Butter & flour for ramekin
2 1/2 tablespoons all-purpose flour
2 large egg yolks
1 large egg
1-2/3 cups canned or jarred dulce de leche
Preheat oven to 425°. Butter and flour ramekins; transfer to a rimmed baking sheet. Using an electric mixer, beat egg yolks and egg in a medium bowl until doubled in volume and eggs hold a slight ribbon, about 2 1/2 minutes. Add dulce de leche; beat until well blended, then gradually add 2 1/2 Tbsp. flour; beat until well blended. Divide batter among ramekins.
Transfer sheet to oven. Bake cakes until outsides are golden brown in color but the centers still jiggle, 12–14 minutes.

Tammy and I have been friends for many years and met here on YouTube! Since then we have met up in real life many times. You will LOVE her tutorials and learn how to decorate cupcakes better than most bakeries do. She lives in Canada, but I really wish she lived next door.
Also check out Jenn of cupcakesandcardio. You will love her as well. http://tinyurl.com/lahtvfp
Jenn and I have met in real life twice and done some video collaborations together. When we are together, we "get" each other. It is hard to explain to people sometimes what you do and it is nice to be comfy knowing that she also understands everything I am talking about. Oddly enough, she too lives in Canada. I may have to move there soon since such awesome ladies are produced there!

Prime Day guide: http://discover.vesync.com/prime?brand=cosori
6 pieces string cheese
2 tablespoons all-purpose flour
1 teaspoon cornstarch
½ teaspoon salt
¼ teaspoon black pepper
2 eggs, beaten
1 tablespoon milk
1 cup panko breadcrumbs
1 teaspoon dried parsley flakes (if you use italian breadcrumbs, you can leave this out)
Nonstick cooking spray
Marinara sauce or ranch, for serving
Cut the string cheese into thirds, making 18 pieces. (I cut them in half and made them longer and thinner!)
Mix together the flour, cornstarch, salt, and pepper in a bowl. Whisk together the eggs and milk in a separate bowl. Combine the panko breadcrumbs and parsley flakes in an additional bowl.
COAT each piece of cheese with flour, then dip in egg, and then roll in breadcrumbs.
Select preheat on the Cosori Air Fryer, adjust to 350°F, and press Start/Pause.
Set the mozzarella bites in the freezer while the air fryer is preheating.
Place the coated mozzarella bites into the preheated air fryer and spray liberally with cooking spray. (I sprayed basket first, as well)
Select Frozen Foods, set time for 8 minutes, and press Start/Pause.
Shake the baskets halfway through cooking (the Shake Reminder function will let you know when!).
Serve with a side of your favorite marinara sauce, or even better, ranch. We used ranch and it was DIVINE!

MOM LOVED IT!!!
If you use drived fruit:
1/2 cup dried fruit, such as raisins, currants, chopped apricots, or chopped prunes
Liquor (rum, brandy, Armagnac, or amaretto) OR warm water
Pudding:
3 cups whole milk
1/3 cup granulated sugar
1/2 cup long-, medium-, or short-grain white rice
1/8 teaspoon fine salt
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
If using the dried fruit, place it in a small bowl. Add enough liquor or warm water to just cover. If using liquor, allow to stand for about 1 hour; for water, let the fruit soak for 20 minutes. Drain before using.
Combine the milk and sugar in pot of electric pressure cooker. Turn on the sauté setting and warm the milk and sugar until the sugar dissolves, stirring constantly with a wooden spoon, about 3 minutes. Add the rice and salt and stir to combine.
Close and lock the lid. Pressure-cook for 10 minutes at HIGH pressure.
When the cooking cycle has completed, turn off the pressure cooker. Do not allow it to switch to the "keep warm" setting, as this can cause the bottom to scorch. Allow the pressure to release naturally, this takes 15 to 20 minutes.
Whisk the eggs in a heatproof medium bowl. Carefully open the lid of the pressure cooker. Very slowly whisk 1 cup of hot pudding into the eggs. (This prevents the eggs from scrambling.) Slowly whisk the egg-pudding mixture back into the rest of the pudding.
Turn on the sauté setting. Cook the pudding, stirring constantly, until it thickens, about 3 minutes. Remove the pot from the electric pressure cooker and place it on a wire rack or trivet. Stir in the vanilla and cinnamon and drained soaked dried fruit, if using.
To prevent pudding from overcooking, immediately transfer it to individual bowls or a 8x8-inch baking dish. Press a sheet of plastic wrap directly onto the surface of the pudding to prevent a skin from forming. Chill for at least 15 minutes before serving.
Serves 4.

