In 1891, just 30 years after Italy became a unified country, 71-year-old Pellegrino Artusi self-published "La Scienza in Cucina e l’Arte di Mangiar Bene" (Science in the Kitchen and the Art of Eating Well), a book that would become one of the most important works in Italian culinary history.
But Artusi didn't simply write down his own recipes. He created what we might now call a food community. People from across Italy sent him their family recipes by mail, he tested them, added his own comments and stories, and continued expanding the book through new editions.
In this episode of Local Aromas from Italy, Italian sisters Valeria and Benedetta explore how Pellegrino Artusi helped bring the regional cuisines of a very young Italy together and why we like to think of him as one of the original food bloggers.
