-Stem and chop up all peppers and other veggies
Put into container and pour the salt brine over and cover peppers with one Tablespoon of sugar.
Use a weight (I used casserole dish lid) on top to make sure peppers stay under the brine liquid. Since you will stir once daily, I don't think this is a big deal.
At the end of 2 weeks, strain out peppers from the brine. Keep brine to use a small amount next step.
Using a blender, add a cup of white distilled vinegar and blend the peppers until finely grated.
Pour into screen filter and push out all the juice, then discard the pulp.

After blending and filtering out the pepper juice, I poured into a 2 qt pot, then added 6 Tablespoons of tomato sauce with 6 Tablespoons of water, 1 Tablespoon of white distilled vinegar, 1 Table spoon of lemon juice.Add this point you can add 1 tsp of sugar per blender full and 1/8 tsp lemon juice to help cut the tartness and acidity.

Put juice in a pot on medium heat and bring to a low bubbly boil while stirring.
Pour into 5 ounce sauce jars. (Got mine from amazon)
I also added a pinch of potassium metabisulphite to prevent any bacteria or contamination, also since I added some sugar I added just a pinch of potassium sorbate which prevents any further fermentation. This also adds a little more shelf life.

MIXED GRILL RIBS-WINGS-SAUSAGE | HOT N FAST 1 HR RIBS | WSM GAME DAY | FIRE DIAL

Phil N Florence 2019-09-15 | This is a hot n fast game day cook. Single cut spare ribs, hot wings, and sausage. Took just a little over one hour, cooking at 300 F on the Weber Smokey Mountain 22.5. I also used the Fire Dial heat diffuser, and the large capacity charcoal basket and the minion starter basket, both from Arbor Fab.

Phil N Florence 2019-09-01 | Baby Back Ribs on the RIB-O-LATOR. This is a fun and easy accessory for the Weber Kettle, Weber Smokey Mountain 22, 30 in Drum or UDS, and most gas grills. One you put on your ribs, just let them go until done. Usually about 2.5 hrs. Sauce for 15 minutes then take up. Also, you can grill just about any meat or veggies you can get inside the rotating trays. I used Kingsford Premium charcoal briquettes in this cook. They cooked extra hot which ran temps very high, higher than I wanted. The ribolator worked perfect. Next time I'll use regular Kingsford Blue Bag.

Phil N Florence 2019-08-17 | I smoked a filleted and stuffed pork tenderloin. This was half of the original whole loin. Stuffed with Philadelphia Cream Cheese, chopped green onions, Pepper Jack Cheese, and Robert Rothschild's Pineapple Habanero Glaze. The loin was wrapped with a pound of bacon. Late in the cook when the loin reached an internal of 131 F, I basted it with some of my homemade PIF Sweet & Spicy Sauce to give it a beautiful color. Cooked at 295-307 F for 2 hrs 15 minutes to reach an internal of 150 F. 1 whole roll of crushed Ritz Crackers
1 Cup Robert Rothchild's Pineapple Habanero Glaze
Lay out strips of bacon by 2 strips overlapping to the width of the filleted tenderloin
Mix all ingredients and spread onto the filleted pork tenderloin
Roll up the bacon and tenderloin to make a roll.
Top with salt and pepper and add your favorite BBQ Rub and desired garnish topping.

Phil N Florence 2019-07-21 | This video is pulled pork in the PBC. The charcoal was started using the 4 inch minion starter basket made by Arbor Fabricating. Also used was Bailey's Easter NC Vinegar BBQ Sauce, Uncle Albert's BBQ Sauce, and RootBoy Rub #2. We cooked a 6.9 lb boston butt at about 260-280 F. We hit a stall in the internal temp after 4 hours at 150 F. We then double foiled the butt and finished cooking at around 260 F for 3 more hours. It took total of 7.50 hours.