Mom & Scott really enjoyed this dinner as well!
1 lb ziti pasta
1 t. olive oil
1 lb ground beef
1½ t. salt
1 t. sugar
¼ t. pepper
½ t. granulated garlic
3¼ c. chopped tomatoes
½ c. grated cheddar cheese
15 oz. tomato sauce
2 c. water
3 T. Lemon juice, freshly squeezed
*NOTE: I added in about 2 tsp. total of salt, 1/2 tsp. total of black pepper and about 1-1/2 tsp. granulated garlic.
Cook pasta: Follow instructions on package to cook pasta until it is soft to bite into. Strain.
Pour olive oil onto pasta and stir, to keep it from sticking together. Set aside.
Brown ground beef: Place ground beef into a Dutch oven. Brown the meat over medium high
heat. As it cooks, use a wooden spoon or spatula to break the meat down into small
pieces. Once it is browned, sprinkle with salt, sugar, pepper, and granulated garlic. Stir to
combine and cook for 1 minute. Using a slotted spoon, remove the beef from the pot and
place it into a blender. Set aside.
Heat chopped tomatoes: Return the Dutch oven with the remaining grease to medium-high
heat. Add the chopped tomatoes. Stir to combine. Once the mixture is hot, add grated
cheese. Stir until cheese melts and dissolves.
Blend beef and tomatoes: Carefully spoon or pour tomato-cheese mixture into blender
with beef. Turn on blender and continue to mix contents until beef is completely liquefied
and combined with tomatoes.
Make Beef-a-Roni: Pour contents of blender back into Dutch oven. Add tomato sauce, 2
cups water, and lemon juice. Stir until water is completely incorporated. Over medium-high
heat, bring sauce to a low boil. Reduce heat and add pasta. Stir until combined. Simmer for
10 minutes. Spoon into bowls. Serve.
Makes 4–6 servings.

My friend Pono always having this, so I had to try too. SO YUMMMMM!!
2 pounds pork spareribs, trimmed and cut into 1-inch pieces
1 teaspoon minced ginger
Oil for stir-frying
2 teaspoons cornstarch dissolved in 4 teaspoons water, optional
Sauce:
2 tablespoons black bean sauce with garlic, or to taste
2 tablespoons soy sauce
1 tablespoon cooking sherry
1 cup chicken broth
Trim the ribs and cut into 1-inch pieces.
Mince the ginger. In a small bowl, combine the sauce ingredients and set aside.
Heat wok to medium-high heat and add oil. When oil is ready, add the ginger and stir-fry until aromatic (about 15 seconds).
Add the spareribs, stir-frying until they are lightly browned. Add the sauce.
Reduce heat to medium, cover and simmer for about 10 minutes.
This step is optional. If you want to thicken this recipe, mix the cornstarch and water together while the other ingredients cook. Once the ingredients are finished simmering, give the cornstarch/water mixture a quick re-stir and add, stirring to thicken.

No beer cans needed for this one!
Rub chicken with olive oil and toss vegetables with olive oil.
Season chicken and vegetables with salt and pepper.
Roast 15 minutes per pound until chicken is cooked through and vegetables are tender, about 1 hour 15 minutes for a 5 pound chicken.
Let rest 10 minutes before carving.

I love this recipe. When I need to mix up something fast and tasty, this is it!
1½ pounds steak, thinly chopped
4 tablespoons soy sauce
2 tablespoons sugar
2 to 3 tablespoons oil
1 2-inch piece ginger, cut in half and smashed
5 cloves garlic, smashed and sliced
1 large onion, sliced
Thicken
1 tablespoon cornstarch
1 tablespoon white vinegar
1 tablespoon water
Mix soy sauce and sugar together. Add meat and marinade for one hour.
Heat oil in skillet and brown garlic and ginger then add meat. Cook until steak is medium well done.
Add sliced onions and cook until translucent. Turn heat lower.
In a small bowl, add cornstarch, vinegar and water. Add to chopped steak and mix until thickened.

This was tasty. It did indeed need a little more breadcrumbs, since it was a little saucy.
16 ounces pasta
1 (10 ounce) package frozen chopped spinach
1/2 cup bread crumbs
2 eggs, beaten
1/4 cup oil
1 cup shredded cheddar or mozzarella cheese
1 pound lean ground beef
1/2 cup chopped onion
1 clove garlic, minced
1 cup spinach water
1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 (16 ounce) jar spaghetti sauce
In a medium pot cook pasta in boiling salted water until al dente. Drain well.
Drain spinach, reserving water.
Meanwhile, brown ground beef, chopped onion, and minced garlic in a large skillet over medium heat.
Stir in tomato sauce, tomato paste, and pasta sauce. Simmer for 10 minutes.
Combine spinach, cooked pasta, bread crumbs, shredded cheese, beaten eggs, and olive oil.
Spread pasta/spinach mixture evenly into the bottom of a greased 9x13 inch baking dish. Top with meat mixture.
Bake in a preheated 350 degree F oven for 30 minutes.

