These make a wonderful alternative to a slice of toast in the morning…lovely straight from the toaster with a good scrape of butter :) and maybe a wee bit of jam too! Tonight for tea I made a pot of Smoky BBQ ham in the slow cooker. This is great with almost anything! Lovely with mashed potato, on top of rice or pasta and also makes a delicious sandwich or filled roll :) Or just have it on it’s own with a chunk of crusty bread.Everything I used will be listed below,-Cheryl x ______________________________________________________________________________________________________What I used - 3.5 Litre Crockpot * 1 Large smoked gammon joint - use unsmoked if your prefer | Mine weighed 1.3kg (2.8 lbs) * 1 Tablespoon brown sugar* Half can of cream of tomato soup - Around 200ml (7 oz) I used Heinz* 2 Teaspoons minced garlic - or 1 fresh garlic clove chopped* 1 Tablespoon tomato puree* 1/2 Teaspoon salt* 1 Seasoning sachet - I used smoky BBQCook on high for 5-6 hours | or on low for 8+ hours until fall apart tender. Today I whipped up a batch of these wonderful Cheddar cheese oatcakes! So simple and very easy to make and pair wonderfully with a bowl of tomato soup :) The oatmeal I used is suitable for a gluten free diet - please check your brand to make sure yours is....if that's important to your diet. Everything I used will be listed below,-Cheryl x ______________________________________________________________________________________________________What I used - Makes 20 oatcakes using a 7cm cutter * 250 g (8.8 oz) Oatmeal* 25 g (0.8 oz) Butter - melted* 1/2 Teaspoon salt - add more or less according to how salty you like them.* 120 g (4.2 oz) Mature cheddar cheese grated* 100 ml (3.5 oz) Hot waterCombine everything in a bowl, mix with a wooden spoon . Leave to rest for 10 minutes. Scatter some oatmeal (or flour) on your work surface and roll out however thick you’d like! Today I made this amazing lemon drizzle coronation cake in honour of the upcoming coronation of King Charles! I saw this cake being made on an episode of This Morning last week and just had to give it a go! If you don’t like lemon cake you could make any cake you like….a traditional Victoria sponge cake would be a wonderful alternative :) and you could even double up the recipe and make a two layer cake with some lovely lemon buttercream, fresh cream or jam sandwiched between the layers! Yummmm.Everything I used will also be listed below,-Cheryl x ______________________________________________________________________________________________________What I used (30 x 23 cm baking tin)For the sponge225g (7.9 oz) Caster sugar250g (8.8 oz) Self-raising flour2 teaspoons baking powder4 Medium free range eggs225g (7.9 oz) Unsalted butter - room temperature and slightly soft3 tablespoons of whole milkJuice of 1 lemon Zest of 3 lemonsFor the lemon icing400g (14 oz) Icing sugar or confectioners sugarJuice of 2 lemonsZest of 2 lemonsFor the Union jack fruit flag300g (10.5 oz) Fresh raspberries 200g (7 oz) Fresh blueberriesMix the sponge ingredients together with a stand mix, electric mixer or by hand if you prefer. If you’re doing it by hand, beat together the sugar and butter FIRST before adding the other ingredients. Bake in the middle shelf of the oven on Gas mark 4, 180c or 160c if you have a fan assisted oven. Cool the cake completely before icing.Mix the ingredients for the icing in a bowl and spread over the top of the cooled cake.Arrange the raspberries and blueberries on top of the cake as shown on the picture whilst the icing is still wet. Like a big hug in a bowl :) Perfect on it’s own but especially good with some crusty bread on the side. So tonight for tea a made this wonderful chicken Balmoral pie! I took a classic and put a wee bit of a spin on it :) You’d make this traditionally with a puff pastry top, but I think it’s delicious with mashed potato instead. You could add a wee dram of whisky to your sauce…but we prefer it without!