Phil N Florence 2019-07-14 | Only my second time using grill grates. I really like the ease of setup and use. It prevents flareups. The only thing I'm learning is what temp to end offset cooking, and setting up the grates for the sear. I let this one go just a little longer than needed to end up with a med/rare. Also pressing down on the meat would help get better contact with the grate, epecially is the steak is not laying flat

VEGETABLE RELISH | CHOW CHOW | HOW TO MAKE RELISH

Phil N Florence 2019-07-09 | I've been talking about this relish for a year, and promising to make a video on how I make it. In this video, we processed enough veggies to fill up a 21.5 quart canning pot which made 18 quarts and 1 pint of relish. Recipe below. Hope you try making it. It is delicious on hot dogs, potato salad, slaw, or just as a side garnish on your plate of good ole country cooking. You can make it cold or hot, depending on how much hot pepper you add. Cold is best for most uses.

Relish Recipe- makes 9 pints (I tripled the recipe in the video)

Bell Peppers- 12 large = 5 C
Onions- 7 large = 4 C
Cabbage- 1 Head = 4 C
Green Tomatoes- 10 = 4 C
Cayenne Pepper- 25
Granulated Pickling Salt- 1/2 C
Sugar- 6 C
Apple Cider Vinegar- 4 C
Water- 2 C
Mustard Seed- 2 Tb
Celery Seed- 1 Tb
Tumeric- 1- 1/2 tsp

Direction:
Cut up all vegetables with processor
Pour into a big pot
Add pickling salt, stir in good and refrigerate over night
Next morning, drain and rinse with fresh water
Mix vinegar, sugar, water, spices and heat up on stove top 15 min.
Mix vinegar sugar and spices solution with cut up veggies
Stir together good, and put on medium heat on stove top.
DO NOT use high heat.
Let the relish cook on med low (bubly) for 45 minutes
Pack hot relish into hot sterile jars, use butter knife or spatula tool to run down inside jar to remove air bubbles. Leave inch head space.
Use new seals/lids and hand tighten.
Place each jar into a water bath canner and cover with inch of water.
Process the boiling water bath for 10 minutes
Remove the jar and place on the counter to let cool down.
You should hear and see the lids seal.

JULY 4TH DOGS RIBS & THUNDERSTORMS | BABY BACK RIBS | BARREL HOUSE COOKER | ROOTBOY RUB #2

Phil N Florence 2019-07-07 | I had planned just a Hot Dog dinner with beans, slaw, and corn on the cob. Being July 4th, I thought it not right not to have some ribs, so I had a lonely rack of babybacks I through on the Barrel House Cooker 14D. I had also planned to use my new grill grates and do the dogs on them using the weber kettle. WRONG !! After about 2 hours and 45 minutes into this plan, we got hit in Florence,SC with a huge ongoing Thunderstorm. The rain came and went about 3 or 4 times just as hard the next time as the previous time. I didn't get to fire up the kettle and do the dogs, so we just cooked the hot dogs inside on the gas cooktop using a cast iron griddle. They turned out just perfect anyway. The baby back ribs also turned out delicious. Everyone got plenty to eat.

Phil N Florence 2019-06-16 | This is another Saturday night steak cook. We picked up some Fillet Mignon for the first time. We reverse seared it on the weber kettle using the slow n sear and spin grate. It was the best steak we had done yet. Of course the cut of meat is what pushed it over the top past the ribeyes and cowboys we have done in the past. So tender and juicy. The reverse sear method is so easy and fast. I recommend it.

Phil N Florence 2019-06-02 | This video, I'm grilling three Ribeye steaks on the Santa Maria Grill attachment on top of the base of the Weber Smokey Mountain 22.5 inch base section along with 5 ears of fresh corn on the cob in the shuck. The entire cook only took 25 minutes. I started my fire with one full chimney of Kingsford Blue Bag, then added several small pieces of cured wood, mostly hickory. The steak was cooked to 140 F internal, and looked to be medium outside on the porch, but later inside it looked to be closer to medium rare. Everything was delicious.