The first time I visited the Polynesian Cultural Center was in 1973, when I was in the 5th grade, which seems to be the normal grade that gets to go on a field trip here. It has changed quite a bit since then. I wish I could dig up my old photos lol. But digging through boxes of old Kodak envelopes isn't a fun time ;)
Enjoy the little tour!

This is a beautifully tasting, moist bundt cake. I hope you try it!
Cake:
3/4 c. unsalted butter, softened
1 (8 oz.) package cream cheese, softened
1-1/3 c. sugar, divided
1 c. plus 1 Tbsp. firmly packed light brown sugar, divided
4 large eggs
1-1/2 c. peeled, grated sweet potato
1 tsp. vanilla extract
3 c. self-rising flour
1 Tbsp. plus 1-1/2 tsp. pumpkin pie spice divided
Glaze:
1/4 c. firmly packed light brown sugar
3 Tbsp heavy whipping cream, divided
1 Tbsp. unsalted butter
1 Tbsp. light corn syrup
1 c. confectioner's sugar, sifted
1/8 tsp. salt
Preheat oven to 350 degrees. Spray a 10 cup Bundt pan with nonstick baking spray with flour. Set aside.
For cake: In a large bowl, beat butter and cream cheese at medium speed with a mixer until creamy. Add 1 c. sugar and 1 c. brown sugar, beat until fluffy, about 3-4 min, stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Add sweet potato and vanilla, beating until combined.
In a medium bowl, whisk flour and 1-1/2 tsp. pumpkin pie spice. Gradually add flour mixture to sweet potato mixture, beating at low speed just until combined.
In a small bowl, stir together remaining 1/3 c. sugar, remaining 1 Tbsp. brown sugar and remaining 1 Tbsp. pumpkin pie spice. Spoon one-third of batter into prepared pan, spreading evenly. Sprinkle with half of the sugar-spice mixture. Repeat procedure once; top with remaining batter. Tap pan on counter three times to release air bubbles.
Bake until a wooden pick inserted near center comes out clean, approx. 45-50 min. Let cool in pan 10 minutes. Remove from pan and let cool completely on wire rack.
For glaze: In a small saucepan, bring brown sugar, 2 Tbsp. cream, butter and corn syrup to a simmer over medium heat. Cook, whisking constantly, 1 minute. Pour into a medium bowl; let cool slightly. Whisk in confectioners' sugar, salt and remaining tablespoon of cream until smooth. Drizzle over cake. Garnish with pecans if desired.

This dish is absolutely delicious.
4 tablespoons extra-virgin olive oil
4 ounces bulk hot Italian sausage
4 ounces bulk sweet Italian sausage
1 cup chopped yellow onion
4 cloves garlic, minced
2 tablespoons tomato paste
Two 28-ounce cans crushed tomatoes
1 teaspoon granulated sugar
3 fresh bay leaves
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
2/3 cup chopped fresh basil
2 cups ricotta
3 cups shredded low-moisture mozzarella
2 1/2 cups grated Parmesan
One 8-ounce package manicotti
Heat 2 tablespoons of oil in a large saucepot over medium heat. Cook the sausage, breaking it up into small pieces, until browned and caramelized, 8 to 10 minutes. Remove the sausage to a paper towel-lined plate and reserve for the filling.
Add the remaining 2 tablespoons of oil to the pot and cook the onion until softened and translucent. Add the garlic and cook for 1 minute. Stir in the tomato paste and cook for 1 minute (the tomato paste will turn a deep maroon color). Add the crushed tomatoes, sugar, bay leaves, 1 1/2 teaspoons salt and a pinch of black pepper. Bring to a simmer, reduce the heat to low and cook for 30 minutes. Melt the butter into the sauce, remove the bay leaves and stir in 1/3 cup of basil. Remove the sauce from the heat and allow to cool to room temperature, 40 minutes.
For the filling: mix together the ricotta, reserved sausage, the remaining 1/3 cup basil, 1 1/2 cups mozzarella, 1 1/2 cups Parmesan, 1 teaspoon salt and pepper to taste. Fold in 1 cup of the cooled tomato sauce. Place the filling in a large piping bag and refrigerate for 30 minutes.
Preheat the oven to 375 degrees F.
Bring a large pot of salted water to a boil. Cook the manicotti shells until they have softened slightly but still hold their tubular shape, 5 minutes.
Pour half of the tomato sauce into a 9-by-13-inch baking dish. Fill each shell with the ricotta mixture. Place the filled shells in the baking dish. Pipe any extra filling along the ends of the shells in the dish. Top with the remaining tomato sauce and sprinkle the remaining 1 1/2 cups mozzarella and 1 cup Parmesan over the top. Cover the baking dish with foil and bake until the sauce begins to bubble, 40 minutes. Remove the dish from the oven, remove the foil and turn the oven to broil.
