Ingredients Main ingredients 1 kg mutton ribs, cut into bite-sized pieces 500 g young pumpkin (gatta), cut into bite-sized cubes 1½ tbsp mustard oil 1 cup chicken stock, or as needed 1 large tomato, diced 2 small onions, finely chopped 4 garlic cloves, minced ½ inch ginger, minced 2 tsp roasted and crushed cumin and coriander seeds ½ tsp turmeric powder Red chilli powder, to taste ½ tsp black pepper Salt, to taste Sliced green chillies, to taste A handful of fresh mint leaves Water, as needed
Whole spices 1 bay leaf 1 tsp cumin seeds 1 tsp coriander seeds 3 green cardamom pods, crushed 3–4 cloves 1 small cinnamon stick
For the final touch 1 tsp garam masala A handful of freshly chopped coriander
Step-by-Step Instructions 1. Heat the oil and spices Heat mustard oil in a pan over medium heat. Add the bay leaf, cumin seeds, coriander seeds, crushed cardamom, cloves, and cinnamon stick. Let them sizzle for about 20 seconds until fragrant. 2. Fry the mutton Add the mutton, salt, and turmeric. Mix well, cover, and fry for 5 minutes. 3. Add the onion, garlic, and ginger Add the chopped onions, minced garlic, and ginger. Fry for 4–5 minutes until the onions are nicely caramelised. 4. Add the ground spices Add the roasted, crushed cumin and coriander, red chilli powder, and black pepper. Mix well for a few seconds. Add about ¼ cup of water, cover, and cook until the water dries and the meat absorbs the spices. 5. Add the tomato Add the diced tomato and cook for a few minutes until it softens and combines with the masala. 6. Add the young pumpkin Remove the core from the young pumpkin and cut it into bite-sized cubes. Add the pumpkin to the pan and mix well. Cover and cook for 8–10 minutes. 7. Add the chicken stock Pour in the chicken stock and mix gently. Cover and simmer until the mutton is tender and the pumpkin is soft. Add a little extra water if needed. 8. Add the fresh herbs Add the sliced green chillies and fresh mint leaves. Mix gently, cover, and simmer for another 3–5 minutes. 9. Finish and serve Check the seasoning and adjust the salt if needed. Add the garam masala and freshly chopped coriander. Mix well and remove the bay leaf before serving. Serve hot with dal bhat, roti, or beaten rice.
Recipe Tips Young pumpkin cooks faster than mature pumpkin, so check its tenderness as it simmers. If the mutton is still tough, continue cooking with the lid on, adding a little water as needed. Adjust the green chillies and red chilli powder to your preferred spice level. For a richer curry, allow the mutton to simmer gently until the stock and spices form a delicious gravy.

Method Add the diced tomatoes to a mixing bowl. Add the finely diced onion, chopped green chilli, minced garlic and fresh coriander. Season with salt and red chilli powder according to your taste. Add the crushed roasted sesame seeds, mustard oil and fresh lime juice. Gently but thoroughly mix everything together until the ingredients are evenly combined. Taste and adjust the salt, chilli or lime juice if needed.
Serving Serve immediately as a fresh Nepali side dish or achar, alongside dal bhat, roti, chiura, grilled meat or your favourite Nepali meal.
Tip: Roasted sesame seeds and mustard oil give this simple tomato sadeko its characteristic Nepali flavour. 🌶️🍅

This time we spent the evening in Graça, one of my favourite neighbourhoods during the festivities. The streets were packed with people, music filled the air, and the smell of grilled sardines could be found on every corner.
We enjoyed sardines on bread, bifanas, grilled chouriço, fries with bacon, cold beer, and iced tea while soaking in the atmosphere and watching everyone celebrate together.
Food, tradition, family, and community—this is what Santo António means to me. Some things change over the years, but this beautiful Lisbon tradition remains the same.

In this video, I show the complete preparation process, from harvesting and washing the greens to wilting, pounding, and packing them for fermentation.
As a Nepali living in Portugal, I love recreating the flavors of home using local ingredients, and this project became even more special because my daughter joined me in harvesting the greens.

Fresh sardines seasoned only with salt, grilled the traditional Portuguese way, served with a tomato, cucumber and onion salad, fresh bread, and a beautiful summer day.
Looking back at this video makes me smile. I look younger, life was different, and my journey in Portugal was only beginning. But the food still looks just as delicious today.

Growing up in Nepal, I watched my family make huge batches of gundruk during mustard green season. I still remember the sight of piles of wilted greens, the waiting, and most of all, the unforgettable aroma when the fermentation was complete. That smell instantly takes me back to my childhood.
Today, I live in Portugal, far from the mountains and villages where those memories were made. But traditions have a beautiful way of traveling with us.
This year, I used kale and cabbage from my Portuguese parents-in-law's garden to make homemade gundruk. What would have been discarded became one of Nepal's most treasured ingredients. Along the way, my little daughter joined me, helping spread the greens under the sun and creating memories of her own.
This video is more than a recipe. It's a story about preserving food, preserving traditions, and holding on to a piece of home no matter where life takes you.

20-Minute Nepali Chicken Pepper Curry
Ingredients 1 kg chicken, cut into bite-sized pieces 300g bell peppers, julienned 1 tbsp oil ½ tsp cumin seeds 1 cinnamon stick 2 green cardamoms, lightly crushed 3 cloves 1 bay leaf 1 medium onion, finely chopped 3 garlic cloves, minced Small piece ginger, minced 1/4 tsp turmeric powder Salt to taste 1 tsp cumin powder 1 tsp coriander powder ½ tsp garam masala Chili powder to taste (optional) 1 medium ripe tomato, finely chopped
Method Heat oil in a pan over medium-high heat. Add cumin seeds, cinnamon, cardamom, cloves, and bay leaf. Add onion, garlic, and ginger. Sauté for 3 minutes until lightly golden. Add chicken, turmeric, and salt. Mix well, cover, and cook for 10 minutes until the chicken releases its juices and oil, during this time mix it if need it. Add cumin powder, coriander powder, garam masala, and chili powder. Stir for 30 seconds. Add chopped tomato, cover, and cook for 3–4 minutes until soft. Add bell peppers and cook for 2 to 2 1/2 minutes. Serve hot with rice, roti, or naan.

Ingredients For the Dal 200g dried black lentils (Kalo Dal), soaked overnight or for at least 6 hours Salt, to taste ½ tsp turmeric powder 1 bay leaves Water as needed
For the Tempering 1.5 tbsp ghee ½ tsp cumin seeds 2 cloves garlic, finely minced A few pinches of Jimbu
Method Drain the soaked lentils and place them in a pressure cooker. Add turmeric, bay leaves, salt, and enough water to cover the lentils by about 2–3 cm. Pressure cook until the lentils are very soft and creamy. Depending on the type of lentil and your cooker, this may take about 15–25 minutes after pressure is reached. Once cooked, lightly mash or whisk the dal until smooth and silky. Adjust the consistency with a little hot water if needed and bring it back to a gentle simmer.
Make the Tempering Heat the ghee in a small pan over medium heat. Add the cumin seeds and let them crackle. Add the minced garlic and fry until lightly golden and fragrant. Turn the heat to low and add the Jimbu. Stir for just a few seconds—be careful not to burn it.
Finish the Dal Immediately pour the sizzling tempering over the hot dal. Let it sizzle and release its aroma. Stir gently and serve hot.
Serving Suggestion Serve with steamed rice and a simple Nepali thali. The smoky aroma of Jimbu, the richness of ghee, and the sweetness of golden garlic make this humble bowl of dal one of the most comforting meals from Nepal. 🇳🇵❤️
